FRAGRANT SPICED CHICKEN WITH BANANA SAMBAL
This spicy Asian-inspired dish is flavoured with coriander, cumin, turmeric, almonds and cardamom. Serve with a cooling chopped salad

Steps:
- Put the onions in a food processor with the garlic and ginger. Blitz until it is as smooth as possible, then pour in half the stock and blitz again.
- Heat a large non-stick pan, sprinkle in the spices and toast for 1 min. Pour in the onion mixture, the remaining stock and all but ½ tsp of the chopped chilli. Add the almonds and tomato purée, and stir well. Simmer for 35 mins until completely soft, stirring every now and then and adding a little water if the mixture starts to catch on the bottom of the pan.
- Add the chicken and half the fresh coriander. Heat very gently for 10 mins to cook the chicken through. Mix all the sambal ingredients with the remaining coriander and chilli, and heat the rice following pack instructions. Serve the chicken and sambal with the brown rice.

Steps:
- Season the chicken with salt and pepper.
- Cut the chicken into thin strips then coat in the egg wash and flour.
- Shallow fry for a few minutes on each side, until golden brown.
- Add the peppers and fry for another couple of minutes. Remove the chicken and peppers and set aside.
- In the same pan, add the garlic, red chilli, soy sauce, tomato purée, and water. Stir and simmer the mixture reduces and is thick and syrupy.
- Add back in the chicken and peppers and stir well in the sauce.
- Serve with rice.
- Enjoy!

This is a semi-homemade recipe that I came up with during football season and I wanted something fast to sit down with my husband and watch my Giants play. I don't like opening cans but this is worth it. It's not spicey at all.

- 1. In a heavy saucepan add and heat a low flame,olive oil with onion, banana peppers, garlic and jalapeno peppers until tender. (I use jarred banana peppers, minced garlic and jalapeno peppers they are all cut and ready to go)...Add cumin and oregano, stir. Heat needs to be low add broth, beans and chicken, simmer for 30 minutes on low.
- 2. I buy a whole chicken already done in the supermarket, shred it up everything else is canned. I also use 1 can of the beans and puree it along with 1/2 can of evaporated milk it thickens and makes it a little sweet. It is definately semi-homemade and fast but you'll never know it from the flavor. Serve with cornbread or thick slices of some kind of bread...I put shreeded Montery Jack on top and then the cilantro but you can put on whatever you like and leave the cilantro off. Enjoy
EASY SWEET CHILI CHICKEN

- Preheat oven to 400°F (204°C). Lightly spray a baking pan with nonstick spray- I use a 10-inch casserole dish. Anything around this size works.
- Combine the water, honey, rice vinegar, cornstarch, garlic, crushed red pepper, Sriracha, and salt together in a small saucepan over low heat. Bring to a simmer while whisking occasionally. Allow to simmer for 3 minutes. It will begin to rapidly thicken. Turn off the heat and set aside.
- Arrange chicken in the prepared baking pan. Spread sauce on top, then turn the chicken over to make sure every inch is coated in the sauce.
- Bake uncovered for about 30 minutes or until the chicken is completely cooked through. For extra color, I switch the oven to broil for the last few minutes. That is optional.
- Sprinkle sesame seeds and green onion on top and serve the chicken with sauce from the pan. Store leftovers in the refrigerator for up to 5 days.

This recipe was created by my son. It's spicy, sweet and delicious! Please note that this fed the three of us, but I put '2' incase you're hearty eaters! It would be very simple to double up to feed more!

- Chop chicken breasts into small cubes and brown in deep pan with olive oil, butter and chilli flakes.
- Slice the red pepper into thin strips. Thinly slice the chilli pepper and chop up the banana. Add them all to the pan.

- Heat olive oil in a large saucepan over medium heat. Stir in onions, and cook until softened and translucent, about 3 minutes. Pour in chicken broth, great Northern beans, chopped chiles, and torn chicken. Season with cumin, chili powder, and cayenne pepper. Increase heat to medium-high to bring to a boil, then reduce heat to medium-low, and simmer for 10 minutes.
