2 ¾ cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
1 cup butter, melted
2 cups white sugar
4 eggs
1 cup plain Greek yogurt
1 ½ teaspoons vanilla extract
3 large very ripe bananas, mashed
2 apples, cubed
¾ cup chopped walnuts
½ cup packed brown sugar
½ cup white sugar
1 tablespoon ground cinnamon
¼ cup all-purpose flour
3 tablespoons butter, softened
banana slices for garnish
apple slices for garnish

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease two 7x3-inch loaf pans.
  • In a bowl, whisk together 2 3/4 cups of flour, 2 teaspoons of cinnamon, the baking soda, and salt until thoroughly combined. In a separate mixing bowl, beat the melted butter with 2 cups of sugar until smooth, and mix in the eggs, one at a time, followed by the Greek yogurt and vanilla extract. Stir in the flour mixture just until incorporated.
  • Fold in the bananas, apples, and chopped walnuts until combined; do not overmix. There should be small chunks of banana visible in the batter. Pour half the batter into each prepared loaf pan.
  • Mix the brown sugar, 1/2 cup of white sugar, 1 tablespoon of cinnamon, 1/4 cup of flour, and 3 tablespoons of softened butter together in a bowl until the mixture resembles coarse crumbs. Sprinkle half the crumb topping over each loaf. Garnish each loaf with banana and apple slices.
  • Bake in the preheated oven for 30 minutes, then remove and cover each pan with aluminum foil. Return to oven, and bake an additional 15 or 20 minutes, or until a toothpick inserted into the center of the loaves comes out clean. Allow to cool before serving.

Cinnamon Icing Drizzle:
3 ripe bananas
1 apple, diced
1/4 cup raisins
1/2 cup oats
1/2 cup white sugar
1/4 cup brown sugar
1 egg
4 tablespoons canola oil
1 1/2 cups self-rising flour
1/2 cup confectioner's sugar
2 teaspoons whole milk
Dash of cinnamon

Steps:

  • Preheat over to 350 degrees F. Butter a loaf pan. In a medium glass bowl, combine fruit and oats and toss. Set aside. In the bowl of your stand mixer, beat sugars, egg, and oil until smooth. Add the fruit and beat on low speed until everything is well incorporated. Add the flour a ¼ cup at a time. Pour batter into the loaf pan and bake for about 30-40 minutes or until golden brown and the cake tester comes clean. Leave the loaf in the pan to cool on a wire rack. In a small bowl, whisk ingredients for cinnamon icing. Drizzle over cooled loaf and let set for about 10 minutes. Serve with a cup of coffee or tea.

This recipe is now back to my original posting as I posted it at Recipezaar many years ago. Recently I noticed that somehow the name got changed as did some of the ingredients. In 2005 I wrote that this is a moist light bread/cake with just a hint of cinnamon. Keeep an eye on cooking times as too long and it will be drier. Also leave in tin for about 5 mins before turning out onto a rack to cool completely. Slices can be served as a dessert topped with custard and whipped cream, or cold and buttered.

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup banana (ripe, mashed)
1/2 cup unsweetened applesauce
1/2 cup skim milk (soured with 1/2 teaspoon vinegar)
1 cup Kellogg's all-bran cereal (I always use the Extra Fiber kind)
1/2 cup margarine (I use butter, softened)
3/4 cup sugar
1 egg

Steps:

  • Stir together flour, soda, salt and cinnamon. Set aside.
  • In medium bowl, stir together banana, applesauce, milk and KELLOGG'S ALL-BRAN cereal. Let stand about 5 minutes or until cereal softens.
  • In large mixing bowl, beat margarine and sugar until combined Add egg. Beat well. Mix in cereal mixture. Stir in flour mixture, mixing until combined. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray.

This is my go-to banana bread I make to use up those brown bananas. I also peel and freeze overripe bananas and keep them until I feel like baking. Easy to bake, moist muffins or mini-loaf cakes, made with variety of ingredients you probably have on hand. Original recipe. I have used fewer bananas, more carrot or apple, etc, always with good results. I have made with double the sugar, which is a little too sweet for me. If you like your muffins sweet, add more sugar to taste. These keep well, but I never had to store them more than 3 days.

2 bananas, mashed
3 carrots, grated

Steps:

  • Preheat oven to 350 degrees. Grease and flour 8 mini-loaf pans (3-1/2 x 6) or muffin tins (may use paper liners).
  • Peel and core apple and put through food processor, or grate by hand. Put carrots through processor, then bananas. Set aside.
  • Combine dry ingredients in large bowl and whisk together to combine.
  • In a small bowl, add sour cream, oil, eggs and vanilla extract. Whisk until combined.
  • Add wet ingredients to dry in large bowl. Mix with wooden spoon. Batter will be thick.
  • Add fruit and nuts of your choice, and stir in.to distribute.
  • Fill muffin cups or mini-loaf pans almost to the top (this batter does not rise a lot).
  • Bake at 350 degrees for 40 minutes (loaf pans) or 25 minutes (muffins). Depending on how many wet to dry ingredients, baking times may vary. Test with clean butter knife before removing from oven. Butter knife should come out clean when inserted into center.
