Sweet Potato Cream Cheese Bars image

1 package white cake mix (regular size)
1 cup chopped pecans, toasted
1/2 cup cold butter, cubed
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
3 large eggs, room temperature
1 can (14 ounces) sweetened condensed milk, divided
3 cups cooked and mashed sweet potatoes (about 3 medium)
2 teaspoons pumpkin pie spice

Steps:

  • Preheat oven to 350°. Combine cake mix and pecans; cut in butter until crumbly. Press mixture onto bottom of a greased 13x9-in. baking dish., Beat cream cheese, sugar, 1 egg and 2 tablespoons milk until smooth; set aside. Stir together sweet potatoes, remaining eggs, remaining milk and pie spice; pour over pecan mixture. Dollop cream cheese mixture over sweet potato mixture. Cut through cream cheese mixture with a knife to swirl into sweet potato mixture., Bake until set and slightly golden on top, about 45 minutes. Allow to cool completely; chill before cutting into bars.

BAKED SWEET POTATO AND CARROT GRATIN

1/2 cup extra-virgin olive oil
2 medium Spanish onions, sliced
20 ounces baby spinach
2 2/3 cups cream cheese (21 ounces), cut into small cubes
1 1/3 cups vegetable stock
1 cup full-fat yogurt
Zest of 2 oranges
Kosher salt and freshly cracked black pepper
2 sprigs fresh sage, minced
4 large sweet potatoes, peeled and sliced 1/8-inch thick
4 large carrots, sliced on the bias 1/8-inch thick
1 1/2 cups toasted breadcrumbs
1 cup pomegranate seeds

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large pan, heat 3 tablespoons of the olive oil over medium-high heat until hot. Add the onion and saute until translucent and tender, 3 to 5 minutes. In stages, add the spinach and cook until all of the spinach is incorporated and cooked through. Set aside.
  • In a saucepot over medium-high heat, combine the cream cheese and vegetable stock, whisking to form a smooth mixture. Bring to a simmer, lower the heat to medium and simmer for 3 to 5 minutes. Add the yogurt and orange zest and whisk until incorporated, then remove from the heat. Add the spinach to the cream cheese mixture. Season with salt and pepper and fold together.
  • Coat the inside of a 9-by-13-inch baking dish with the remaining olive oil. Place a thin layer of the spinach mixture on the bottom of the dish and sprinkle with a third of the sage. Place a layer of sweet potatoes on top of the spinach and season with salt and pepper. Top with a single layer of carrots, then a layer of the spinach mixture and some sage. Repeat the steps once more, finishing with a layer of the spinach mixture on top, followed by a sprinkle of sage.
  • Cover the dish with aluminum foil and bake until the potatoes and carrots are tender, 1 hour and 20 minutes. Remove the foil, coat with the breadcrumbs and continue to bake until the breadcrumbs are golden brown, an additional 10 minutes. Let stand for 15 minutes before serving. When ready to serve, top with the pomegranate seeds.

This creamy sweet potato recipe is a huge hit with everyone. A friend served a version of these at a luncheon, and I absolutely loved it. I found some sweet potatoes in my fridge that I hadn't used and decided to try it. Everyone at work flipped over them! They're great with pork chops or steak, too!

6 sweet potatoes
2 tablespoons salad oil
1 (8 ounce) package cream cheese, softened
⅓ cup brown sugar
2 tablespoons margarine
1 tablespoon vanilla extract
¾ teaspoon salt
½ teaspoon pepper
⅓ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rub sweet potato skins with salad oil. Wrap potatoes in aluminum foil and bake in preheated oven for 1 hour, or until soft.
  • Meanwhile, in a large bowl combine cream cheese, brown sugar, margarine, vanilla, salt and pepper.
  • Cut potatoes in half and scoop flesh into the bowl with the other ingredients. Mix well and fold in walnuts. Spoon mixture into potato skins.
  • Bake for 5 minutes, or until heated through.

Move over banana bread, this sweet potato bread may be our new fall favorite. It has incredible sweet potato flavor, with just the right amount of spices and a beautiful layer of cream cheese baked in the center. Moist, sweet, and aromatic, it's nice enough to give as a hostess gift to friends.

2 c mashed sweet potatoes (you can use canned or fresh baked. If using canned, drain well)
3 c white sugar
4 large eggs
1 c vegetable or canola oil
3/4 c orange juice
3 1/2 c all-purpose flour
1 1/2 tsp salt
2 tsp baking soda
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground allspice
1/2 tsp ground cloves
CREAM CHEESE FILLING
4 large eggs
2 pkg cream cheese, softened; 8 oz each
1 c sugar
2 tsp vanilla
2/3 c flour (scant)

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour three loaf pans; set aside.
  • 2. SWEET POTATO BREAD: In large mixing bowl, beat together sugar, eggs, and oil.
  • 3. Stir in orange juice and mashed sweet potatoes.
  • 4. In a separate bowl mix together flour, salt, baking soda, and spices.
  • 5. Stir into sweet potato mixture just until combined, DO NOT USE A MIXER! Set aside while making filling.
  • 6. CREAM CHEESE FILLING: Beat together cream cheese, sugar, eggs, vanilla, and flour until smooth.
  • 7. Spoon sweet potato bread batter into the bottom of each prepared loaf pan, reserving half of the batter. In each pan, layer cream cheese mixture over the sweet potato bread batter spreading smooth.
  • 8. Top with the remaining batter.
  • 9. Bake for 1 hour and 15 minutes or until golden and toothpick or knife inserted in center comes out clean. Remove from oven and cool 10 minutes in the pan.
  • 10. Remove from pans and cool on wire rack. You can serve warm or room temp.

4 small sweet potatoes
1 (3 ounce) package cream cheese, softened
1 tablespoon butter
2 tablespoons brown sugar
1/4 teaspoon pumpkin pie spice

Steps:

  • Scrub and pierce sweet potatoes and place on a microwave safe plate.
  • Microwave, uncovered, on high for 10-13 minutes or until tender (turning twice).
  • Meanwhile, in a small mixing bowl, beat the cream cheese, butter, brown sugar and pumpkin pie spice until smooth.
  • Make a slice in the top of each potato; fluff pulp with a fork.
  • Dollop with cream cheese mixture.

6 medium potatoes
8 ounces fat free cream cheese
1/2 cup nonfat milk
1 teaspoon onion salt
2 tablespoons butter
fresh ground pepper
1/2 cup parsley, finely chopped
paprika

Steps:

  • Preheat oven to 350°F.
  • Put cream cheese out to soften.
  • Scrub potatoes; dry them off and grease them with butter and salt the skins. Bake at 350°F for 1 hour. Remove from oven and cool to handle.
  • Cut potatoes in half, lengthwise, remove cooked potato and put in large bowl. Be carefully to leave the skin intact.
  • Mash with cream cheese, hot milk, onion salt, butter, and pepper.
  • Pile mixture back into skins.

3 medium sweet potatoes
1 teaspoon olive oil
2 shallots, finely chopped
½ cup fat-free ricotta cheese
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground ginger
1 tablespoon brown sugar
¼ cup grated Parmesan cheese
2 ½ tablespoons chopped fresh sage

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Pierce potatoes with a fork and bake until soft, about 1 hour. Remove from oven and cool until potatoes can be handled, about 20 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Grease a large baking sheet.
  • Meanwhile, place olive oil in small skillet over medium heat. Add shallots and cook and stir until softened and beginning to brown, about 10 minutes. Set aside.
  • Cut potatoes in half lengthwise and scoop out pulp, leaving a thin shell. Set shells aside. Place pulp into a blender or food processor and blend until smooth. Add ricotta, salt, pepper, ginger, and sugar to the blender; blend until smooth.
