nonstick cooking spray, optional
3 bell peppers
1 cup whole wheat breadcrumbs, or panko bread crumbs (50 g)
½ cup grated parmesan cheese
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
½ teaspoon pepper
3 eggs, beaten
1 cup all-purpose flour
dipping sauce, of your choice, optional

Steps:

  • Preheat the oven to 425˚F (220˚C). Grease a baking sheet with nonstick spray or line with parchment paper.
  • Cut the bell peppers carefully around the stem and remove the stem and seeds. Cut the peppers crosswise into ½-inch (1 cm) slices.
  • In a large bowl, combine the bread crumbs, Parmesan, garlic powder, paprika, oregano, basil, salt, and pepper. Add the eggs to a separate bowl and whisk. Add the flour to a third bowl.
  • Dredge the bell pepper rings in the flour, then the eggs, then finally in the bread crumb mixture, making sure to coat all sides.
  • Arrange the bell pepper rings on the baking sheet.
  • Bake for 10-15 minutes, flipping halfway through, until golden brown on both sides.
  • Serve with your favorite dipping sauce.

1 large green bell pepper (or red)
1 tablespoon butter
4 eggs
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon oregano
1/8 teaspoon basil
4 tablespoons cream
4 tablespoons fresh breadcrumbs
2 teaspoons parmesan cheese
2 tablespoons butter

Steps:

  • Cut pepper into 4 rings, 1/2" thick.
  • Cook in lightly salted water for 3-5 minutes.
  • Drain.
  • Melt 1 T butter in shallow 1 quart casserole in oven.
  • Place pepper rings in casserole.
  • Break 1 egg into each ring.
  • Sprinkle with seasonings.
  • Pour 1 T cream over each.
  • Combine crumbs, parmesan and butter.
  • Sprinkle over.
  • Bake at 350 for 15-20 minutes or until eggs are set.
  • This doubles, triples and more for a large brunch.
  • Can easily be prepared ahead.

1/2 batch roasted red pepper sauce (see 'Goes well with...' below)
4 eggs
4 thick slices of ciabatta
olive oil
1 garlic clove
chopped parsley

Steps:

  • Heat oven to 180C/160C fan/gas 4. Divide ½ batch roasted red pepper sauce (see 'Goes well with...' below) between four small baking dishes. Take 4 eggs and break 1 into each dish. Bake for 7-10 mins until the whites are set and the yolks are still runny.
  • Put 4 thick slices of ciabatta on a baking tray, drizzle with olive oil, rub with 1 garlic clove and cook in the oven until lightly toasted. Sprinkle the eggs with chopped parsley and black pepper, and serve with the toasted ciabatta.
