BANANAS FOSTER BELGIAN WAFFLES

As a special treat for my mother, I created this recipe, which includes one of her favorite desserts and one of her favorite breakfast items. This creation also goes great with French toast, so make this as a special treat to your mom or any mom. Also a nice way to impress anyone with a special breakfast. I hope you enjoy as much as my mom did.

Number Of Ingredients 20

1 ⅓ cups all-purpose flour
¾ teaspoon baking soda
2 teaspoons white sugar
¼ teaspoon salt
3 eggs
1 ½ teaspoons vanilla extract
1 ⅓ cups milk
⅓ cup melted butter
2 teaspoons baking powder
¼ cup butter
⅔ cup brown sugar
2 teaspoons rum flavored extract
2 teaspoons vanilla extract
½ teaspoon ground cinnamon
¼ cup whole pecans
½ cup pancake syrup (i.e. Mrs. Butterworth's®)
3 bananas, cut into 1/2 inch slices
1 cup heavy cream
¼ teaspoon vanilla extract
1 tablespoon confectioners' sugar

Steps:

  • Preheat a Belgium waffle iron. Whisk together the flour, baking soda, baking powder, white sugar, and salt in a bowl; set aside.
  • Whisk together the eggs, 1 1/2 teaspoons vanilla extract, and milk in a bowl. Stir in the melted butter and flour mixture until a slightly lumpy batter forms. Cook the waffles in the preheated iron until steam stops coming out of the seam, about 2 minutes.
  • Meanwhile, melt 1/4 cup of butter in a saucepan over medium heat. Stir in the brown sugar, rum extract, 2 teaspoons vanilla extract, and cinnamon. Bring to a simmer, the stir in the pecans and continue simmering for 1 minute. Stir in the pancake syrup and bananas, continue cooking until the bananas soften, about 4 minutes.
  • Beat the heavy cream, 1/4 teaspoon of vanilla and confectioners' sugar with an electric mixer in a medium bowl until firm peaks form.
  • Once waffles are done, spoon bananas Foster sauce over waffle and top with a dollop of whip cream.

Who needs sugar when you have ripe bananas to sweeten these moist and fluffy gluten-free waffles?

6 large eggs, beaten
3 very ripe bananas, peeled and mashed
3 tablespoons virgin coconut oil, melted and cooled slightly, plus more for the waffle iron
1 1/2 teaspoons pure vanilla extract
6 tablespoons coconut flour
1 1/2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Raspberries, raw honey and chopped toasted pecans, for serving

Steps:

  • Whisk the eggs, bananas, coconut oil and vanilla in a medium bowl until completely combined. Vigorously whisk in the coconut flour, baking powder, cinnamon and salt until no lumps of dry flour remain.
  • Prepare a waffle iron for medium-high heat and brush both sides with coconut oil. Fill each section of the iron about three-quarters of the way full (there should still be some waffle iron showing). Cook until the waffles are golden brown and slightly crisp, 6 to 10 minutes. Keep the waffles warm in a 200-degree F oven or covered with foil on a plate; repeat with the remaining batter. Serve with raspberries, a drizzle of honey and chopped pecans.

1/4 cup butter, cubed
3/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Dash ground cloves
1/4 cup heavy whipping cream
3 medium firm bananas, halved lengthwise and cut into thirds
1/4 teaspoon rum extract
Optional: Waffles, pancakes or vanilla ice cream

1 1/4 cups all-purpose flour
3/4 cup sugar
1/2 cup chopped walnuts
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon fine salt
1 cup smashed banana (2 to 3 small bananas)
1/2 cup vegetable oil, plus more for brushing waffle iron
1/2 cup sour cream or Greek yogurt
1 teaspoon pure vanilla extract
2 large eggs
Soft unsalted butter and confectioners' sugar, for dusting, optional

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, walnuts, baking powder, baking soda, cinnamon, nutmeg and salt in a large bowl. Whisk together the banana, oil, sour cream, vanilla and eggs in another bowl. Fold the banana mixture into the flour mixture until just combined (it's ok if there are lumps).
  • Lightly brush the top and bottom of the waffle iron with oil. Fill each section about three-quarters of the way full (there should still be some waffle iron showing). 1 stick salted butter
1 cup packed dark brown sugar
1/2 cup heavy cream
2 bananas
1/2 cup chopped walnuts or pecans
1/2 cup dark rum
Dash cinnamon
Vanilla Ice Cream, for serving

Steps:

  • Melt the butter in a heavy skillet over a medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
  • Peel the bananas and slice them on the bias inside the peel. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Then - and this is where you need to be a little careful - stir in the rum. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end. You may also cook the mixture without flambeing it.
  • Spoon it over a couple of scoops of vanilla ice cream and enjoy immediately.
  • Spoon bananas Foster over French toast, waffles or crepes. Substitute peaches, pears or cherries for the bananas. Of course, then it probably wouldn't be considered bananas Foster.
