2 small carrots, shredded
1 small onion, minced
5 tablespoons butter, divided
4 slices bread, cubed
3/4 cup canned diced tomatoes, drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/2 small cucumber, chopped
1-1/4 teaspoons salt, divided
1/4 teaspoon dill weed
1/8 teaspoon pepper
8 sole or orange roughy fillets (4 ounces)
1/8 teaspoon paprika
8 lemon wedges

Steps:

  • In a large nonstick skillet, saute carrots and onion in 3 tablespoons of butter until tender. Remove from the heat. Stir in bread cubes, tomatoes, mushrooms, cucumber, 1 teaspoon salt, dill and pepper., Place four fillets in a 13-in. x 9-in. baking dish coated with cooking spray. Top each with 1 cup stuffing and another fillet. Sprinkle with paprika and remaining salt. Dot with remaining butter. Bake, uncovered, at 350° for 25-30 minutes or until fish flakes easily with a fork. Cut in half; serve with lemon.

1 pkg. (6 oz.) STOVE TOP Savory Herbs Stuffing Mix
1-1/2 cups water
1/4 cup (1/2 stick) margarine or butter, divided
6 flounder fillets (4 oz. each)
2 Tbsp. lemon juice, divided
1/4 tsp. paprika

Steps:

  • Preheat oven to 350°F. Prepare stuffing mix with the water and 3 Tbsp. of the margarine as directed on package.
  • Sprinkle fish evenly with 1 Tbsp. of the lemon juice. Spoon 1/3 cup of the prepared stuffing onto each fillet; roll up loosely to enclose stuffing, starting at one of the short ends. Place, seam-sides down, in greased baking dish; spoon remaining stuffing around roll-ups. Sprinkle evenly with remaining 1 Tbsp. lemon juice and the paprika; dot with remaining 1 Tbsp. margarine.
  • Bake 20 min. or until fish flakes easily with fork.

1/2 stick butter, plus some for the bottom of the baking dish1 medium onion, finely chopped1 shallot, finely chopped1 large clove garlic, finely chopped1 rib celery, finely chopped1/2 large red bell pepper, finely chopped1/4 cup flat leaf parsley leaves, chopped1/4 cup white wine2 slices white sandwich bread, toasted and buttered then finely choppedSalt and freshly ground black pepper1/4 teaspoon ground thyme1 1/2 cups canned or fresh lump crabmeat, cleaned of shell and cartilage4 sole fillets (about 8-10 ounces each)Juice of 1 lemon

Steps:

  • Pre-heat the oven to 400°F. In a skillet over medium-high heat, melt the butter. Cook the onion, shallot, garlic, celery, red pepper and parsley until softened, about 4-5 minutes.Reserve some of the cooked veggies for the bottom of the baking dish. Deglaze the pan with white wine and let cook for another minute. Add the bread, salt, freshly ground black pepper and thyme. Mix to combine thoroughly. Gently fold in the crab meat. Rinse and pat dry the sole fillets. Squeeze some fresh lemon juice on the filets. Spread the stuffing along the filet and roll it up.Place reserved cooked veggies in the bottom of a buttered baking dish. Place the rolled up sole filets, seam side down, on top of the veggies. Cook covered with foil for 15 minutes. Take the foil off and continue to cook for another five minutes uncovered. Serve with Rice Pilaf and Orange and Red Onion Salad.

1 three-pound fish (such as striped bass or red snapper), cleaned with gills removed but head and tail left on
Salt to taste if desired
Freshly ground pepper to taste
12 large cherrystone clams, approximately
9 tablespoons butter
3/4 cup finely chopped onion, about 1/4 pound
3 tablespoons finely chopped shallots
1/2 teaspoon finely minced garlic
1/2 cup finely chopped celery
1/2 cup finely chopped green pepper
1/2 teaspoon finely chopped, fresh thyme, or 1/4 teaspoon dried
1 1/2 cups finely chopped mushrooms, about 1/4 pound
1 cup fine, fresh bread crumbs
1 whole egg, lightly beaten
1 cup dry white wine
1/2 cup heavy cream
1/4 cup finely chopped parsley

Steps:

  • Preheat oven to 400 degrees.
  • Sprinkle fish inside and out with salt and pepper. Set aside.
  • Open the clams. There should be about one cup of shucked clams and one cup of clam juice. Put the clams on a flat surface and chop coarsely. Set aside the chopped clams and the juice.
  • Heat two tablespoons of the butter in a saucepan, and add the onion, shallots, garlic, celery, green pepper, thyme and mushrooms. Cook, stirring, about five minutes. Do not burn.
  • Add the clams, bread crumbs and beaten egg. Add salt and a generous grinding of black pepper.
  • Place the fish on a sizable length of heavy-duty aluminum foil. Open up the cavity of the fish and stuff with the clam mixture. It will be quite full. Dot the top of the fish with two tablespoons of butter. Fold the foil over to contain the stuffing and keep it in place.
  • Rub the bottom of a baking dish, large enough to hold the fish comfortably, with three tablespoons of butter. Add the fish. Pour the reserved clam juice and half of the wine around the fish, and place the dish on top of the stove. Bring the liquid to the boil. Place the dish in the oven and bake 30 minutes. Open up the foil. Pour the remaining wine into the pan and continue baking 45 minutes.
  • Transfer the fish to a warm platter. Remove and discard the foil. Cover the fish with a clean sheet of foil to keep it warm.
  • Place the baking dish on top of the stove and bring the liquid to the boil. Add the cream and stir. Pour and scrape this mixture into a saucepan, and bring it to a rolling boil. Swirl in the remaining two tablespoons of butter.
  • Remove the top skin of the fish, leaving the skin on the head for decorative purposes. Pour the sauce over the fish and sprinkle with parsley. Serve the stuffing with portions of the fish.

I love this dish I got it off of the T.V years ago and I make it often. I normally use a whitefish of some sort. Tilapia or Flounder are my favorites. I usually serve with rice and steamed vegetable. It's filled with flavor and is pretty easy to make. I could eat the stuffing all by it's self. A lot of times I double the stuffing but it's up to you what you think.

6 tablespoons butter, divided
1 celery rib, finely chopped
1 small onion, finely chopped
1/4 cup chopped parsley
1 (4 1/2 ounce) can crabmeat, drained & flaked
1/2 cup dry Italian breadcrumbs
1 tablespoon lemon juice
1/8 tablespoon crushed red pepper flakes
6 fish fillets (about 2 pounds total)
paprika, to taste

Steps:

  • Preheat the oven to 400°F; coat a 9x13-inch baking dish w/ non stick cooking spray.
  • In a large skillet melt 4 T butter over medium-high heat. Add celery, onion & parsley. Sauté until tender. Remove from heat and stir in crabmeat, bread crumbs, lemon juice and red pepper flakes.
  • Spoon crabmeat mixture evenly over the filets. Starting from the small end, roll up each fillet, jelly roll- style. Place the rolls seam side down in baking dish. Melt the remaining butter and drizzle over fillets. Sprinkle with paprika.
  • Bake for 20 -25 minutes, or until fish flakes easily with a fork.

2 fennel bulbs , halved and finely sliced
1 large onion , halved and finely sliced
3 tbsp extra virgin olive oil , plus extra for drizzling
2 lemons , 1 zested then juiced, 1 cut into wedges
200g couscous
pinch of saffron threads
250ml chicken or vegetable stock
2 larger or 4 smaller whole fish , cleaned and scaled (we used Anglesey sea bass)
small pack dill , finely chopped
2 tbsp toasted pine nuts
250g baby plum tomatoes , halved
1 tbsp currants

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the fennel and onion in a large roasting tin and toss with 2 tbsp oil, 1 tbsp lemon juice and plenty of seasoning. Roast for 20 mins until almost tender and starting to caramelise. Meanwhile, put the couscous in a medium bowl. Mix the saffron and hot stock, pour over the couscous and cover with cling film.
  • Rinse the fish with cold water inside and out, then pat dry. Slash deeply on both sides and season with salt, pepper and a pinch of the lemon zest. After 10 mins soaking, fluff up the couscous with a fork and add 2 tbsp lemon juice, the remaining zest, the dill, 1 tbsp pine nuts and seasoning to taste. Stuff the couscous into the cavity of each fish, reserving any leftover couscous for later.
  • Stir the tomatoes and currants into the tin. Sit the fish on top and roast for about 30 mins, depending on its size. Look for juices running from the slashes in the flesh. Tug gently on the back fin - if it comes away easily, the fish is cooked.
  • 4 Scatter with the rest of the pine nuts, then serve from the tin, with lemon wedges for squeezing over. Serve one stuffed fish per person, or if you have cooked large fish, gently lift the fillets from the top of the fish first, then turn over and repeat. Share out the couscous stuffing and leftover couscous.

Stuffing:
1 3-pound fish or 2 1-pound fish fillets
salt and pepper
1/4 cup melted butter
3 slices bacon (optional)
2 cups finely diced bread
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons minced onion
1 tablespoon minced parsley
1/4 cup melted butter
2 tablespoons dill pickle relish
1 tablespoon lemon juice
... toss all ingredients to mix well.

Steps:

  • Fish: Sprinkle fish with salt and pepper. Place whole fish or one fillet in greased baking dish. Place stuffing in fish or on top of fillet, covering with the other fillet. Fasten together with wooden picks or skewers. Brush with melted butter. Top with bacon slices, if desired. Bake at 350 degrees for 35 to 45 minutes until fish flakees easily when tested with a fork. Garnish with lemon wedges nd parsley. Yield: 6-8 servings
