PERFECT ROASTED SWEET POTATOES
Roasted sweet potatoes are truly delicious, and so easy to make! This healthy recipe will become your new favorite side dish. Recipe yields 4 side servings.

- Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up.
- Either scrub the sweet potatoes clean and pat dry, or peel them (I generally peel mine). To slice, use a sharp chef's knife to cut them into 1-inch thick rounds. Then, cut up each round to make 1-inch cubes. The "cubes" won't be perfectly even, but that's ok.
- Place the sweet potatoes on the prepared baking sheet. Drizzle the olive oil on top. If using, sprinkle the chili pepper or several twists of freshly ground black pepper on top, followed by the salt. Toss until the sweet potatoes are all evenly coated in oil, and arrange them in a single layer.
- Bake for 30 to 40 minutes, tossing halfway, until the sweet potatoes are tender and caramelizing at the edges. Serve while warm. Leftover sweet potatoes will keep in the refrigerator, covered, for about 4 days. Gently reheat in the microwave or oven if desired.

- Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a glass or non-stick baking dish with olive oil, just enough to coat.
- Wash and peel the sweet potatoes. Cut them into medium size pieces. Place the cut sweet potatoes in the baking dish and turn them so that they are coated with the olive oil. Sprinkle moderately with oregano, and salt and pepper (to taste).
- Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes or until soft.

BAKED SWEET POTATOES
Sweet potatoes are in the same family as other potatoes but cooking them requires a different approach to get the fluffy interior and sweet caramelized flavor we all love. After testing several techniques-wrapping in foil, pricking and not pricking, using a roasting pan-we found the following method delivered on all fronts, with minimal effort. Pricking with a fork allows steam to release and the potato flesh to separate from the skin, something that didn't always happen otherwise. Baking the potatoes on a wire rack nested in a baking sheet also helped the potatoes cook more evenly (and made cleaning up much easier). Lastly, allowing the potatoes to rest in the turned-off oven for 30 minutes after baking allowed the flavors to develop even further, though you can skip this step if you are short on time.

- Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a rimmed baking sheet with foil, then set a wire rack inside the baking sheet.
- Prick each of the sweet potatoes 5 times with a fork and place on top of the prepared rack, keeping space between potatoes to allow heat to circulate. Bake the sweet potatoes until a paring knife can easily go through without resistance, about 1 hour. Turn the oven off and let the potatoes rest inside for 30 minutes more. Remove from the oven and cut each potato in half lengthwise. Season with salt and pepper and top with butter if using.
BROWN SUGAR-GLAZED SWEET POTATOES WITH MARSHMALLOWS

- Preheat oven to 375°F. Arrange potatoes in 13 x 9 x 2-inch glass baking dish. Combine sugar, butter, cinnamon, salt, nutmeg and ginger in heavy small saucepan over medium heat. Bring to boil, stirring until sugar dissolves. Pour over potatoes; toss to coat. Cover dish tightly with foil.
- Bake potatoes 50 minutes. Uncover; bake until potatoes are tender and syrup thickens slightly, basting occasionally, about 20 minutes. Increase oven temperature to 500°F. Top potatoes with marshmallows and nuts. Return to oven; bake until marshmallows begin to melt and nuts begin to brown, about 3 minutes.
BAKED SWEET POTATO GEMS
I found the basic recipe for these in TOH magazine, I tweeked it and made it my own. We love these with a pot roast or barbeque or anything else a sweet potato would go with. This looks like lots of work but its not. You can make these ahead of time and keep them in the frig for several days

- 1. Wash sweet potatoes and dry. Grease with shortening. Place in the microwave and cook on high for about 12 minutes, turning once or until potatoes are soft.
- 2. When potatoes have cooled slightly but are still hot cut a boat shaped slice from the top of each potato. Scoop pulp out leaving skins intact (I use measuring spoon) and put into medium bowl.
- 3. Add all other ingredients and mash and mix with a fork. When pulp is smooth add it back to the potato skins. Pat tops with brown sugar and a sprinkling of cinnamon.
- 4. Potatoes may be refrigerated and reheated in a foil lined pan at 425 for l0 to 15 minutes or until hot. They can also be reheated in microwave.
BAKED SWEET POTATO

- Heat the oven to 180C/160C fan/gas 4. Scrub the sweet potatoes clean, put on a baking tray and prick all over with a fork. Drizzle each with a little oil and sprinkle with a pinch of sea salt flakes. Put in the oven for 45 mins to 1 hr, depending on their size, until crisp on the outside, and they're pierced easily with a small knife. Serve as a side with butter, or add a filling of your choice.
