1 ½ cups boiling chicken broth
¾ cup long-grain white rice
¼ cup frozen corn
¼ cup frozen peas
¼ cup chopped carrot
1 tablespoon minced onion, or to taste
½ cup shredded Cheddar cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix chicken broth, rice, corn, peas, carrot, and onion together in a casserole dish; cover with aluminum foil.
  • Bake in the preheated oven until rice is tender and broth has been absorbed, about 30 minutes. Remove aluminum foil and sprinkle pilaf with Cheddar cheese; cover with aluminum foil. Continue baking until cheese is melted, about 5 minutes.

1/4 cup (1/2 stick) unsalted butter
1 onion, chopped
1 green bell pepper, chopped
1 1/2 cups frozen whole kernel corn, thawed
1 large tomato, seeded, chopped
3 cups cooked rice (about 1 cup raw)
2 cups grated Swiss cheese (about 6 ounces)
3 tablespoons whipping cream
1 tablespoon chopped fresh thyme or 1 teaspoon dried

Steps:

  • Melt butter in heavy large skillet over medium-low heat. Add onion and bell pepper and sauté until tender, about 8 minutes. Add corn and tomato and sauté 3 minutes. Add rice, 1 cup cheese, cream and thyme and stir until cheese melts and mixture is heated through. Transfer mixture to 8-cup soufflé dish.
  • Preheat broiler. Sprinkle remaining 1 cup cheese over rice mixture. Broil until cheese melts, about 2 minutes.

Very appealing looking and the bonus is that it tastes great. I got this recipe out of a magazine several years ago. The preparation time is merely guess work.

2 teaspoons vegetable oil
4 -6 pork chops, trimmed
1 onion, chopped
1 clove garlic, minced
1 cup long grain rice, parboiled
1 teaspoon curry powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 cup diced or sliced zucchini (do not peel)
1 1/2 cups chopped fresh roma tomatoes
1 cup diced sweet pepper (red, green or yellow)
1/2 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
2 cups chicken stock

Steps:

  • In large skillet over medium-high heat, heat oil.
  • Brown chops on both sides; remove and set aside.
  • Add onion and garlic to skillet; cover and cook about 5 minutes, until softened.
  • Add rice, curry powder, cumin and oregano; stir to coat rice.
  • Add zucchini, tomatoes, peppers, salt, pepper, bay leaf and chicken stock.
  • Bring to boil; reduce heat, cover and simmer for 10 minutes.
  • Transfer mixture to 13 x 9 baking dish.
  • Nestle pork chops into rice; pour any juices from meat over top.
  • Cover and bake in 350 oven for 30 to 35 minutes or until rice is tender and liquid absorbed.

1 teaspoon vegetable oil, divided
2 teaspoons sesame oil
2 cloves garlic, minced
2 teaspoons minced fresh ginger
2 cups shredded cooked chicken
1 cup shredded cabbage
1 large carrot, finely shredded
2 tablespoons soy sauce
2 tablespoons dry garlic sauce
½ cup cooked jasmine rice
12 medium (blank)s rice paper sheets

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Brush a large baking pan with 1/2 teaspoon vegetable oil and set aside.
  • Heat sesame oil in a large skillet over medium-high heat. Add garlic and ginger and saute, 1 to 2 minutes. Add cooked chicken, cabbage, carrot, soy sauce, and dry garlic sauce. Cook and stir until vegetables are soft, 2 to 3 minutes. Mix in cooked rice. Keep on low heat while preparing the rice papers.
  • Wet a cloth with warm water and place one rice paper sheet inside. Wrap completely and let soften, about 1 minute. Add 1/4 cup of the chicken mixture to the middle of the rice paper sheet. Fold both ends in and roll from one side to the other. Place wrapped roll onto the prepared baking sheet.
  • Repeat the wetting, filling, and wrapping process to make remaining rice paper rolls. Brush rolls with remaining vegetable oil.
  • Bake in the preheated oven for 10 minutes, then turn over to bake for an additional 10 minutes.

This oven-baked rice is easy to make. I used to make it when I was in college because it's inexpensive, really good, and it tastes great reheated. All the vegetables can be adjusted according to taste, or whatever is available in my cupboard.

2 (10 ounce) cans sliced mushrooms, drained
2 (10 ounce) cans peas, drained
2 cups uncooked rice
1 ½ cups sliced carrots
½ cup soy sauce
¼ cup canola oil
1 (1.5 ounce) package dry onion soup mix

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix water, mushrooms, peas, rice, carrots, soy sauce, oil, and soup mix together in a baking dish.
