6 Italian sausages
800 g kipfler potatoes, scrubbed and sliced
1 1/2 teaspoons paprika
1 rosemary sprig
4 garlic cloves, unpeeled
sea salt, to taste
fresh ground black pepper, to taste
2 slices ciabatta
50 ml extra virgin olive oil
flat leaf parsley

Steps:

  • Preheat the oven to 200°C.
  • Slice the sausages into 4cm pieces and place in a large roasting pan.
  • Add the potatoes, paprika, rosemary, garlic cloves, sea salt and pepper.
  • Tear the ciabatta into bite size pieces and add to the roasting tray.
  • Drizzle over the oil and gently toss to combine.
  • Place in the oven and cook, stirring occasionally, for 30-40 minutes or until the potatoes are tender and the sausages and bread are golden brown.
  • Top with continental parsley and serve with a green salad.

I'm always on the lookout for new ways to twice-bake potatoes...I thought I'd found an 'Italian' twice-baked potato recipe, but it seemed incomplete...As a result I came up with my own take on what an Italian twice baked potato might be like and this recipe is the result...Add a green salad or minestrone soup with a tiramisu for dessert and you'll have one heckuva meal! Please note that you may make this recipe heart healthier by substituting the low fat or low sodium versions of some of the ingredients, with little difference in taste or texture...See the end of the recipe for OAMC instructions...

6 large russet potatoes
3/4 cup unsalted butter, melted
1 medium green pepper, chopped
1 medium onion, chopped
1 tablespoon garlic, minced
1 teaspoon pepper
1 (15 ounce) container part-skim ricotta cheese
1/4 cup parmesan cheese, grated (Kraft Reduced Fat if available)
1 (26 ounce) can spaghetti sauce (Hunt's Italian Sausage version)
1 (8 ounce) package part-skim mozzarella cheese, finely shredded

Steps:

  • Preheat oven to 400°F (204°C); scrub the dirt from the potatoes under cool running water.
  • Place the potatoes directly on the rack in the middle of the preheated oven and bake for 55 minutes.
  • Remove the potatoes but keep oven turned on; slice 1 inch of the top off of each potato and using a small spoon scoop out pulp into a large bowl, leaving a 1/4 inch thick shell.
  • Mash the potatoes with the butter, ricotta, parmesan, garlic and pepper; add the green pepper and onion, mixing well.
  • Spoon into potato shells, place stuffed potatoes on a baking sheet and return to the middle rack in the hot oven.
  • Bake for 20 minutes; then spoon some spaghetti sauce on top of the potatoes (you decide how much); then sprinkle some of the shredded cheese over the sauce (you decide how much).
  • Return once more to the oven for 10 minutes or until the cheese is melted; Serve immediately.
  • For OAMC: Prepare potatoes up until you've got them re-stuffed; place on baking sheet and flash-freeze.
  • Once frozen, double wrap each stuffed potato in plastic wrap, then foil and place into a freezer storage bag until wanted for a meal.
  • 24 hours before you wish to serve them, remove them from the freezer, completely unwrap them, place them on a baking sheet and thaw in your fridge.
  • Preheat oven to 400°F (204°C); heat on baking sheet in hot oven for 20 minutes; then spoon some spaghetti sauce on top of the potatoes (you decide how much); then sprinkle some of the shredded cheese over the sauce (you decide how much).
  • Return once more to the oven for 10 minutes or until the cheese is melted; Serve immediately.

These potatoes are very tasty. The ranch dressing makes them unique and creamy. My mom sent me this recipe from her recipe box and my family loves them. It is our favorite side dish!

4 russet potatoes
2 tablespoons butter
1 chopped shallots or 1/4 cup chopped onion
1/2 cup ranch dressing (more if desired-Hidden Valley is best)
1/2 cup milk (more if desired)
1 teaspoon garlic salt
3 teaspoons dried basil
1 cup parmesan cheese
1/2 cup vegetable oil

Steps:

  • Preheat oven to 425°F.
  • Microwave pierced potatoes for 12 minutes on high; let cool until manageable.
  • Cut skin off of potato tops and scoop out pulp into a medium bowl, being sure to keep skins intact, and keep skins about 1/4-inch thick.
  • Heat skillet over medium heat, melt butter, and sauté shallot until slightly caramelized.
  • Add the butter/ shallot mixture into potato pulp and mash potatoes very well.
  • Add ranch, milk, garlic salt, and 1 1/2 teaspoons of the basil; mix very well, adding more milk or ranch until your desired taste and consistancy.
  • Re-Stuff the empty potato skins with the mashed potatoes and top off each potato with the parmesan cheese and the remaining basil.
  • Carefully brush outer potato skins with vegetable oil.
  • Place on greased, or non-stick baking sheet or pan.
  • Bake in oven until heated through and cheese is melted, about 15 minutes.

4 or more thick cut pork chops
4 or more italian sweet sausaage
2 large cleaned baking potatoes
2 large cleaned sweet potatoes
1 large vidalia onion chopped
1 cup italian seasoned bread crumbs
extra virgin olive oil
1 cup grated pecorino/romano cheese

Steps:

  • 1. I am using 1 thick cut pork chop per person and 2 sausage links per person, so you can portion size this dish according to how many your feeding. Could be 6 or 8, size pan accordingly.
  • 2. POTATOES FIRST: With skins on, clean and boil until fork tender all your potatoes, set aside and cool. When cooled and remove skins and cut into wedges, set aside.
  • 3. PORK CHOPS AND SAUSAGE: Pan should be the size needed to hold all chops,sausage and potato wedges. Put in the bottom of the pan just a sprinkle of olive oil and 3/4 cup of water. Place your pork chops, sausage and potato wedges on top of olive oiland water for all to fit. Sprinkle with just a little grated cheese.
  • 4. TOPPING: Chop vidalia onion, add grated cheese, Italian seasoned bread crumbs and mix together. Sprinkle all of this all over the chops, sausage and potato wedges. Sprinkle with a little more olive oil and BAKE 350 for 1 hour until pork chops are done, check that they are done and sausage is done according to your ovens heat. You can loosly cover with alum. foil first 1/2 hr. then uncover the rest of the time. Enjoy...

1 1/2 kg potatoes, peeled (2-3 pounds)
3 tablespoons olive oil
1 teaspoon dried rosemary
2 tablespoons rosemary, fresh minced
2 teaspoons paprika
1 teaspoon salt (or to taste)
1/4 teaspoon pepper

Steps:

  • Preheat the oven at 425°F/220°C.
  • Cut your potatoes in ¼ inch slices.
  • In a big bowl combine all the ingredients and coat potatoes well.
  • Prepare your baking mold with foil and line the potatoes on it.
  • Bake 45 minutes at 425°F/220°C C or until golden roasted.

Almost all my recipes are carried on through the family from the first generation of our family who arrived on these shores in 1905. Most are simple to make and filling for the tummy especially with 9 children to feed.

2 pound(s) fresh not smoked sausage (i use mix of hot and sweet italian)
3 pound(s) baking potatoes
1 large onion
2 large cloves of minced garlic
1 bunch(es) or to taste..fresh or dry rosemary
3 large bell peppers (i mix up colors)
- olive oil

Steps:

  • I prefer to parboil the potatoes after scrubbing well. Then cut into chunks...not too small While potatoes are boiling, cut sausage into pieces. My preference is about one inch or so.
  • Add coating of olive oil and minced garlic to large baking pan, add potatoes and rosemary and toss in pan to lightly cover potatoes. Add sausage chunks and again toss to make sure the meat is also lightly covered with the rosemary.
  • Bake in 425 degree oven, in about a half hour turn the potatoes and sausage for even browning. At this time add the peppers and onions to the mix and toss in with meat and potatoes. Potatoes should be crisp and golden but not overdone. Sausage obviously should be well-cooked but not overdone. Adding the onions and peppers later keeps them from overcooking.
  • Serve with salad and fresh bread and you have a filling and delicious meal. PS, on a personal note...I don't find it as good the next day. This is just a simple meal that you can adjust with your own preference in sausage as well as veggies but this is our family version.

1/2 cup baby portabella mushrooms, sliced
2 tablespoons scallions, finely chopped
3 garlic cloves
1/2 teaspoon dried oregano
1/2 cup tomato sauce
2 potatoes, baked
1/3 cup mozzarella cheese, shredded
parmesan cheese, grated, to taste
1/4 teaspoon fresh parsley, finely chopped

Steps:

  • Bake potatoes in oven or microwave.
  • Preheat oven to 450 degrees.
  • Heat oil in small sauce pan. Add mushrooms, scallions, garlic, and oregano. Cook over med-high heat for about 3 minutes.
  • Add tomato sauce to mushroom mixture. Cook, stirring frequently, for another 3 minutes.
  • Split and fluff the baked potatoes.
  • Spoon tomato sauce over each of the potatoes and top with mozzarella cheese. Add a little Parmesan cheese if you'd like.
  • Place on baking sheet and bake at 450 degrees Fahrenheit for 5-8 minutes (until cheese is melted). Garnish with fresh parsley.

1/2 lb ground italian sausage, any flavor
1 medium onion, finely chopped
1 lb red potatoes,sliced thin, about 5 or 6
1/2 c vegetable stock
1 1/2 tsp roasted garlic and herb seasoning
1/2 tsp each black pepper and oregano
1 c tomato sauce
1 c shredded mozzarella cheese

Steps:

  • 1. Heat oven to 400^ Heat a large Cast Iron skillet then add the sausage; cook and scramble until brown. Remove sausage with a slotted spoon to paper towel lined plate to drain; set aside. To the same skillet add the onion and cook until soft. Add the potatoes. Cook and stir gently about 2 to 3 minutes.
  • 2. Mix the vegetable stock, seasoning, pepper, oregano, tomato sauce and sausage in a large bowl..Stir to combine. Pour this mixture over the potatoes in the skillet. Bring to a boil, then cover. Place in the pre-heated oven for 25 to 30 minutes .Until potatoes are tender.
  • 3. Uncover skillet and stir gently. Sprinkle with the cheese.. and return to oven. Bake 1 minute longer or until cheese is melted and potatoes are browned a little. Let cool 10 minutes before serving.

400 g Italian tomatoes
2 cups mozzarella cheese, grated
2 teaspoons dried basil
1/2 cup parmesan cheese, grated
6 tablespoons olive oil
1/4 cup soft breadcrumbs

Steps:

  • Cook potatoes in boiling salted water for 10 mins, drain well. Cool and then cut into 1cm slices.
  • Arrange a layer of potatoes over the base of a greased shallow ovenproof dish.
  • Pour over half the tomatoes, sprinkle with half the mozzarella and parmesan and 1 tsp of the basil then sprinkle with 2 tblsp oil.
  • Repeat the layers and sprinkle with breadcrumbs and remaining oil.
  • Bake at 190.C for 30 mins or until the potatoes are cooked and the top golden brown.
