PERFECT CILANTRO LIME RICE

How to make delicious and flavorful cilantro lime rice that tastes even better than your favorite restaurants! Stock or broth substituted for the water adds additional flavor. We love using chicken or vegetable stock. If you do use stock, take care to add salt to taste since the stock may already have some salt added.

Yield Makes about 5 1/4 cups rice

Number Of Ingredients 8

1 1/2 cups (280 grams) long grain white rice
1 tablespoon olive oil or butter, plus more for serving
1/2 cup (70 grams) finely minced onion (1 small)
2 teaspoons minced garlic (2 medium cloves)
2 1/4 cups (530 ml) water, vegetable stock or chicken stock
1/4 teaspoon fine sea salt or to taste, see notes
3 tablespoons fresh squeezed lime juice
1 cup (30 grams) roughly chopped fresh cilantro leaves and tender stems

Steps:

  • Rinse the rice with cold water until the water runs clear. Drain well in a fine-mesh sieve and set aside. This removes excess starch and helps the rice cook up fluffy and light.
  • Heat a medium saucepan with a tight-fitting lid, over medium heat. Add the oil or butter. When hot, add the rinsed rice and onion. Cook, stirring often, until the rice turns from translucent to a brighter white and the onion is soft, 3 to 4 minutes. Add the garlic and cook, stirring it around the pan until fragrant, but not browned, about 30 seconds.
  • Pour in the warm water or stock and stir, knocking any grains of rice that are stuck to the sides of the pan. Season with salt, reduce the heat to the lowest setting and cover with a lid. Cook, covered for 15 minutes.
  • Remove the pan from the heat and leave alone (still covered) for 10 minutes. Uncover and test a grain of rice. If the rice is still a little hard, place the lid back onto the rice and place over low heat for another 5 minutes. If the rice looks too dry, scatter a tablespoon or two of extra water over the rice before placing back onto the heat.
  • When the rice is done, scatter the lime juice and cilantro on top. Use a fork to gently fluff the rice and incorporate the lime juice and cilantro into the rice. Serve.

1 teaspoon canola oil
1 cup long grain white rice
1 cup chicken stock
2 to 3 strips lime peel
1/2 teaspoon kosher salt
1 tablespoon lime zest plus 2 tablespoons lime juice
1/4 cup chopped fresh cilantro leaves, plus more for sprinkling
2 green onions, green parts only, chopped

Steps:

  • Heat the oil in a large saucepot over medium-high heat. Add the rice and toast until lightly golden, about 1 minute. Add the stock, lime peel, salt and 1 1/2 cups water and bring to a boil. Cover the rice, reduce the heat to low and simmer until all of the liquid is absorbed, about 15 minutes. Let the rice stand, covered, about 5 minutes, then stir in the lime zest, juice and cilantro. Transfer to a serving bowl and top with more cilantro leaves and green onion.

OVEN BAKED CILANTRO LIME RICE RECIPE

Delicious flavorful rice that is the perfect compliment to any of your favorite Mexican dishes. Also, this recipe is very forgiving...if you do not have fresh garlic or onion, you can use dehydrated or powder in it's place.

2½ cups regular white rice
2 cups chicken broth (I use two cubes of chicken bullion dissolved into two cups hot water.)
3 cups hot water
2 limes (remember, put the limes in the microwave for 10 seconds before squeezing, they will give you more juice)
6 tbsp softened butter, or canola oil
¾ tsp salt, divided
½ tsp sugar
1 clove garlic, crushed (or ¼ tsp garlic powder or dehydrated garlic)
¼ cup chopped onion (or ¾ tsp onion powder or 1 tbsp dehydrated onion)
¼ cup chopped cilantro leaves, very loosely packed

Steps:

  • Preheat oven to 350 degrees.
  • In a 9x13 pan combine rice, chicken broth, water, the juice of ONE of the limes, butter OR oil, ½ tsp of the salt (reserve the other ¼ tsp for after rice is cooked), crushed garlic and chopped onion.
  • Carefully stir to distribute ingredients evenly, cover with foil and place in 350 degree oven and bake for 1 hour.
  • Remove rice after 1 hour. In a small bowl mix, juice of the second lime, ¼ tsp salt, ½ tsp sugar and ¼ cup chopped cilantro leaves. Pour mixture over baked rice and stir carefully until well combined. Serve and Enjoy!

EASY CILANTRO-LIME RICE

1 ½ cups chicken broth

¼ cup whole-kernel corn
2 teaspoons green onions, chopped
1 lime, zested

Steps:

  • Heat olive oil in a saucepan over medium heat. Cook and stir rice and garlic in hot oil until fragrant, about 2 minutes. Stir chicken broth, lime juice, and salt into rice; bring to a boil, reduce heat to medium-low, cover the saucepan with a lid, and simmer until rice is tender and liquid is absorbed, about 15 minutes.

{Oven Baked} Cilantro Lime Rice image

2 cups long grain white rice
1 teaspoon ground cumin
1 teaspoon kosher salt
4 cups boiling water
2 tablespoons lime juice
1/4 cup chopped cilantro
additional lime wedges (for serving)

Steps:

  • Preheat the oven to 425°F. Lightly grease a 9x13 inch baking pan with butter or oil. Combine the rice, cumin, and salt in the pan and stir to distribute the spices. Spread in an even layer. Pour in the boiling water and lime juice.
  • Cover the pan tightly with heavy duty aluminum foil, sealing all the edges. Bake the rice for 20 minutes. Remove from the oven and stir. If most of the water has not been absorbed, bake uncovered for an additional 3-5 minutes. Remove from the oven and let rest for 3-5 minutes. Fluff with a fork and lightly stir in the cilantro. Serve with additional lime wedges, if desired. Enjoy!

This is one amazing rice recipe that is served at a local Tex-Mex restaurant in Utah. We went to a Halloween party, and this was served there, along with the 2 other recipes that I am going to put on here. I promise you will LOVE this rice!

2 cups uncooked rice
4 cups chicken broth
2 limes, juice and zest of (to taste)
1/8-1/4 cup chopped fresh cilantro

Steps:

  • Turn your oven to 350-375 and then heat the chicken broth on the stove in a pan.
  • Once heated through, but not boiling, squeeze juice from lime, and add the zest into broth.
  • Place rice in baking dish, and then pour heated broth over rice, cover, and place in oven to bake for 20-30 minutes, or until the liquid is absorbed. Make sure to stir a couple times.
  • Once done, add in the chopped cilantro and serve.
