1 cup Bob's Red Mill Steel Cut Oatmeal
2 cups almond milk
1 tablespoon maple syrup
1 tablespoon coconut oil (melted)
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1 teaspoon vanilla extract (optional)
1/2 cup mashed bananas + ¼ cup chocolate chips
1/2 cup strawberries + ½ cup blueberries
3/4 cup chopped apples + ¼ cup pecans

Steps:

  • Preheat oven to 375
  • Mix all ingredients together, it will look very soupy/wet.
  • Pour mixture into a greased 8x8 baking dish, make sure to spread the mixture around evenly so all of the oats/add ins don't get stuck in the center of the dish.
  • Bake for 35-45 mins.
  • When the oats come out of the oven, they'll still be slightly soupy, and it may look as if your spices have stuck on the top - it's ok! Let the oats cool for 5 minutes, and then gently stir together with a spoon.
  • The oats will not be set like a bar, they will be creamy and scoopable as if you cooked them on the stove.

1 cup rolled oats
¼ cup brown sugar
1 teaspoon ground cinnamon
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Core each apple making a large well in the center and arrange apples on a rimmed baking sheet.
  • Mix oats, brown sugar, and cinnamon together in a bowl; cut in butter until evenly combined. Spoon 1/4 of the oat mixture into each apple.
  • Bake in the preheated oven until apples are tender and filling is bubbling, about 30 minutes.

6 cups water
1-1/2 cups steel-cut oats
1-1/2 cups unsweetened applesauce
1/4 cup maple syrup
1-1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
1 large apple, chopped
Optional: Sliced apples, toasted pecans and additional maple syrup

Steps:

  • In a 4-qt. slow cooker, combine the first 7 ingredients. Cover and cook on low for 6-8 hours or until liquid is absorbed. Stir in chopped apple. If desired, top servings with apple slices, pecans and syrup.

1 cup water
½ cup steel-cut oats
¼ teaspoon salt
⅓ cup milk
1 egg
1 tablespoon maple syrup
½ cup chopped dried mixed fruit
¼ cup chopped mixed nuts
1 tablespoon canola oil
½ tablespoon ground cinnamon

Steps:

  • Combine water, oats, and salt in a saucepan and bring to a boil. Reduce heat to a low simmer and cook, stirring occasionally, to desired chewiness, 10 to 20 minutes. Drain cooked oats in a colander and place them into a bowl.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease an 8-inch pie pan.
  • Whisk milk, egg, and maple syrup together in a bowl until frothy. Stir egg mixture into oats. Fold in dried fruit, nuts, canola oil, and cinnamon until batter is combined and pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean and oatmeal has no liquid on top, 20 to 30 minutes. Let cool before cutting into bars.

1 c steel-cut oatmeal
2 c boiling water
1 1/2 tsp pumpkin pie spices
3 apples, peeled and diced
1/4 c brown sugar, packed
1/2 tsp salt
1 1/4 c fat-free milk
1/2 c sliced almonds
1/4 c golden raisins

Steps:

  • 1. Preheat oven to 375 degrees and spray an 8"x 8" pan with cooking spray.
  • 2. Put oats and raisins in a large mixing bowl and pour boiling water over them.
  • 3. Add apples, pumpkin pie spice, brown sugar, nuts, and salt -- stir until combined.
  • 4. Add milk and stir again.
  • 5. Pour into prepared dish and bake for 50-60 minutes or until browned and set. (Liquid is mostly incorporated/evaporated. Apples will be mostly on top.)
  • 6. Spoon out or cut portions to serve warm. Or cool and refrigerate. The oatmeal warms nicely in the microwave. I like to add a little milk before I warm it. Or freeze individual servings for a quick morning breakfast later.
