NO-FAT BANANA APPLESAUCE MUFFINS
I got this recipe out of a Gooseberry Patch cookbook and it is one of my stand-by recipes when I am watching my calories and fat. Since I am doing just that right now, thought I would put it on the zaar for easy access and hopefully someone else likes this recipe as good as I do. (I prefer to sub 3/4 of the white flour for whole wheat and use brown sugar instead of granulated sugar. I think fresh nutmeg is the key in this!)

Steps:
- Preheat oven to 350 degrees.
- Spray a 12-cup muffin pan with non-stick cooking spray.
- Combine the dry ingredients and mix well. In a separate bowl, mix all the wet ingredients. Add together and mix well.
- Pour into muffin tin.
- Bake for 15 - 20 minutes. (My oven baked right around 17 minutes.).
- (Per muffin: 116 calories, no fat).
BANANA APPLESAUCE MUFFINS

- 1. In a bowl combine flour, baking powder, baking soda, salt and cinnamon. Mix together.
- 2. In a separate bowl combine bananas and egg, mix til smooth; add oil, brown sugar, applesauce and vanilla. Mix thoroughly.
- 3. Add banana mixture to flour mixture. Mix together, do not over mix. fill muffin pans and bake 375 degree for 22-25 minutes.
APPLESAUCE BANANA MUFFINS
This is a re-make of a recipe I've had forever...A great way to use up that one lingering banana in the fruit bowl, and the substitution of whole wheat flour for part of the regular flour as well as the splenda for part of the sugar makes these a bit healthier than lots of muffins out there. And they're delicious! Makes 2 dozen regular size muffins or 1 dozen regular and 1 dozen minis.

- Preheat oven to 325 degrees.
- Mash banana in a large bowl.
- Add and mix in the applesauce, eggs, milk, brown sugar and sugar substitute.
- Measure and add all the remaining dry ingredients.
- Mix just until all dry ingredients are incorporated, scraping sides and bottom of bowl as needed.
- Fill prepared muffin cups about 2/3 full.
- Bake regular muffins about 22 minutes, mini muffins for about 18 minutes.
APPLESAUCE BANANA MUFFINS
These muffins are good for breakfast with a cup coffee or any time. They are good served plain or you can add a glaze.

- 1. Heat oven to 350 degrees Spray muffin tins with non-stick spray or use liners. Sift together all dry ingredients in large bowl.
- 2. In another large bowl, beat eggs with both sugars until light. Mix applesauce, banana, oil and vanilla until smooth. If you wish to add chopped nuts, you may do so now. Fold in dry ingredients. Do not over mix. Pour into prepared muffin tins.
- 3. Bake 18-20 minutes or until toothpick test in center of muffin comes out clean. Cool 10 mins and remove to wire racks to finish cooling.
- 4. Glaze, mix the ingredients with the milk being added 1 tablespoon at a time. You may want to add a little more milk until you reach the desired consistency. I glazed 1/2 of the muffins and then melted 20 chocolate chips in microwave and added it to the glaze to make a chocolate flavored glaze for the remaining muffins. Enjoy!

BANANA APPLESAUCE CRANBERRY GLUTEN FREE MUFFINS
Wow, that name is a mouthful How about "crananasauce muffins"? These turned out moist and delicious. I do not need to eat GF, but I make it for friends. Non the less, I loved these too. They could be made dairy free with a coconut oil substitute for the butter.

- Preheat the oven to 375. In a mixing bowl put the melted butter, sugar, egg, vanilla, smashed banana and applesauce. Whisk this together.
- In another bowl whisk the GF baking mix, cinnamon, baking powder, salt and xanthum gum.
- Mix the wet ingredients with the dry. Stir gently until mixed. It too runny, add a little more baking mix. Then add the Cranberries. I just added a big handful. Gently stir in.
- Spoon into prepared muffin pans. Sprinkle tops with the cinnamon sugar. Bake for about 12 minutes or until toothpick comes out with crumbs, not batter. Let cool slightly before moving. Do not cover until totally cool. GF items do not seem, in my experience, to like steam.

Steps:
- Preheat oven to 350 degrees.
- Prepare a 12 cup muffin pan (I use my Pampered Chef Stoneware muffin pan and it works out perfectly; 12 large muffins!).
- Mash bananas in a large mixing bowl. Stir in Splenda.
- Add applesauce and egg whites and beat well.
- Add remaining ingredients and mix well.
- Pour into prepared muffin pan.
- Bake for approximately 28 minutes, or until a toothpick comes out clean.
- Remove from oven and let cool.
- When cool enough, remove muffins and place on wire rack to finish cooling.
- Enjoy!
