One-Pan Baked Halibut Recipe with Vegetables image

You'll love this simple baked halibut recipe with colorful vegetables tossed in a citrus and olive oil sauce! Perfect for busy weeknights because it comes together in 20 minutes or less. If you can't find halibut, another white fish like cod, haddock, or red snapper would work well. This sheet pan dinner is a filling meal in one, but if you want to make the most of the zesty Mediterranean-style sauce, serve the halibut and veggies over a bed of barley or bulgur.

Zest of 2 lemons
Juice of 2 lemons
1 cup extra virgin olive oil
1 1/2 tablespoon freshly minced garlic
2 teaspoon dill weed
1 teaspoon seasoned salt, (more for later)
1/2 teaspoon ground black pepper
1 teaspoon dried oregano
1/2 to 3/4 teaspoon ground coriander
1 pound fresh green beans
1 pound cherry tomatoes
1 large yellow onion, (sliced into half moons)
1 1/2 pound halibut fillet, (slice into 1 1/2-inch pieces)

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large mixing bowl, whisk the sauce ingredients together. Add the green beans, tomatoes, and onions and toss to coat with the sauce. With a large slotted spoon or spatula, transfer the vegetables to a large baking sheet (21 x 15 x 1 inch baking sheet, for example). Keep the vegetables to one side or one half of the baking sheet and make sure they are spread out in one layer.
  • Now, add the halibut fillet strips to the remaining sauce, toss to coat. Transfer the halibut fillet to the baking sheet next to the vegetables and pour any remaining sauce on top.
  • Lightly sprinkle the halibut and vegetables with a little more seasoned salt.
  • Bake in 425 degrees F heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broil for another 3 minutes or so, watching carefully. The cherry tomatoes should begin to pop under the broiler.
  • When ready, remove the baked halibut and vegetables from the oven. Serve immediately.

3 tablespoons vegetable oil
1 cup thinly sliced yellow onion
3 cloves garlic, thinly sliced
2 cups diced tomato
1 medium jalapeno, diced
1 cup dry white wine
2 tablespoons butter
4 (8-ounce) halibut fillets
1 teaspoon kosher salt
1/2 cup Spanish olives, cut into thin rounds, plus 2 tablespoons olive juice from bottle
2 medium avocados, peeled and sliced
2 tablespoons fresh lime juice
2 tablespoons freshly chopped cilantro leaves

Steps:

  • Preheat oven to 350 degrees F.
  • Heat oil in a medium skillet over medium heat. Add onion and garlic, and cook until lightly colored, about 3 minutes. Add tomato, jalapeno and white wine. Cook until wine is reduced by 2/3, about 5 to 7 minutes. While sauce is reducing, heat butter in a separate skillet over medium heat. Season fish with kosher salt. When butter is melted, add halibut to the pan. Cook for 2 minutes, flip over and then transfer pan to preheated oven and bake until cooked through, about 10 minutes. Remove sauce from heat when reduced and stir in olives and olive juice.
  • To serve, divide sauce equally among 4 dinner plates. Place halibut (first caramelized side up) in the center of each plate on top of the sauce. Place avocado slices on top of fish, sprinkle with lime juice and cilantro, as garnish.

This was a recipe that was given to my mother when we lived in Alaska. We caught our own fresh halibut and combined mayo and jalapenos to make a tasty dish.

4 halibut fillets
1/4 cup mayonnaise (or more if you like)
1/2 cup jalapeno (or more if you like)
2 cups monterey jack cheese
jalapeno juice, small amount

Steps:

  • Place halibut filets in a glass baking dish.
  • Spread mayonnaise evenly over halibut.
  • Sprinkle Monterey Jack Cheese over halibut.
  • Add jalapenos and pour a small amount of juice from jar to coat halibut.
  • Bake in oven at 350 degrees until halibut is done.

My good friend brought this amazing halibut dip to a potluck at work. This is a warm dip, both in the sense that it is baked in the oven and that it contains jalapenos. What better combination that halibut and jalapenos? Along with the addition of cheese, sour cream and mayonnaise, what is NOT to like? Thank you Cory for sharing your sister's recipe.

1 pound(s) cooked halibut, cut up or shredded
3 tablespoon(s) butter
4 clove(s) garlic, minced
1 cup(s) mayonnaise
1 cup(s) sour cream
1 cup(s) parmesan cheese, shredded
1 tablespoon(s) dill (dried or fresh)
2 tablespoon(s) pickled jalapeno, diced
2 tablespoon(s) pickled jalapeno juice

Steps:

  • Skin and cut halibut into 1 1/2" pieces. Saute in 3 TBSP of butter and 4 cloves of minced garlic. Remove from stove and allow to cool, then shred or flake. Mix the sour cream, mayo, cheese, dill jalapeno, and jalapeno juice together. Add the shredded halibut and stir well to mix together. Bake in the oven for 30 minutes at 350. Serve warm with tostada chips, crackers, bread slices or other chips. This dip is Divine!

½ cup mayonnaise
½ cup sour cream
2 tablespoons all-purpose flour

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a medium baking dish.
  • In a bowl, mix the Cheddar cheese, mayonnaise, sour cream, flour, lemon juice, onion, and cayenne pepper.

PAN ROASTED HALIBUT WITH JALAPENO VINAIGRETTE

This is one of those recipes that caught my eye. It was recently published in our local newspaper. I haven't actually prepared it yet. Plan to do so this weekend. It is quick and sounds full of flavor and spice.

2 tablespoons apple cider vinegar
2 tablespoons very finely chopped red onions
kosher salt
1 tablespoon honey
1 tablespoon chopped cilantro
1/2 teaspoon Dijon mustard
1/2 teaspoon very finely chopped garlic
1/2 cup extra virgin olive oil, plus
1 teaspoon extra virgin olive oil
1 medium jalapeno
fresh ground pepper
6 (5 ounce) halibut fillets
avocados, wedges or parsley (to garnish)

Steps:

  • Combine the vinegar and onion with a half teaspoon of salt.
  • Let stand for 10 minutes and then whisk in the honey, cilantro, mustard, garlic and quarter cup of the olive oil.
  • In a small skillet, heat 1 teaspoon of olive oil over high heat until just smoking.
  • Add the jalapeno and cook turning, until charred and blistered on all sides, about 2 minutes; let cool slightly.
  • Slip off the charred skin.
  • Discard the steam and cut the jalapeno in half lengthwise.
  • Scrape out seeds and finely chop the jalapeno.
  • Add the jalapeno to the vinaigrette and season with salt and pepper.
  • In a large nonstick skillet, heat the remaining quarter cup of olive oil over moderately high heat.
  • Season the halibut with salt and pepper.
  • Add season fish to oil and cook turning once until they are opaque throughout.
  • This should take approximately 9 minutes.
  • Transfer the halibut to a platter.
  • Whisk the vinaigrette, spoon over the fish and garnish with avocado wedges or fresh parsley.
  • PLEASE NOTE: TAKE CAUTION WHEN HANDLING THE JALAPENO.
  • USE RUBBER GLOVES WHEN HANDLING.
  • WASH HANDS THROUGHLY AFTER PREPARING AND DO NOT RUB EYES.

HALIBUT WITH BROWN BUTTER, LEMON AND SAGE

This is a simple method for cooking firm, white-fleshed fish on the stovetop from start to finish. If halibut is not available, use thick flounder fillets, snapper, grouper or large sea scallops. The flavor of sage permeates the quick, easy pan sauce and the buttery bread crumbs provide crunchy texture.

About 1 1/2 pounds halibut fillets (or other firm white-fleshed fish), cut into 4 pieces
Salt and black pepper
2 tablespoons olive oil
4 tablespoons unsalted butter
12 to 15 fresh sage leaves
2 tablespoons freshly squeezed lemon juice
1/4 cup coarse homemade bread crumbs, toasted
2 tablespoons finely chopped parsley
Lemon wedges, for serving

Steps:

  • Season fish on both sides with plenty of salt and pepper.
  • Pour oil into a large, heavy skillet (preferably cast iron or nonstick) and set over medium-high heat. When oil is hot (but not smoking), swirl to evenly coat the pan, then add fish in a single layer. Let cook undisturbed for 3 to 4 minutes, until first side is nicely browned. Adjust the heat as needed to produce a steady sizzle and prevent scorching.
  • Flip and cook fish for about another 3 minutes, until just done. (To test for doneness, use a fork to gently probe the flesh: it should flake easily.) Transfer cooked fish to a warm platter or serving plates.
  • Make the sauce: Place skillet back on the stove over medium-high heat. Add butter and sage leaves. Cook butter, swirling the pan, until foamy and just beginning to brown, about 1 minute. Turn off heat and stir in lemon juice.
  • Spoon butter sauce and sage leaves over fish. Sprinkle with bread crumbs and parsley. Serve immediately, with lemon wedges.
