Steps:
- Preheat oven to 350 degrees. Spread 3/4 cup of the spaghetti sauce on bottom of 13x9-inch baking dish. Mix egg, cheeses, and pesto sauce until well blended. Spoon cheese mixture into large resealable plastic bag. Using scissors, cut off small hole from one of the bottom corners of bag.
- Cook manicotti shells for half of the time on the box. This will keep them firm enough to handle and not fall apart when stuffing. The additional cook time in the oven will cook them the rest of the way. After you remove the partially cooked manicotti from the stove, transfer them into a container of cold water. This will prevent them from continuing to cook
- Fill manicotti shells, 1 at a time, squeezing cheese mixture into both sides of each shell. Place manicotti over sauce in dish; pour remaining 1 1/4 cups spaghetti sauce over manicotti. Cover with foil.
- Bake 40 minutes or until heat through.

- Make sauce: In hot oil in 5-quart Dutch oven, saute onion and garlic 5 minutes. Mix in rest of sauce ingredients and 1-1/2 cups water, mashing tomatoes with fork. Bring to boiling, and reduce heat. Simmer mixture, covered and stirring occasionally, 1 hour.
- Make Manicotti: In medium bowl, combine 6 eggs, the flour, 1/4 teaspoon salt, and 1-1/2 cups water; with electric mixer, beat just until smooth. Let stand 1/2 hour or longer. Slowly heat an 8-inch skillet. Pour in 3 tablespoons batter, rotating the skillet quickly to spread batter evenly over bottom.
- Cook over medium heat until top is dry but bottom is not brown. Turn out on a wire rack to cool. Continue cooking until all of the batter is used. As the manicotti cool, stack them with waxed paper between them.
- Preheat oven to 350 degrees. Make Filling: In large bowl, combine ricotta, mozzarella, 1/3 cup parmesan, the eggs, salt, pepper, and parsley; beat with wooden spoon to blend well. Spread about 1/4 cup filling down the center of each manicotti, and roll up.
- Spoon 1-1/2 cups sauce into each of two 12-by-8-by-2-inch baking dishes. Place eight rolled manicotti seam side down, in single layer; top with five more. Cover with 1 cup sauce; sprinkle with Parmesan. Bake, uncovered, 1/2 hour, or until bubbly.
- To Freeze: Line baking dish with large piece of foil; assemble as directed. Fold foil over to seal, and freeze in dish. When frozen, remove dish.
- To serve: Unwrap; place in baking dish, and let stand 1 hour to thaw. Bake, uncovered, 1 hour in 350 degree oven.
- *If not using a skillet with a non-stick surface, brush skillet lightly with butter for each manicotti.
BAKED MANICOTTI WITH MEAT SAUCE
I think this originally came in Women's Day magazine, back when they had a skinny 6 or 8 page cookbook, in a strip, in the center of the magazine. I started making this as a newly wed, and it is still a family favorite. I usually double the recipe and freeze at least 1/2 of the stuffed noodles, since that is the most time consuming part. Serve with a sald and garlic bread, and a good bottle of red wine !

- Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Spray a 9-by-13-by-2-inch glass baking dish with vegetable oil cooking spray. Set aside.
- For the fonduta sauce: In a medium heavy-bottomed saucepan, bring the milk and cream to a simmer over medium heat. Reduce the heat to low. Add the Pecorino Romano and whisk until the cheese is melted and the sauce is smooth. Remove the pan from the heat and stir in the basil. Set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sausage, shallots, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Cook until the sausage is cooked through and the vegetables have softened, 8 to 10 minutes. Using a wooden spoon, break the sausage into 1/2-inch pieces. Increase the heat to high. Add the wine and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Cook until the wine has evaporated, about 2 minutes. Remove the pan from the heat and set aside to cool slightly. Add the peas, ricotta, and 1 cup of the fonduta sauce. Season with remaining 1/2 teaspoon kosher salt and 1/4 teaspoon pepper.

- Combine 9 eggs, water, and all-purpose flour in a large bowl. Blend with an electric mixer until batter is completely smooth. Let batter rest for 30 minutes.
- Heat an 8-inch skillet over medium-high heat; brush with some butter. Pour 2 1/2 tablespoons of the batter into the pan, swirling to coat the bottom. Cook until the top is dry to the touch and bottom is still pale, about 30 seconds. Transfer crepe to a plate. Repeat with remaining batter.

- Preheat oven to 425 degrees.
- Bring a large pot of salted water to a boil. Add manicotti and cook, according to package directions, until al dente. Drain, reserving pasta cooking water; rinse with cold water and drain again. Set aside.
- Bring pasta cooking water to a boil and add spinach; cook until just wilted. Drain, rinse with cold water, and drain again. Squeeze out excess water from spinach and finely chop.
- Transfer spinach to a large bowl along with ricotta, half of the Parmesan, egg yolks, and nutmeg; season with salt and pepper and stir to combine. Stuff spinach mixture into manicotti and set aside.
- Melt butter in a medium saucepan over medium-high heat. Add flour and stir until well combined. Gradually stir in milk; continue cooking, stirring constantly, until mixture is smooth and thickened.
- Evenly spread tomato sauce on the bottom of a small rectangular baking dish. Top with an even layer of stuffed manicotti. Pour butter mixture over manicotti and sprinkle with remaining cheese. BAKED MANICOTTI
Found this one on Allrecipes.com and tweaked the ingredients just a bit to fit the picky Italian DH. Ground sausage as opposed to ground beef gives the dish much more flavor. Do ahead tip would be to stuff the shells the night before, place in red sauce, refrigerate, and then make the white sauce just prior to cooking. Watch the amount of chicken bouillon as it can make the white sauce way too salty. Serve with some garlic stuffed/sauteed artichokes (Recipe #61210) and a small garden salad.

- Saute onions, garlic, ground sausage, and beef until meat is well browned and crumbled.
- Prepare Manicotti shells as per package directions except cut the cook time in HALF.

- To the ground pork/beef mixture add the spinach and ricotta cheese.

- Carefully pour or ladle spaghetti sauce over the white sauce, trying to layer the sauces without mixing.

BAKED MANICOTTI (BOLOGNESE RAGU)
This filling is very flavorful and a sauce that's delicious, yet subtle enough to compliment the pasta without stealing the show. The recipe will allow for extra sauce in case you wish to serve non-stuffed pasta as well. Or it makes terrific leftovers.

- I suggest making the filling a few hours ahead of time to allow the flavors of cheese, garlic and herbs to fully meld.
- Beat the eggs and combine them with the Ricotta.
- Fold in the grated cheese, basil, parsley and Prosciutto until all is well combined.
- Cover with plastic wrap and keep in fridge until ready to use.
- Using lasagna noodle (if packaged cook to al dente) add enough stuffing on one end and roll up jelly roll style.
- Lay into baking pan that has been greased or coated with cooking spray.
- I use a 9x14" pan which perfectly holds 12 manicotti: 8 down the center and two on each side.
- Spoon the Ragu over the pasta until completely covered.
- Bake in the oven, uncovered, for 35 minutes.
- Remove and top with the mozzarella.
- Return to the over for an additional 10 minutes to allow the cheese to completely melt.
- Let stand for about 5 minutes.
- Serve with additional sauce on the side.
- For the Bolognese Ragu (Italian Meat Sauce) You want to use a heavy pot or sauté pan for this, something that holds the heat well.
- This will give you better control when you need to have the sauce just barely simmering.
- Melt the butter in the sauté pan over medium heat.
- Add the next 4 ingredients and sauté until the veggies are softened, about 5 minutes.
- Add the ground beef and pork.
- Cook the meat while using the edge of the spoon to break up the meat into small pieces.
- Just before the meat begins to brown add the milk.
- Return the mixture to a slow boil and allow to reduce until the milk has mostly evaporated.
- About 20 to 30 minutes.
- Add the wine, return to a boil and allow the sauce to reduce until the wine is mostly evaporated, another 20 to 30 minutes.
- While the sauce is reducing drain and chop the tomatoes, reserving the juice.
- When the wine has mostly evaporated add the tomatoes, along with the reserved juice, and the red pepper.
- Now you want to reduce the flame until the sauce is barely at a simmer- only a bubble or two at a time breaking the surface.
- Maintain this simmer, stirring every 30 minutes or so, until the liquid is mostly evaporated.
- This should take about 3 to 4 hours.
- Adjust salt and pepper to taste.
- The long, slow simmering gives the meat a melt-in-your mouth quality.
- Don't be daunted by the cooking time, as it only requires you be around to give it a stir from time-to-time.

CHICKEN BAKED RICOTTA MANICOTTI
A baked pasta dish that will leave you craving more. Its cheesy thick and delicious. Sometimes I use light or fat free ricotta and cottage cheese then sub butter milk for the cream to make it less rich.

- Cut chicken into small cubes.
- Chop garlic very fine.
- Cook chicken and garlic with olive oil and garlic salt. When done set aside.
- Preheat oven to 325°F.
- Boil water and cook manicotti according to box directions.
- Mix ricotta,cottage cheese, 1/2 cup parmesan mix and salt to taste.
- Add cooked chicken.
- Take manicotti pasta and stuff with mixture.
- Set in non-stick bake pan in rows (it should fill bottom of pan).
- If there is any stuffing left over, layer it on top.
- Pour heavy cream over until all is covered (do not have to use all of it). Then top with cheese and remaining parmesan mix cheese and bake for 25 minutes then raise heat to 375°F for 8-15 more minutes depending on how brown and bubbly you like the top.
- Enjoy with garlic bread, salad or your favorite side items.

- Preheat oven to 375 degrees.
- Sauce: Coarsely chop tomatoes in a blender or food processor to make 1/4 inch chunks. You may have to do this in several batches to make the pieces relatively uniform.
- In a large saucepan, heat the oil, garlic, and pepper flakes in large saucepan over medium heat until garlic is just barely starting to brown (1-2 minutes). Add tomatoes and salt; cook until sauce thickens slightly (about 15 minutes). Add basil and salt.
- Filling: Combine ricotta, 1 cup parmesan, mozzarella, eggs, salt, pepper, and herbs. Set aside.
- Assembly: Cook noodles until just pliable. Place in single layer on clean kitchen towels. Pour about 1 1/2 cups of sauce in the bottom of 9" x 13" baking dish; spread evenly. Place 1 slice of prosciutto on each noodle. Spread 1/4 cup cheese mixture onto bottom 3/4 of each noodle on top of prosciutto, leaving top 1/4 of noodle uncovered. Starting from the end with cheese, roll into the noodle into a tube shape and arrange in baking dish seam side down. Top evenly with remaining sauce, covering each noodle completely.
- Cover the dish with aluminum foil. Bake on the middle rack until the sauce bubbles (about 40 minutes).
- Remove manicotti from the oven and adjust the oven rack to the highest position. It should be about 6 inches from the heating element. Sprinkle remaining 1 cup parmesan cheese evenly over the manicotti. Do not replace the foil. Broil until cheese starts to brown. Cool 15-20 minutes before serving to allow the manicotti to set.

DIANA'S BAKED MANICOTTI AND CHEESE WITH SPINACH

- Combine filling ingredients in large bowl; beat with wooden spoon to blend well. Fill shells or manicotti pasta. Follow box directions after filling pasta. And sprinkle with remaining Parmesan. Bake 1/2 hour @ 350 or until bubbly; I advise foil cover , it helps to not evaporate all the yummy sauce. To freeze: Line baking dish with large piece of foil; assemble as directed. Fold over foil to seal and freeze in dish. When frozen remove dish. To serve: Unwrap, place in baking dish, and let stand 1 hour to thaw. Bake, covered, 1 hr in 350F oven.
BAKED MANICOTTI

- Directions Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Spray a 9-by-13-by-2-inch glass baking dish with vegetable oil cooking spray. Set aside. For the fonduta sauce: In a medium heavy-bottomed saucepan, bring the milk and cream to a simmer over medium heat. Reduce the heat to low. Add the Pecorino Romano and whisk until the cheese is melted and the sauce is smooth. Remove the pan from the heat and stir in the basil. Set aside. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sausage, shallots, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Cook until the sausage is cooked through and the vegetables have softened, 8 to 10 minutes, adding the mushrooms midway thru. Using a wooden spoon, break the sausage into 1/2-inch pieces. Increase the heat to high. Add the wine and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Cook until the wine has evaporated, about 2 minutes. Remove the pan from the heat and set aside to cool slightly. Add the peas, ricotta, and 1 cup of the fonduta sauce. Season with remaining 1/2 teaspoon kosher salt and 1/4 teaspoon pepper. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just tender, 7 to 8 minutes. Drain and set aside. Spread half of the marinara sauce over the bottom of the prepared baking dish. Using a small spoon, fill the manicotti shells with the sausage filling and arrange in a single layer in the baking dish. Pour the remaining marinara sauce on top of the filled shells. Spoon the remaining fonduta sauce on top and sprinkle with the mozzarella. Drizzle with olive oil and bake until bubbly and golden brown, 30 to 35 minutes.
STUFFED AND BAKED ITALIAN MANICOTTI
This recipe is inspired by a dish called "Malfatti" in Napa, California. If you have spent any time there you know about carrying your serving dish down to the back door of the Depot. (sadly, now closed). There you would wait in the back room of the kitchen for a few dozen Malfatti served in the best marinara sauce. Such a treat! We never considered Malfatti a mistake, and neither was this recipe. It isn't really much like Malfatti, but we can't help but be reminded of it by the flavor here! MMMMhhh!

- Brown the ground round and lightly rinse with hot water. Set aside. Brown the mild Italian Sausage and rinse in the same way.
- Place both meats into a food processor and process until fine and uniform.
- Take 1/3 of the meat mixture and place into the crockpot. Add all of the ingredients except for the ricotta, 1 tsp of Italian seasonings and 1 teaspoon of tarragon to the meat in the Crockpot. Cook on low for 8 to 10 hours. Stirring occasionally. Salt to taste.
- Take the remaining 2/3 of the meat mixture and mix the 12 oz to 16 oz of ricotta, 1 teaspoons of Italian seasonings and 1 teaspoons tarragon. Mix well. Place into the fridge until sauce is nearly done.
- When sauce is nearly finished and when preparing to assemble:.
- Remove meat and ricotta mixture from refrigerator and let stand for 15 minutes, stir and place into a zip lock bag. Work meat and ricotta until nearly room temperature.
- Bring appropriate amount of water to a boil and cook manicotti to product specs. but just until the pasta is uniformly softened, but not completely cooked. If over cooked the shells will tear when trying to stuff. Put about 1/2 " of sauce into the bottom of a 9" x 13" casserole dish.
- Then snip a bottom corner from the bag with meat mixture, approximately 1/2 " in diameter.
- Preheat oven to 350°F.
- Place the snipped end of the bag into one end of a cooked manicotti shell and squeeze the mixture into the shell until it is full but not splitting. If it splits just place split side down into pan and go on to the next. It takes some time to make this a technique.
- Place the cooked Manicotti staggered into the dish.
- Cover with more of the sauce to your liking.
- Cover with the Parmesan or save the Parmesan until serving and use as a garnish.
- Bake for 30 minutes.
- Serve with a green salad and sour dough bread, topped with butter and minced garlic and broiled .

- 1. Prepare shells by boiling in water. You want them to be mostly done, but still firm enough to handle for stuffing. I usually have a couple that split open on me, but there are still enough to fill a 9x12 casserole dish.
- 2. Brown your meat, draining grease off. Add to this the cottage cheese and 1 cup shredded mozzarella cheese.
- 3. Spray your casserole dish with PAM. Stuff the shells with meat filling mixture and place in dish side by side filling up the entire dish. Spread any leftover filling over the top of the filled shells and sprinkle the remaining cup of shredded cheese on top.
- 4. Bake at 350 for approximately 30-40 minutes.
