Orange is the new black. Cauliflower is the new kale. I was not previously a cauliflower fan but I've crossed over with this delicious recipe that's great for Thanksgiving!

nonstick cooking spray
¾ cup grated Parmesan cheese
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon garlic powder
kosher salt and freshly ground black pepper to taste
1 head cauliflower, chopped into bite-size pieces
2 tablespoons olive oil
2 tablespoons chopped fresh parsley leaves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a cooling rack with nonstick cooking spray; place on a baking sheet and set aside.
  • Combine Parmesan cheese, thyme, oregano, basil, garlic powder, salt, and pepper in a small bowl.
  • Place cauliflower onto the prepared cooling rack. Drizzle with olive oil and sprinkle with Parmesan cheese mixture.
  • Bake in the preheated oven until tender and easily pierced with a knife, about 15 minutes. Remove from the oven.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil in the preheated oven until cauliflower is golden brown, 2 to 3 minutes. Remove from the oven, garnish with parsley, and serve immediately.

Here's a twist on cauliflower even your kids will like. These golden, crunchy Parmesan cauliflower bites just melt in your mouth.

cooking spray
1 cup mayonnaise
1 medium head cauliflower, cut into bite-sized florets
1 cup seasoned bread crumbs
¼ cup grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a baking sheet with cooking spray.
  • Place mayonnaise in a large zip-top bag. Add cauliflower; seal bag and shake to coat.
  • Combine bread crumbs and Parmesan cheese in another large zip-top bag. Add 1/2 of the coated cauliflower; seal bag and shake to coat. Spread in a single layer on the prepared baking sheet. Repeat with remaining cauliflower and bread crumb mixture.
  • Bake in the preheated until tender and golden brown, about 35 minutes.

3-4 cups cauliflower florets
1/2 cup flour
1 teaspoon garlic powder
2 eggs, beaten
1/2 cup grated parmesan cheese (or switch / combine with another salty cheese)
1 cup panko crumbs
2 tablespoons olive oil (or use olive oil spray if you have it)
salt & pepper to taste
Optional
1/4 teaspoon cayenne pepper

Steps:

  • 1. Cook cauliflower until just crisp-tender. Stovetop steaming takes about 6-8 minutes, or cook it in the microwave for about 4 minutes. Allow cauliflower to cool until it's safe to touch. 2. Preheat oven to 450°f. 3. Combine flour, garlic powder and cayenne pepper. Coat the cauliflower in this dry mixture by sifting it over a layer of florets flipping them and coating the other side. 4. Combine the panko crumbs and the shredded cheese and pour it onto a tray or dish. Dip the floured cauliflower florets in the mixed egg, then dredge them in the panko/cheese mix, pressing them so that the crumbs stick. 5. Arrange the florets in a single layer on a tinfoil lined baking sheet, then drizzle or spray them with olive oil. Bake in preheated oven for 5-10 minutes until they start to brown up.

1 head cauliflower
2 eggs, beaten
2 tablespoons water
1 (5 ounce) bag parmesan-romano cheese mix, shredded
1 1/2 teaspoons paprika
1 dash kosher salt

Steps:

  • Preheat your oven to 325 degrees Fahrenheit.
  • Line a large jelly roll sheet with foil; lightly spray with olive oil or "Pam" cooking spray.
  • Trim leaves and stem off cauliflower; slice down middle.
  • Take each half and half again; cut each "quarter" into slices about 2.5 inches thick. Some florets will break away; that is fine; we will use them ALL. :).
  • Beat eggs and water in a bowl.
  • Mix the cheese and paprika together in another bowl.
  • Dredge each piece of cauliflower in the egg first then the cheese.
  • Line cauliflower pieces up on the prepared pan.
  • Lightly sprinkle some Kosher salt over all.
  • Bake in the oven for 40 minutes.
  • THAT'S IT! They'll be fighting over it {and it's good for them} HA!
