Olive oil

½ cup sour cream or Greek yogurt
1 tablespoon pure maple syrup
2 teaspoons seeded, minced jalapeno
1 teaspoon fresh lime juice
Salt and Tabasco sauce to taste
Bacon bits
Sliced scallions

Steps:

  • Preheat oven to 450 degrees with a rack positioned in the center.
  • Rub sweet potatoes with oil and salt. Bake directly on rack until soft when pierced, 40-45 minutes.
  • Combine sour cream, maple syrup, jalapeno, lime juice, salt and Tabasco; and chill until ready to serve.
  • Serve potatoes with sour cream mixture, bacon bits and scallions.

1/2 cup sour cream
1 tablespoon pure maple syrup

Steps:

  • Preheat oven to 450 degrees; line a baking sheet with aluminum foil. With a fork, pierce sweet potatoes all over; arrange on sheet. Bake until tender, 45 to 50 minutes.
  • Cut a deep slit in each sweet potato; push ends together to open. In a small bowl, stir together sour cream and maple syrup; dollop on top of sweet potatoes.

1 tablespoon vegetable oil
Salt and freshly ground black pepper
1/2 cup sour cream
4 teaspoons dark-brown sugar

Steps:

  • Heat oven to 400 degrees. Line a baking sheet with parchment paper or aluminum foil, and set aside. Rub potatoes with vegetable oil, and place on the prepared baking sheet. Bake in the oven until the potatoes can be easily pierced with a knife, 40 to 45 minutes.
  • Slit potatoes open lengthwise, and sprinkle with salt and pepper. Top with a generous dollop of sour cream, sprinkle with dark-brown sugar, and serve immediately.

That's why I've enlisted bacon, lime, jalapeno, green onions, and sharp Cheddar to make these twice-baked sweet potatoes more addictive than in any Thanksgiving past. You can prep them ahead of time and then bake when you're ready to serve.

4 orange-fleshed sweet potatoes
½ tablespoon olive oil
1 (8 ounce) package bacon, diced
⅓ cup sliced green onions
¼ cup diced jalapeno peppers
salt to taste
freshly ground black pepper to taste
cayenne pepper to taste
½ cup shredded sharp white Cheddar cheese
2 tablespoons creme fraiche
2 teaspoons fresh lime juice
2 tablespoons shredded sharp white Cheddar cheese, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place sweet potatoes on a baking sheet. Prick with a knife and drizzle with olive oil; rub to coat. Space sweet potatoes evenly apart.
  • Bake in the preheated oven until completely tender, about 35 minutes.
  • Meanwhile, add bacon to a pan over medium heat. Cook and stir until bacon starts to get crispy and the fat turns foamy, 4 to 5 minutes. Add green onions and jalapeno; cook and stir for 1 minute. Remove from heat and set aside.
  • Let sweet potatoes cool until safe to handle. Leave the oven on. Cut off the top 1/3 of each potato, holding the knife at a 45-degree angle. Scoop out sweet potato flesh from both the top and bottom halves, leaving at least 1/4 inch flesh in the bottoms to make the shells.
  • Season the sweet potato flesh with salt, pepper, and cayenne. Add 1/2 cup cheese, creme fraiche, and lime juice. Mash with a potato masher. Add the bacon mixture and mix until combined. Spoon filling into the sweet potato shells. Lightly scatter remaining cheese on top.
  • Bake until heated through and tops have started to brown, 20 to 25 minutes.

1 teaspoon canola oil
1/2 teaspoon kosher salt
1/2 cup sour cream or 1/2 cup plain yogurt
1 tablespoon maple syrup

3 -4 drops Tabasco sauce or 3 -4 drops frank's hot sauce
1 tablespoon crumbled bacon

2 pinches dried oregano
2 pinches salt

1 tbsp. maple syrup
2 t. minced seeded jalapeno chiles
1 t. fresh lime juice
salt to taste
tabasco sauce to taste
4 sweet potatoes
vegetable oil
bacon bits
chopped green onions

Steps:

  • 1. Mix the sour cream, maple syrup, jalapeño chiles and lime juice in a bowl. Season with salt and Tabasco sauce and mix well. Chill until cold. Rub the sweet potatoes with oil and sprinkle with salt. Bake directly on a rack in preheated 450 oven for 40 to 45 minutes or until tender.
