12 chicken thighs
2 lemons, 1 sliced,1 halved
1/4 cup brown sugar
1/4 cup white vinegar
1/4 cup water
1 1/2 lbs dried figs
salt
1 teaspoon dried parsley
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Squeeze juices from halved lemon into a small bowl, then stir in brown sugar, vinegar and water; set aside.
  • Place figs and sliced lemon segments in the bottom of an 11x16 inch baking/roasting dish.
  • Arrange chicken thighs on top, then pour vinegar mixture over chicken.
  • Finally, sprinkle with salt and dried parsley to taste.
  • Bake/roast at 400 degrees F (200 degrees C) for 50 minutes, basting frequently (turn figs if they begin to brown).
  • With a slotted spoon, remove chicken, figs and lemon slices from baking dish and place on a warm platter.
  • Skim fat from cooking juices, then pour over chicken as sauce.
  • Garnish with fresh parlsey and serve.

12 sprigs thyme
24 ripe figs, halved lengthwise
Olive oil

Steps:

  • Preheat oven to 400 degrees.
  • Place thyme sprigs in the bottom of a medium shallow baking dish. Place figs, cut side up, in baking dish and drizzle with olive oil.
  • Transfer to oven and bake until figs are puffy and juicy, about 20 minutes. Serve warm or at room temperature.

3/4 pound dried figs
3/4 cup orange juice
1/4 cup orange liqueur
1/8 teaspoon ground cloves
1/4 cup sugar
Whipped cream

Steps:

  • Preheat oven to 325°. Prick holes in figs with a fork; place in a greased 8-in. square baking dish. In a small bowl, combine orange juice, liqueur and cloves. Sprinkle sugar over figs; pour juice mixture over the top., Bake, uncovered, 45-55 minutes or until tender, basting occasionally with juice mixture. Serve warm with whipped cream.

15 fresh figs, halved
425 g (15 ounces) Demerara (brown) sugar
750 ml (26 fluid ounces) port

Steps:

  • 1. Preheat the oven to 170°C / 325°F / gas mark 3.
  • 2. Halve each fig lengthways through the stalk. Place the figs in a baking dish and sprinkle evenly with the sugar and port. Bake for about 40 minutes, or until the figs are soft with a good thick syrup.
