1 (16 ounce) package elbow macaroni
1 (28 ounce) can petite diced tomatoes
6 tablespoons butter
¼ cup flour
1 quart half-and-half
2 cups chicken broth
4 cups shredded mild Cheddar cheese
2 cups shredded sharp white Cheddar cheese
fresh ground black pepper to taste
1 sleeve buttery round crackers (such as Ritz®), crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain, return macaroni to pot, and stir tomatoes into the macaroni. Cook over medium heat until the macaroni absorbs some of the liquid from the tomatoes, about 4 minutes. Remove from heat.
  • Melt butter in a large saucepan over medium-high heat. Stir flour into melted butter and cook until bubbly, 1 to 2 minutes. Slowly stream half-and-half and chicken broth into the butter mixture while stirring. Bring the mixture to a boil and continue to cook while stirring continually until thickened and bubbly, 2 to 3 minutes.
  • Remove saucepan from heat. Melt mild Cheddar cheese and sharp Cheddar cheese into the butter mixture one handful at a time, stirring to incorporate each addition before adding the next. Season the cheese mixture with pepper and pour over the macaroni; stir to coat pasta evenly. Transfer the mixture to the prepared baking dish and top with crushed crackers.
  • Bake in preheated oven until crust is golden brown and the liquid is bubbling, 15 to 20 minutes. Cool 10 minutes before serving.

4 -6 slices thickly sliced French bread, slices torn into small pieces (about 2-3 cups)
4 medium green tomatoes, cut into 1/4-inch slices (about 1 1/2 pounds total)
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded sharp cheddar cheese
1 tablespoon butter

Steps:

  • Preheat oven to 400°F Lightly grease a 1½-quart casserole, deep-dish pie pan, or 4 ramekins.
  • Place bread in a food processor and pulse to a coarse texture. Combine sugar, salt and pepper in a small bowl; mix well.
  • Arrange one-third of the tomato slices in the bottom of pan. Sprinkle one-third of the sugar mixture, one-third of the bread crumbs, and 1/3 cup Cheddar over tomatoes. Repeat with a second layer. For third layer, add remaining tomatoes, sugar mixture and bread crumbs. Dot with butter. Cover with foil.
  • Bake1 hour. Uncover and sprinkle remaining 1/3 cup Cheddar on top. Bake 5 minutes longer, or until cheese melts. Remove from oven and let stand 15 minutes before serving to allow the flavors to blend.

4 large tomatoes, cut crosswise inot 1/2-inch slices (about 2 pounds)
2 medium red onion, cut crosswise into 1/4 -inch rounds (about 1 pound)

1 -2 minced garlic clove
coarse salt and pepper

Steps:

  • Preheat oven to 450 degrees. In a 9-by-13-inch baking dish, arrange tomatoes and onions in rows, overlapping slightly. Sprinkle with the minced garlic and drizzle with oil and season with salt and pepper. Bake until tomatoes are lightly browned and onions are tender, about 45 minutes. 1 tablespoon lemon-pepper seasoning
2 teaspoons onion powder
1 teaspoon garlic powder
salt and ground black pepper to taste
2 tablespoons butter, or as needed
2 cups dried penne pasta
1 (14.5 ounce) can diced tomatoes
1 (10.5 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can condensed cream of chicken soup
¼ (10 ounce) package frozen peas
¼ (10 ounce) package frozen cauliflower and broccoli
3 teaspoons dried basil
2 teaspoons dried parsley
1 teaspoon dried oregano

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Mist a 2 1/2-quart baking dish with cooking spray.
  • Place chicken in a large bowl. Season with lemon-pepper, onion powder, garlic powder, salt, and pepper.
  • Heat butter in a skillet over medium-high heat; add chicken and pan-fry, stirring as needed, until browned and no longer pink in the centers, about 10 minutes.
  • While chicken cooks, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.

The main ingedients are of course, the huge beans & tomato.....try to find original yigandes (gigantes, gigandes) beans at a Greek or ethnic market for this dish, otherwise use the biggest lima beans you can find. 1 lb yigandes beans, soaked for 12 hours, drained (or big lima beans)
2 -3 garlic cloves, minced
2 medium onions, finely chopped
1/2 cup olive oil
1 lb of ripe tomatoes, peeled, finely chopped (or 16oz. of canned chopped plum tomatoes)
2 small vegetable bouillon cubes
sea salt (optional)
fresh ground pepper
2 tablespoons fresh parsley, chopped
2 cups water (1 1/2 cups if using canned tomatoes)

Steps:

  • Add the beans to a pot with enough cold water to cover well. Bring to a boil, reduce heat and cook at a slow boil for 1 hour. Drain and set aside.
  • Preheat the oven to 325F (160C).
  • Using a wooden spoon, sauté the onion and garlic in the olive oil until soft.
  • Add tomatoes (if using canned, add all liquid as well), bouillon cubes, salt, pepper, parsley, and water, and allow to boil gently for 10-30 minutes, until it begins to thicken.
  • Place the beans in an oven-proof pan, add tomato mixture, stir and spread mixture out evenly.
  • Bake 1 1/2 to 2 hours, or until beans are soft. (Check the dish during cooking and if needed, add a small amount of boiling water.) The dish will look crispy on top.
  • Remove from the oven, cover, and allow to cool. Serve warm or at room temperature.
  • When using after refrigerating, allow it to come to room temperature, or heat briefly in the microwave. This dish is not served hot.

1 small yellow onion, diced small
1 can (14.5 ounces) diced tomatoes
4 cups reserved Three-Cheese Macaroni
3 tablespoons sour cream
4 teaspoons chopped fresh basil leaves
Coarse salt
1/4 cup fresh breadcrumbs

Steps:

  • Preheat oven to 400 degrees. In a large skillet, heat 1 tablespoon olive oil over medium. Add onion and cook until softened, about 8 minutes. Stir in tomatoes with juice and cook until tomatoes are heated through, 2 minutes. Add macaroni and cheese, gently stirring to combine. 1/2 c corn, cut from the cob

1 small bay leaf
dash of dried cloves
3/4 c sharp cheddar cheese, grated

Steps:

  • 1. Grease casserole and add zucchini coins. Set aside. Preheat oven to 350 degrees
  • 2. In large saucepan, melt 3 Tbsp. butter. Saute' green pepper and onion 1-2 minutes.
  • 3. Sprinkle flour over pepper and onion. Stir in the tomatoes and corn.
  • 4. Add the salt, brown sugar, bay leaf and dried cloves. Stir well. Cook the sauce, over medium 5-6 minutes until slightly thickened.
  • 5. Pour sauce over zucchini. Dot top with additional butter. Cover evenly with grated sharp Cheddar cheese. Sprinkle with Parmesan.
  • 6. Bake in preheated 350 degree oven 45 minutes.

2 large zucchini, thinly sliced lengthwise
4 large heirloom tomatoes, sliced thinly
1 cup panko breadcrumbs
1/2 cup grated parmesan cheese
1 tbsp dried basil
1 tbsp dried oregano
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper

Steps:

  • Preheat oven to 375 degrees.
  • In a small bowl, combine basil, oregano, garlic powder, salt and pepper.
  • Spray an 11 X 13 casserole pan with non-fat cooking spray.
  • Place a layer of zucchini slices along bottom of pan. Sprinkle lightly, but evenly with the seasoning mix. Then place a layer of tomatoes on. Repeat layers until all tomatoes and zucchinis have been used.
  • Cover loosely with foil and bake in oven for about 25 minutes.
  • Remove from oven, and top casserole with parmesan cheese and then the panko breadcrumbs. Lightly mist with olive oil mister or non-fat cooking spray.
  • Return to oven, uncovered, and bake for another 20 minutes, or until cheese is melted and top is crusty.
  • When done cooking, remove from oven and let stand 10 minutes. Cut into 6 equally sized pieces and serve immediately.

Tomato, basil, cheese and polenta with garlic and onions....I'm the only one in my family who likes polenta so I don't make it very often because I'd eat the whole thing in 2 days. I first made this 2 weeks before my due date with our last child when my friend was coming to visit. She now makes it as well. She uses 2 tubes of the already made polenta (tomato and basil flavor) and just layers the cheese in between for a faster meal. Adapted from Simple Vegetarian Pleasures by Jeanne Lemlin. 1 tablespoon olive oil
5 garlic cloves, minced
1 onion, minced
1 (28 ounce) can whole tomatoes, drained and crushed in hands
fresh ground pepper, generous amount
1/2 cup fresh basil, chopped or 1 teaspoon dried basil
1 tablespoon butter, cut into bits
2 1/2 cups vegetable broth
1 1/2 cups cornmeal
2 cups cold water
1/2 teaspoon salt
1/4 cup parmesan cheese, grated
2 tablespoons parmesan cheese, grated
1/2 cup part-skim mozzarella cheese, grated
4 ounces feta cheese, crumbled

Steps:

  • For filling, heat oil in a medium-size skillet over medium heat. Add garlic and onion and saute until soft and golden, about 10 minutes. Stir in the tomatoes, season with pepper, and cook until the juices thicken and are almost evaporated, about 10 minutes. Stir in the basil, and remove from heat.
  • For polenta, preheat the oven to 400 degrees (if making right away). Grease a 2-to 2 1/2 quart shallow baking dish.
  • Bring vegetable broth to a boil in a medium saucepan over high heat. Place the cornmeal in a large bowl and whisk in the cold water. (For lump-free polenta) Continue to whisk while pouring it into the boiling broth. Bring to a boil, whisking almost constantly. Once the polenta begins to boil, reduce heat to medium. Whisk polenta continuously until it begins to tear away from the sides of the pan, about 5 minutes. Whisk in salt, 1/4 cup of parmesan cheese, and mozzarella cheese.
  • Immediately pour half of polenta into baking dish. Quickly spread on the tomato mixture. Crumble the feta evenly over the tomato mixture. Immediately spoon on the remaining polenta, covering entire surface. Sprinkle the top with 2 tablespoons parmesan cheese. Dot with butter bits.
  • Let the polenta rest at least 15 minutes, or up to 24 hours. If longer than one hour, cover and refrigerate. Bring to room temperature before baking. Bake 25 minutes, or until hot and bubbly and golden on top. Let polenta sit 10 minutes or so before serving.

1 medium eggplant
1/2 cup Italian seasoned breadcrumbs
1/2 cup low-fat milk
1 (29 ounce) can tomato sauce
1 ounce dried shiitake mushroom
2 teaspoons olive oil
10 garlic cloves
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 teaspoon oregano
1/2 teaspoon cracked black pepper
3 tablespoons sugar
2 ounces parmesan cheese, grated

Steps:

  • Preheat oven to 400. Slice eggplant into rounds. Bread each round by dipping first into milk, then into breadcrumbs. Place on a lightly greased cookie sheet. Spray lightly with nonstick cooking spray. Put 9 cloves of garlic into a foil pouch- spray with oil, seal. Bake everything until eggplant is soft, flipping once (at least 30 minutes). Meanwhile prepare sauce. Add oil to a large saucepan, then saute remaining garlic clove (crushed) until fragrant. Add red pepper, stir. Then add tomato sauce, salt, pepper, oregano, sugar and crumbled dried mushrooms. Simmer, stirring occasionally. Once the eggplant is cooked assemble the casserole. Ladle 1/3 of the sauce into a small oven safe non-stick skillet or casserole dish. Add all of the roasted garlic from the foil pouch. Layer in one half of the eggplant, top with 1/3 of sauce and 1/2 of the Parmesan. Repeat. Bake for 45 minutes at 350.

Yigandes are similar to (but bigger than) dried lima beans, and this oven-to-table casserole combines them with tomatoes, onions, herbs, and spices to create a fabulous dish. This can also be served as a side dish or (on small plates) as a meze.
