Inspired by the flavors of our favorite Asian takeout, here's a recipe that uses canned pineapple tidbits, with the usual veggies. In order to make it sheet-pan friendly, the chicken is not breaded or fried. Add as much of the delicious sauce as you like, and if there is any left, store the sauce in the fridge in a sealed container, up to one week. It's also a great dipping sauce for Asian-style appetizers. Serve over hot steamed rice.

2 (8 ounce) cans pineapple tidbits in juice
1 red bell pepper, seeded and cut into 1-inch pieces
1 green bell pepper, seeded and cut into 1-inch pieces
1 carrot, peeled and sliced diagonally
½ red onion, cut into 1-inch pieces
3 tablespoons avocado oil
salt and ground black pepper to taste
1 ½ pounds skinless, boneless chicken breast, cut into 1-inch pieces
water as needed
2 tablespoons cornstarch
½ cup light brown sugar
⅓ cup rice vinegar
3 tablespoons ketchup
3 tablespoons soy sauce
1 tablespoon chile-garlic sauce
1 tablespoon ginger-garlic paste
⅛ teaspoon ground white pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Drain pineapple tidbits and place juice into a 1-cup liquid measure. Place drained pineapple in a large mixing bowl; set aside.
  • Add bell peppers, carrot, and onion to the pineapple tidbits. Pour 2 tablespoons avocado oil over top and sprinkle with salt and pepper. Stir until coated with oil and seasoning, then spread in a single layer on a sheet pan. Place chicken into the same bowl, drizzle with remaining 1 tablespoon oil, and season with salt and pepper. Toss to coat and nestle chicken pieces on the sheet pan between the pineapple and vegetable pieces.
  • Bake in the preheated oven until vegetables are tender and chicken is cooked through, about 25 minutes.
  • Meanwhile, add enough water to the reserved pineapple juice to make 1 cup liquid. Transfer 3 tablespoons of the liquid to a small bowl and add cornstarch. Stir with a fork or whisk until smooth.
  • Pour remaining liquid into a saucepan with brown sugar, rice vinegar, ketchup, soy sauce, chile-garlic sauce, ginger-garlic paste, and white pepper. Bring to a boil, stirring occasionally, over medium-high heat. Slowly add cornstarch mixture, whisking briskly. Return to a boil and allow to thicken, whisking constantly, about 1 minute.
  • Drizzle chicken, pineapple, and vegetables with sauce to serve.

1 ½ lb chicken breast, chopped into bite-size pieces
1 tablespoon soy sauce
1 cup cornstarch, plus 1 tbsp, divided
1 large egg
1 pineapple
2 tablespoons vegetable oil, plus more for frying
½ red bell pepper, chopped
½ green bell pepper, chopped
½ cup white onion, chopped
2 teaspoons garlic, minced
1 teaspoon ginger, minced
¼ cup rice vinegar
¼ cup sugar
3 tablespoons ketchup
white rice, cooked, for serving
scallion, sliced, for garnish
sesame seed, for garnish

Steps:

  • In a large bowl, combine the chicken with 1 tablespoon soy sauce, 1 tablespoon cornstarch, and 1 egg. Cover and marinate in the fridge for 20 minutes.
  • Cut the pineapple in half lengthwise and carefully cube the fruit in each half, leaving the outside of the pineapple intact. Scoop out the cubed pineapple and set aside.
  • Place the remaining cup of cornstarch in a separate large bowl and toss the marinated chicken pieces until liberally coated. Shake off excess.
  • Fill medium pot halfway with oil and heat until the oil reaches 350˚F (180°C).
  • Fry the chicken for 4-5 minutes, until the coating is golden brown and the chicken is cooked throughout. Transfer to a wire rack set over paper towels to drain.
  • To make the sauce, heat 2 tablespoons of vegetable oil in a medium frying pan over a medium heat. Sauté the bell pepper and onion for 2-3 minutes, until softened.
  • Add the garlic and ginger, and cook until fragrant.
  • Add the vinegar, sugar, and ketchup, and stir. Bring the mixture to a boil.
  • Add the pineapple cubes and warm thorough.
  • Add the chicken to the frying pan and toss to coat with the sauce.
  • Scoop the mixture into the hollowed out pineapple along with a scoop of rice.
  • Garnish with scallions and sesame seeds.
  • Enjoy!

1 pound skinless, boneless chicken thighs, cubed
¼ cup shoyu (soy sauce)
½ cup oil for frying, or as needed
½ cup all-purpose flour
5 tablespoons cornstarch, divided
⅛ teaspoon ground black pepper
¾ cup white sugar
1 cup water, divided
½ cup white vinegar
½ large yellow onion, cut into chunks
1 (8 ounce) can pineapple chunks, drained
1 large green bell pepper, cut into chunks

Steps:

  • Combine chicken and soy sauce in a glass or ceramic bowl and let marinate in the refrigerator for 1 hour.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Heat oil in a large wok to 350 degrees F (175 degrees C).
  • While the oil is heating, whisk flour, 2 tablespoons cornstarch, and black pepper together in a shallow dish. Dredge chicken in flour mixture.
  • Fry chicken in batches in the hot oil until golden brown and crispy and no longer pink in the centers, 5 to 8 minutes per batch. Remove to a plate.
  • Discard any oil remaining in the wok. Return the wok to medium-high heat and add sugar, 1/2 cup water, and vinegar. Heat through, stirring frequently until sugar dissolves. Add onion and continue cooking for 1 minute.
  • Meanwhile, mix remaining cornstarch into remaining 1/2 cup water and stir until completely mixed. Add to vinegar mixture in the pan along with pineapples and bell pepper chunks. Continue cooking until sauce thickens and bell peppers are just cooked, about 3 minutes. Add chicken and toss to coat.

3 tablespoons ketchup
2 tablespoons orange marmalade or apricot preserves
2 teaspoons low-sodium soy sauce
2 teaspoons balsamic vinegar
One 1-inch piece ginger, peeled and finely grated
Large pinch of cayenne pepper (optional)
2 bell peppers (1 red, 1 yellow), quartered lengthwise and seeded
1 bunch scallions, cut into 3-inch pieces
3 teaspoons extra-virgin olive oil
Kosher salt
8 skin-on, bone-in chicken thighs (3 to 3 3/4 pounds)
Cooked white rice, for serving (optional)

Steps:

  • Preheat the oven to 450 degrees F. Make the sweet-and-sour sauce: Whisk the ketchup, marmalade, soy sauce, vinegar, ginger and cayenne in a small bowl. Put the bell peppers and scallions on a rimmed baking sheet and toss with 2 tablespoons of the prepared sauce, 1 1/2 teaspoons olive oil and a pinch of salt.
  • Heat the remaining 1 1/2 teaspoons olive oil in a large skillet over medium-high heat. Sprinkle the chicken with 1/2 teaspoon salt. Working in batches, add the chicken to the skillet skin-side down and cook, undisturbed, until the skin is golden and slightly crisp, about 4 minutes. Place skin-side up on the baking sheet with the vegetables.
  • Brush the chicken with half of the remaining sweet-and-sour sauce. Bake until a thermometer inserted into the thickest part registers 165 degrees F, 20 to 25 minutes. Divide the chicken and vegetables among plates. Serve with rice and the remaining sauce.

This is one of our favorite sweet and sour chicken dishes at our house, if you have any on hand add in about 1 cup of apricot preserves to this it seems to kick up the flavor! --- all the ingredients may be adjusted to suit taste, and the sauce may be easily doubled if using more chicken.

1/4 cup butter
1 medium chopped onion
1 medium green bell pepper, coarsley chopped
1 tablespoon minced fresh garlic (optional)
1 cup carrot, coarsley chopped
3/4-1 cup ketchup
1 cup pineapple juice (reserve this juice from the tidbits)
2 -3 tablespoons white vinegar (or to taste)
1/4-1/3 cup light brown sugar (or to taste)
2 tablespoons soy sauce (or to taste)
salt and pepper
1/4-1/2 teaspoon ground ginger powder (or to tase)
1 (16 ounce) can pineapple tidbits (reserving the juice)
3 -4 lbs chicken pieces

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish (or a larger baking dish or roaster if using more chicken and doubling sauce).
  • In a medium saucepan, saute the onions, green pepper and carrots for about 3 minutes; add in the fresh garlic (if using), and saute for another 3 minutes.
  • Stir in the ketchup, pineapple juice, vinegar, brown sugar, soy sauce, salt, pepper and the ginger powder; stir with a spoon until all the ingredients are well mixed; bring to a light to a boil (at this point adjust all of the ingredients, adding in more to suit taste, and bring to a boil again for a couple of minutes).
  • If you prefer a thicker sauce, mix cornstarch with cold water to make a thin paste, add to sauce and boil another minute.
  • Add in the pineapple chunks/tidbits: set the sauce aside.
  • In a large frypan, sprinkle the chicken with black pepper, and brown on both sides in oil until lightly browned (do not burn the skin!).
  • Set the browned chicken pieces into the baking dish/roaster.
  • Pour the sauce over the chicken; mix lightly to make sure the chicken is evenly coated with sauce.
  • Bake uncovered for about 40 minutes, or until the chicken is tender and cooked.
  • Serve with or over rice -- delicious!

3-4 boneless, skinless chicken breasts (1 ½ pounds), cut in bite-size pieces)**
3 eggs
1/2 cup flour
1 1/3 cup cornstarch
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ginger powder
1/4 teaspoon onion powder
Sweet and Sour Sauce
1/2 cup pineapple juice (from 20 oz. pineapple tidbits can below)
1 cup red wine vinegar
1 ½ cups sugar
1/4 cup + 2 tablespoons ketchup (6 tablespoons)
1 small onion, diced
2 tablespoons soy sauce
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon red pepper flakes
1/2 teaspoon ginger powder
Vegetables/Pineapple
1 (20 oz) can pineapple tidbits
1 green bell pepper, chopped
1 red bell pepper, chopped
1 cup carrots, sliced as THIN as possible (2-3 carrots)

Steps:

  • Add "Sweet and Sour Sauce" ingredients to a medium/large saucepan, stir and bring to a boil then reduce to a gentle simmer. Allow to simmer while you prepare the chicken and dice the vegetables, stirring occasionally (turn off if longer than 20 minutes). Note, the sauce will not thicken, simmering is to soften the onions and blend flavors. Preheat oven to 350 degrees and lightly grease a 9x13 baking dish with non-stick cooking spray. Whisk eggs together in a large bowl, set aside. Add ½ cup flour to a large freezer bag; set aside next to eggs. Whisk cornstarch, garlic powder, salt, pepper, ginger powder and onion powder in medium bowl; set aside next to flour. Add chicken to eggs and coat, then remove, allowing excess to drip off, then add to freezer bag with flour. Toss until evenly coated then discard any extra flour. Add cornstarch/spices to the chicken in the freezer bag and shake until evenly coated. Over high heat, heat enough oil (any kind) to generously cover the bottom of a large skillet until hot and rippling. Add chicken and cook 1-2 minutes per side, or until browned but not cooked through. (You may need to cook in 2 batches depending on size of your skillet). Transfer chicken to prepared 9x13 baking dish. Add carrots pineapple and peppers to the sweet and sauce and mix until well combined. Pour sauce over chicken and stir until sauce/chicken/vegetables are evenly combined. Cook, uncovered for 50 minutes or until sauce, stirring occasionally. Serve over rice. Enjoy!
