This dessert, while really sophisticated but oh-so-very-good, is a godsend, in all sorts of ways. First of all, this recipe makes two pies, one of which you can store in the freezer, all ready to serve whenever you need it. Second, the pies are simple to make. Finally, in just this one dessert are three things most of us love when it comes to treats: Oreos, coffee ice cream and fudge sauce. What could be better than that?

Number Of Ingredients 6

1 pound Oreo cookies, crushed
1/2 cup (1 stick) unsalted butter, melted
5 to 6 pints coffee ice cream, softened
10 ounces semi-sweet chocolate
2 tablespoons butter
1 tablespoon strong brewed coffee (instant is fine)

Steps:

  • Combine the crushed Oreos and melted butter in a large bowl with a fork. Press the mixture evenly into two 9-inch pie plates.
  • Spread the softened coffee ice cream into the pies over the crusts so that you have at least 1 1/2 inches of ice cream. Place in the freezer.
  • Combine the fudge topping ingredients in a medium-size heavy saucepan. Stir over low heat until completely melted and combined. Remove from the heat and let cool.
  • When the ice cream is really solid (about 3 hours or overnight), pour the frudge topping evenly over each pie. Wrap with plastic wrap and freeze again until the topping is solid. To store them after they are frozen, wrap tightly in plastic wrap and then aluminmum foil to keep them fresh.

1/4 cup butter
1 (11.5-ounce) package (2 cups) milk chocolate chips
1 (14-ounce) can sweetened condensed milk
1 1/2 cups all-purpose flour
1 cup powdered sugar
1/2 teaspoon vanilla
2 to 4 teaspoons milk or water

Steps:

  • Heat oven to 350 degrees F.
  • Melt butter and chocolate chips in a 2-quart saucepan over low heat, stirring constantly, until smooth, about 5 to 10 minutes. Remove from heat. Add condensed milk; stir until smooth. Add flour; mix well. Shape rounded teaspoonfuls of dough into 1-inch balls. Place 1 inch apart onto un-greased cookie sheets.
  • Bake for 6 to 8 minutes or just until set, do not overbake. Cookies may appear slightly under baked. Cool completely. Meanwhile, combine powered sugar and vanilla in small bowl. Gradually stir in enough milk for desired glazing consistency. Drizzle over cookies.

4 ounces bittersweet chocolate, coarsely chopped
4 ounces semisweet chocolate, coarsely chopped, plus shaved chocolate, for garnish
1/2 cup unsalted butter
4 large eggs
1 cup granulated sugar
1/4 cup light corn syrup
1/2 teaspoon salt
1 cup chopped pecans, plus finely chopped pecans, for garnish
1 deep-dish, store-bought, chocolate cookie wafer crust
1 cup heavy cream
1/4 cup confectioners' sugar
1/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Melt the chocolate and the butter in a double boiler. Stir continuously until combined and smooth.
  • Using a stand mixer, beat the eggs, sugar, corn syrup and salt on medium-high speed until it lightens and doubles in volume, about 2 to 3 minutes. Mix in the melted chocolate mixture and fold in the pecans. Pour into the chocolate wafer crust and bake until the filling is just set, about 35 to 40 minutes.
  • Remove from the oven and let cool. The pie will fall slightly. Once cool refrigerate until well chilled, roughly 1 1/2 hours.
  • In a medium bowl add the heavy cream, sugar and vanilla extract and beat until soft peaks form. Top the chilled pie with the whipped cream, makng a nice mound on top of the pie. Garnish the top with shaved chocolate and finely chopped pecans. Serve immediately.

I found this on the Tommy Bahama Site and am posting to take to a Memorial Day Picnic. Cooking time includes both cooking and cooling times. The original recipe calls for an uncooked pastry crust, but I prefer a graham cracker crust. You can use either.

1 (10 inch) uncooked pie crusts
1 egg white
2 1/2 cups sweetened condensed milk
3/4 cup pasteurized egg yolk
1 cup key lime juice
1 lime, zest of
1 lime, sliced into 8 equally-sized wheels
8 fluid ounces heavy cream
3 tablespoons powdered sugar
1/4 teaspoon pure vanilla extract
1/2 tablespoon instant white chocolate mousse mix

Steps:

  • To make the pie:Brush egg whites onto uncooked pie shell using a pastry brush, making sure the shell is evenly coated. Pour off any excess egg whites.
  • Pre-heat oven to 350°F Place pie shell in oven and bake for 5 minutes.
  • Shell should look golden brown. Let cool at room temperature.
  • While the shell is cooling, mix the egg yolks and condensed milk together using a wire whip until incorporated. Pour the key lime juice and zest into the mixture of yolks and condensed milk, slowly mixing with the wire whip until incorporated.
  • Add the key lime pie mixture into the cooled pie shell. Adjust the oven temperature to 250° F and bake pie for 25-30 minutes. The finished pie should have a "Jell-O"-like consistency. Place on a cooling rack for 30 minutes at room temperature.
  • Place in refrigerator for at least 2 hours before serving. Cut into 8 even slices when serving.
  • To make the whipped cream, Instructions:Using an electric mixer, combine heavy cream, powdered sugar and vanilla extract in a mixing bowl. Using the whisk attachment, beat cream mixture on high speed for 2 minutes.
  • Add the white chocolate mousse to the cream mixture and mix until it reaches the consistency of stiff peaks.
  • Place the whipped cream into a piping bag with an open star tip. When serving, pipe it onto each piece of key lime pie. (If you do not have a piping bag, you can simply dollop a generous scoop of the whipped cream onto the center of each piece.).
  • Cut a slice in your lime "wheels," twist and place in the center of each piece.
