3 cups sugar
3/4 cup butter or margarine
1 small can (5 oz.) evaporated milk (about 2/3 cup) (Do not use sweetened condensed milk.)
3 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, chopped
1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1 cup chopped walnuts
1 tsp. vanilla

Steps:

  • Line 9-inch square pan with Reynolds Wrap® Aluminum Foil, with ends of foil extending over sides. Bring sugar, butter and evaporated milk to full rolling boil in 3-qt. saucepan on medium heat, stirring constantly. Cook 4 min. or until candy thermometer reaches 234°F, stirring constantly. Remove from heat.
  • Add chocolate and marshmallow creme; stir until melted. Add nuts and vanilla; mix well.
  • Pour into prepared pan; spread to cover bottom of pan. Cool completely. Use foil handles to lift fudge from pan before cutting into 1-inch squares.

1-1/2 teaspoons plus 3/4 cup butter, softened, divided
3 cups sugar
1 can (5 ounces) evaporated milk (about 2/3 cup)
1 package (12 ounces) white baking chips
1 jar (7 ounces) marshmallow creme
1 teaspoon vanilla extract

Steps:

  • Line a 13x9-in. pan with foil; grease foil with 1-1/2 teaspoons butter., In a heavy saucepan, combine sugar, milk and remaining 3/4 cup butter; bring to a rapid boil over medium heat, stirring constantly. Boil 4 minutes, stirring constantly. Remove from heat; stir in baking chips and marshmallow creme until melted. Stir in vanilla. Immediately spread into prepared pan. Refrigerate until firm, 1-2 hours. , Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in an airtight container.

1 cup chopped walnuts

Steps:

  • Line 8-inch square pan with foil. Microwave chocolate and milk in microwaveable bowl on HIGH 2 to 3 min. or until chocolate is almost melted, stirring after 2 min.; stir until completely melted. Stir in nuts and vanilla.

2 cups powdered sugar
1/4 cup butter or margarine, softened
1 tablespoon milk
1 teaspoon vanilla
Candy decorations, if desired

Steps:

  • Mix cracker crumbs, coconut, cocoa and granulated sugar in medium bowl. Stir in 1/2 cup butter and the water. Press in ungreased square pan, 9x9x2 inches. Refrigerate while preparing topping.
  • Mix remaining ingredients except candy decorations. (If necessary, stir in additional 1 to 2 teaspoons milk until spreadable.) Spread over layer in pan. Refrigerate 1 hour. Cut into 6 rows by 6 rows. Decorate with candy decorations. Store loosely covered in refrigerator.

This is from a REALLY old edition of Reader's Digest. I request this for my birthday instead of a cake. I think it is divine. Very rich though, beware! I usually omit the nuts and it still turns out just fine. (Cook time is chill time)

1 1/2 cups pecans or 1 1/2 cups walnuts, chopped
16 (1 ounce) squares BAKER'S Semi-Sweet Chocolate (2 pkgs)
1 (300 ml) can sweetened condensed milk
2 teaspoons vanilla

Steps:

  • Spread nuts on cookie sheet and bake at 350°F (180°C) for 10 minutes to toast; cool.
  • Melt chocolate with milk in large microwaveable bowl in microwave on HIGH 2 to 3 minutes or until chocolate is almost melted. Stir until chocolate is completely melted.
  • Stir in vanilla and nuts. Spread in foil-lined 8 inch (20 cm) square pan.
  • Chill 2 hours or until firm. Cut into squares.
  • VARIATIONS: PEANUT BUTTER FUDGE - Omit nuts. Drop 1/2 cup (125 mL) peanut butter by teaspoonfuls on top of fudge. Swirl with knife to marble.

1 cup pecans (chopped)
3 cups/18 ounces white chocolate chips (or white chocolate baking chunks)
1 1/2 teaspoons vanilla extract
1/4 teaspoon almond extract

Steps:

  • Gather the ingredients.
  • Butter an 8-inch square baking dish and line with plastic wrap.
  • In a medium saucepan, combine the sugar, butter, salt, marshmallow, and evaporated milk.
  • Place the saucepan over medium heat and cook, stirring, until the mixture comes to a full boil. Continue boiling over medium heat, stirring constantly, for 5 minutes.
  • Remove the pan from heat and add the white chocolate chips; stir to blend.
