These baked quinoa patties make a perfect protein-packed finger food for toddlers; just break them into small pieces! Freeze extras and defrost when needed! Don't keep in the fridge for more than about 3 days.

3 cups water
1 cup quinoa
olive oil cooking spray
1 cup frozen chopped spinach, thawed and drained
1 cup dry bread crumbs
4 eggs, whisked
⅓ cup shredded Colby cheese

Steps:

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet with olive oil cooking spray.
  • Stir quinoa, spinach, bread crumbs, eggs, and Colby cheese together in a bowl. Drop spoonfuls of the quinoa mixture onto the prepared baking sheets and press to desired thickness.
  • Bake in the preheated oven until the bottoms of the patties are golden, about 15 minutes. Flip patties and bake until golden, about 5 minutes more.

2 1/2 cups cooked quinoa at room emp
5 large eggs, lightly beaedn
1/2 tspn salt
1/3 cup finely chopped fresh dill
1 cup finely chopped kale
1 yellow onion, finely chopped
3 cloves garlic, finely chopped
1 tspn toasted cumin
1 tspn baking powder
1 cup whole grain bread crumbs
water or bit of flour if needed
1/3 cup crumbled feta
1 Tbspn olive oil

Steps:

  • Preheat oven to 400 Combine the quinoa, eggs, and salt in a medium bowl. Stir in chives, dill, kale, onion, garlic, and cumin. Stir well. Add the baking powder and bread crumbs, stir, and let sit for a few minutes so the crumbs can absorb some of the moisture. Gently stir in the feta. At this point, you should have a mixture you can easily form into 12 1-inch thick paties. I err on the very moist side because it makes for a not-overly-dry patty, but your can add more bread crumbs, a bit at a tim, to firm up the mixture, if need be. Conversely, a bit more beaten egg or water can be used to moisten the mixure. If you're still having trouble getting the mixture to hold - mix in flour a couple Tblspns at a time. Oil a baking sheet, and arrange the patties with a bit of space between each. Bake for 20 min. or till bottoms are brown. Flip and bake for another 5 min.
