Sidle up to the table, split open a spud, and fill it with one of our four flavor combinations. Each topping combination is enough for four potatoes. If you've got a crowd to feed, bake more potatoes, and make more than one style of topping.

4 baking potatoes (8 ounces each), scrubbed
1 tablespoon olive oil
Coarse salt and ground pepper
Desired topping (below)
1 cup shredded Monterey Jack cheese
4 ounces cooked ham, diced
1 cup frozen peas, thawed
1 cup reduced-fat sour cream
4 ounces smoked salmon, torn into small pieces
2 to 3 scallions, thinly sliced
1 cup crumbled soft goat cheese (4 ounces)
1 cup canned black beans, rinsed and drained
1/2 cup store-bought salsa
1 cup part-skim ricotta cheese
4 ounces sliced pepperoni (1 cup)
1 package (10 ounces) frozen leaf spinach, thawed, squeezed dry, and roughly chopped

Steps:

  • Preheat oven to 400 degrees. Prick potatoes all over with a fork, and rub them with oil. Place potatoes on a rimmed baking sheet; bake until easily pierced with the tip of a paring knife, 50 to 60 minutes.
  • Cut a deep cross in each potato; push ends together to open. Season with salt and pepper; add desired toppings.

SLOW-COOKER BAKED POTATO BAR

Wrap potatoes in foil and slow cook for 7 hours then let the family garnish with their favorite toppings for a fun, hands-on family meal.

6 large russet potatoes
frozen broccoli cuts, cooked
Old El Paso™ Thick 'n Chunky salsa
Shredded Cheddar cheese
Sautéed mushrooms
Crumbled cooked bacon
Sour cream
Chili
Chopped fresh chives

Steps:

  • Wash potatoes; pierce each potato a couple times with fork. Wrap each potato in sheet of foil. Place in slow cooker.
  • Cover; cook on Low heat setting 7 to 8 hours. (If you have smaller potatoes, aim for 7 hours; for super large potatoes, aim for 8 hours.)
  • After potatoes are done, have fun topping your baked potatoes with a variety of toppings.

One Recipe, Two Meals: An Easy Baked Potato Bar image

I wanted to make baked potatoes that would make my toddlers giddy and satisfy adult appetites at the same time. For the kids, it's russet potatoes with mounds of sour cream, shredded Cheddar and broccoli florets. For the grown-ups, it's sweet potatoes with blue cheese, bacon and garlic chips that are crisped up in the bacon fat.

2 russet potatoes
2 sweet potatoes
1/2 cup sour cream
1/2 to 3/4 cup shredded Cheddar
1 cup frozen broccoli florets, boiled and drained
1/3 cup crumbled blue cheese
2 strips bacon, rendered until crispy and broken into pieces
4 cloves garlic, thinly sliced and sauteed in the bacon fat until golden brown
2 scallions, thinly sliced
1/4 cup thinly sliced red onion

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the potatoes on a baking sheet and bake until tender and cooked through, about 1 hour 15 minutes. Slice the tops open and slightly push the potatoes in, prepping them for the innards. (I like the word innards.)
  • For the kids' potatoes, give each russet potato a good dollop of sour cream, a sprinkling of Cheddar and a few broccoli florets. Done.
  • For the adults' potatoes, fill each sweet potato with crumbled blue cheese, bacon crumbles, garlic chips, scallions and red onion. Done.

Here's an easy idea for an after-work party on a Friday night! Cook the potatoes all day in the slow cooker. When you get home, put out additional hearty toppings, like drained and rinsed canned beans, edamame or chopped flavored tofu or tempeh. TGIF!

12 unpeeled russet potatoes (6 to 8 oz each)
2 tablespoons olive or vegetable oil
1 1/2 teaspoons salt
1 teaspoon coarse black pepper
1 cup sour cream
1/4 cup bacon flavor bits
1 1/2 cups shredded cheese (6 oz)
4 medium green onions, sliced (1/4 cup)

Steps:

  • Pierce potatoes with fork. In large plastic food-storage bag, place potatoes and oil; toss to coat potatoes with oil. Sprinkle with salt and pepper. Wrap potatoes individually in foil. In 5- to 6-quart slow cooker, place wrapped potatoes.
  • Cover; cook on Low heat setting 6 to 8 hours.
  • Serve potatoes with remaining ingredients as toppings. Potatoes will hold on Low heat setting up to 2 hours.

4 teaspoons olive oil
1 teaspoon salt

chopped green onion

ranch dressing or ranch dip
sour cream
shredded cheese
crumbled blue cheese
crumbled crisp bacon
salsa
diced avocado
diced tomatoes

Steps:
