Moist and tender banana quick bread with a tropical twist. Coconut and dark rum add a delicious layer of flavor to the bread.

2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup granulated sugar
1/2 cup brown sugar, light
1/4 cup unsalted butter, softened
2 large eggs, at room temperature
3 ripe bananas (about 1 1/2 cups), mashed
1/4 cup Greek yogurt, plain
3 tablespoons dark rum
1 teaspoon vanilla extract
1/2 cup flaked sweetened coconut, lightly toasted
1 tablespoon flaked sweetened coconut (not toasted)

Steps:

  • Pre-heat oven to 350 degrees. Coat a 9" x 5" loaf pan with non-stick cooking spray and set aside.
  • In a medium bowl, whisk together flour, baking soda and salt.
  • In a large bowl, beat together butter and sugars until light and fluffy. Add eggs one at a time mixing thoroughly each time.
  • Blend in banana, yogurt, rum and vanilla extract. On low speed, add the flour mixture, blending until just combined.
  • Add toasted coconut flakes and mix in by hand.
  • Put dough into prepared loaf pan, sprinkle with one tablespoon of coconut flakes. Bake for 60 minutes.

2 1/2 c. all purpose flour
1 c. granulated sugar
3 1/2 tsp. baking powder
1 tsp. salt
3 Tbsp. vegetable oil
1/2 c. rum
1/4 c. milk
1 egg
1 c. mashed ripe banana, about 3 medium
1/2 c. toasted coconut
For glaze:
1/2 c. powdered sugar
1 Tbsp. rum
1/2 Tbsp. heavy cream
1/3 c. toasted coconut

Steps:

  • Heat oven to 350 degrees.
  • Combine flour, sugar, baking powder, salt in a large mixing bowl.
  • Add vegetable oil, rum, milk, egg, and mashed banana and mix until smooth.
  • Stir in toasted coconut.
  • Pour into 1 loaf pan or 3 mini loaf pans.
  • Bake at 350 degrees 60-65 minutes (large) or 40-45 minutes (mini).
  • Remove from oven; cool slightly.
  • Loosen sides of loaf from pan and remove to wire rack to cool completely.
  • For glaze: combine powdered sugar, rum, and heavy cream and drizzle over slightly cooled bread.
  • Top with toasted coconut.

White chocolate is the wonderfully different addition to this tropical-tasting bread. The moist slices are so scrumptious, they disappear as soon as I serve them.

Number Of Ingredients 12

1 cup butter, melted
1-1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon rum extract
2 cups mashed ripe bananas (about 4 medium)
2-3/4 cups all-purpose flour
1-1/4 teaspoons baking soda
6 ounces white baking chocolate, coarsely chopped
1/2 teaspoon salt
1 cup sweetened shredded coconut
1 cup chopped pecans

Steps:

  • In a bowl, combine butter and sugar; mix well. Add eggs and extracts; beat on high speed until thickened. Stir in bananas. Combine the flour, baking soda and salt; gradually add to banana mixture. Fold in the chocolate, coconut and pecans. Transfer to two greased 8x4-in. loaf pans. Bake at 350° for 70-75 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1/4 cup margarine, softened
1 cup brown sugar
1 egg, slighty beaten
3 bananas, mashed
1 teaspoon coconut rum
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda

Steps:

  • Beat the margarine and brown sugar together until fluffy.
  • Add the egg, beating until smooth.
  • Stir in the mashed bananas and rum.
  • In a large mixing bowl, stir the flour, salt and baking soda together.
  • Gradually stir the egg mixture into the dry ingredients, stirring until the batter is moistened and blended.
  • Spray a loaf pan with cooking spray.
  • Spoon the batter into the loaf pan, spreading the top until smooth.
  • Bake at 350 for one hour.
  • Place loaf pan on cooling rack for 10 min's then remove loaf and continue to cool to room temperature.
  • Banana bread is always better the day after it is made.
  • Store in a loose plastic bag, loaves do not like to be in sealed bags.

I created this recipe based on another recipe I saw on 'Zaar. I'm trying to stay away from refined sugar and white flour. I like to use unrefined coconut oil instead of butter in my baking, which also makes this bread a little healthier.

1/4 cup coconut oil
1/2 cup sucanat
1/2 cup xylitol sugar substitute (see note)
1 egg
1/4 cup Malibu rum or 1/4 cup coconut rum
2 bananas, mashed
2 cups whole wheat flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Mix oil and sweeteners until creamed.
  • Add the egg.
  • Add Malibu and bananas and mix well.
  • Mix flour, soda, and salt together.
  • Add the dry ingredients to the wet mixture, and mix only until moistened.
  • Pour batter into a greased loaf pan. Spread evenly.
  • Bake for 1 hour, until a tester (toothpick or thin knife blade) comes out clean. After cooling for 10 min, remove from pan and cool on a rack.
  • *A note on Xylitol: Xylitol is a great option for people who want to cut calories (it has 40% less calories than sugar). It is not an artificial sweetener; it is what gives berries their sweet taste. It doesn't cause a "sugar rush." It also helps fight calories. Xylitol may be used as a 1:1 substitute for sugar. However, Xylitol is EXTREMELY TOXIC FOR YOUR PETS, so please do not share Xylitol treats with your furry friends.
