50 g butter
1 1/2 cups (225g) self-raising flour
3/4 cup (185g) milk
2 tbs golden syrup
2 cups water
50 g butter
1/3 cup (120g) golden syrup
3/4 cup (160g) brown sugar

Steps:

  • Use your fingers to rub the butter through the self-raising flour until it resembles fine breadcrumbs.
  • Add the milk and golden syrup and stir to form a thick paste.
  • Meanwhile, place the syrup/sauce ingredients into a large saucepan and bring to the boil. Reduce to a simmer and add tablespoonfuls of the mixture.
  • Allow the sauce to come back to a simmer and then cover for 15-20 minutes or until cooked through.

1 cup water
1/2 cup white sugar
2 tablespoons golden syrup
1 tablespoon butter
2 tablespoons butter
1 cup self-rising ((self raising))
1 egg ( lightly beaten)
1/4 cup milk (as needed)
cream ((custard or sweetened soft cheese) for serving)

Steps:

  • Place the water, sugar, golden syrup, and butter in the Dutch oven then slowly bring to a simmer while you make the dumplings.
  • Rub the butter into the flour.
  • Stir in the egg and enough milk to create a stiff dough. Add the milk in small additions so the dough doesn't become too stiff and tacky.
  • Roll the dough into the portion size of your choice, about seven pieces.
  • Place the dough balls into the simmering syrup. Cook for 10 to 12 minutes, or until cooked through.
  • Serve hot with cream, custard, sweetened soft cheese, or custard to balance.

200g butter
225g soft brown sugar
100g golden syrup , plus 2 tbsp
400ml milk
500g self-raising flour

Steps:

  • In a large, wide pan pour in 450ml water, half the butter, sugar and golden syrup and bring to the boil. Turn it down immediately so it is just simmering.
  • Warm the milk just a little. Meanwhile, in a food processor pulse the flour and the rest of the butter until it resembles breadcrumbs. Add 2 tbsp golden syrup and the warmed milk and whizz until it comes together.
  • Bring the liquid back to the boil and drop in dessertspoon-size pieces of the dough, turn the heat down to a simmer again and gently cook for 10 mins, turning gently a few times. You may need to do it in two batches so they don't all stick together - just scoop out the first lot with a little of the syrup into a baking dish, cover with foil and keep warm in a low oven while you finish the rest.

8 cups all-purpose flour
3 tablespoons baking powder
4-1/2 teaspoons salt
1-1/2 pounds butter-flavored shortening
2 cups 2% milk
24 medium tart apples, peeled and cored
1-1/2 cups sugar
1 teaspoon ground cinnamon
1/2 cup butter, divided
SYRUP:
2-1/2 cups packed brown sugar
1-1/2 cups water
1 cup butter, cubed
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the flour, baking powder and salt; cut in shortening until crumbly. Gradually add milk, tossing with a fork until dough forms a ball. Divide into 24 portions. Cover and refrigerate for at least 1 hour or until easy to handle., On a well-floured surface, roll each portion of dough into a 7-in. square. Place an apple on each square. Combine sugar and cinnamon; place 1 tablespoonful into the core of each apple. Dot each with 1 teaspoon butter., Gently bring up corners of pastry to center; pinch edges to seal. Place in four greased 13-in. x 9-in. baking dishes. Bake at 350° for 15 minutes., Meanwhile, in a large saucepan, combine the syrup ingredients. Bring to a boil; cook and stir until smooth and blended. Pour over apples. , Bake 35-40 minutes longer or until apples are tender and pastry is golden brown. Serve warm.

40 g cold butter, chopped
1 egg
1 tablespoon milk
1 cup sugar
40 g butter, extra
2 tablespoons golden syrup
1/4 cup lemon juice
2 cups water

Steps:

  • Sift the flour into a bowl and add a pinch of salt.
  • Using your fingertips, rub the butter into the flour until it resembles fine breadcrumbs.
  • Make a well in the center and using a flat bladed knife, stir in the combined egg and milk to form a soft dough.
