Oven-Baked Keto Chicken Thighs with Creamed Spinach and Mushrooms image

This yummy keto main dish is a great way to get a vegetable into your evening meal. The chicken thighs rest on a bed of creamed spinach and mushrooms, with a crunchy keto topping.

4 slices bacon
6 skinless, boneless chicken thighs
salt and ground black pepper to taste
½ cup chopped onion
8 ounces fresh mushrooms, chopped
2 pounds frozen chopped spinach - thawed, drained, and squeezed dry
3 tablespoons ghee, plus more for greasing
1 cup chicken broth
1 cup heavy cream
1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®), softened
1 cup grated Parmesan cheese, divided
½ cup sliced almonds
½ cup crushed pork rinds

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble once cool enough to handle. Reserve bacon drippings.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.
  • Pat chicken thighs dry and season with salt and pepper.
  • Heat reserved bacon drippings in a large skillet over medium heat and cook onions and mushrooms, stirring occasionally, until mushrooms are soft and onions are translucent, 7 to 8 minutes. Place vegetables into a large mixing bowl and mix in well-dried spinach. Set aside.
  • Wipe the skillet clean. Add ghee and melt over medium heat. Once skillet is hot, add chicken thighs and lightly brown on each side, 3 to 4 minutes per side; the chicken will still be pink in the middle. Remove chicken from skillet and set aside.
  • Combine chicken broth, cream, softened garlic and herb cheese spread , and 1/2 cup grated Parmesan cheese in a small bowl; whisk until well combined. Pour broth mixture over vegetable mixture in the mixing bowl and mix to combine. Season with salt and pepper. Add vegetable mixture to skillet and place browned chicken thighs on top. Top with crumbled bacon, sliced almonds, ground pork rinds, and remaining 1/2 cup Parmesan cheese.
  • Bake in the preheated oven until chicken thighs are no longer pink at the bone, juices run clear, and spinach mixture is bubbly, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove from the oven and allow to rest about 10 minutes before serving.

I found this originally as a Passover spinach dish, but I liked it so much that I eat it year-round. If using it for Passover, substitute matzo meal for the bread crumbs.

20 ounces frozen chopped spinach, cooked and drained
1 cup sour cream
1 1/2 teaspoons onion powder
1/8 teaspoon pepper
8 ounces cream cheese or 8 ounces light cream cheese, softened
1/2 cup breadcrumbs (Matzo meal can be substituted)
3/4 teaspoon salt
1/8 teaspoon garlic powder
3 eggs, well beaten

Steps:

  • Preheat oven to 350 degrees.
  • Place hot spinach in a medium size bowl. Add cream cheese and sour cream and blend well.
  • Stir in bread crumbs (or matzo meal) and seasonings.
  • Add beaten eggs.
  • Pour into a 8 inch square baking dish coated in cooking spray.
  • Bake for 45 minutes.

Occasionally dinner is a last-minute decision, or a tight-budget decision, or I am left to use what's on hand. Frozen chicken breasts and canned spinach, paired with frozen pearl onions, minced garlic, white wine, and cream cheese made for a delicious last-minute dinner. (And I saved the hassle of a lengthy clean up by using only one baking dish and one pan.) Sprinkle Parmesan cheese on top if desired.

¼ cup chopped onion
1 tablespoon minced garlic
¾ cup chicken broth
2 (5 ounce) frozen chicken breast halves
2 tablespoons butter, divided
½ cup frozen pearl onions
½ tablespoon minced garlic
1 (14 ounce) can leaf spinach
salt and ground black pepper to taste
¼ cup dry white wine
2 tablespoons cream cheese, or more to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease an 8-inch baking dish.
  • Spread chopped onion and garlic in the prepared dish. Add chicken broth and stir. Add frozen chicken breasts, dipping each side in the mixture. Spoon onions and garlic over chicken. Cover with aluminum foil.
  • Bake in the preheated oven for 15 minutes. Turn chicken breasts over and spoon sauce on top again. Continue baking, uncovered, until chicken is no longer pink in the center, about 25 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • While chicken is baking, melt butter in a saucepan over medium heat. Add pearl onions and garlic; cook and stir until tender, about 5 minutes. Set aside in a bowl. Drain spinach liquids into the pan. Simmer until liquid is reduced by half. Add spinach and heat through; season with salt and pepper. Set aside in a bowl.
  • Return onion-garlic mixture to the pan; add wine and cream cheese. Simmer until cheese is melted. Stir in the spinach and heat through. Spoon mixture onto two plates.
  • Melt remaining butter in the same pan over medium-high heat. Fry chicken until lightly browned on both sides, 1 to 2 minutes per side. Place chicken on top of the creamed spinach.

4 medium russet potatoes (10 to 12 ounces each)
6 tablespoons unsalted butter, plus melted butter for brushing
1 9-ounce package baby spinach (about 10 cups), large stems removed
1 small clove garlic, finely chopped
1/4 teaspoon freshly grated nutmeg
Pinch of cayenne pepper
Kosher salt
2 large egg yolks
1/4 cup grated parmesan cheese
1 cup cold heavy cream

Steps:

  • Position racks in the middle and upper third of the oven; preheat to 400 degrees F. Scrub the potatoes and dry well. Bake directly on the middle oven rack until easily pierced with a knife, 45 to 50 minutes. Remove from the oven; let cool 5 minutes.
  • Meanwhile, melt 3 tablespoons butter in a large skillet over medium-high heat. Add the spinach (in batches, if needed) and cook, tossing with tongs, until wilted, about 5 minutes. Add the garlic, nutmeg, cayenne and 1/2 teaspoon salt. Increase the heat to high and cook until the liquid evaporates, about 2 minutes. Transfer the mixture to a cutting board and finely chop; squeeze dry in a kitchen towel.
  • One at a time, hold each potato with another kitchen towel and halve lengthwise. Scoop the flesh into a large bowl, leaving a 1/4-inch-thick shell. Mash the flesh with the remaining 3 tablespoons butter until smooth; season with salt. Stir in the egg yolks and parmesan, then the spinach mixture. Brush the potato skins with melted butter; season the insides with salt and pepper. Set on a baking sheet.
  • Beat the heavy cream in a large bowl with a mixer on medium speed until soft peaks form, about 2 minutes. Stir about one-quarter of the whipped cream into the potato mixture, then gently fold in the rest.
  • Mound the filling into the potato skins. Return to the oven on the top rack and bake until the filling is warmed through and starts browning, about 15 minutes. Turn on the broiler and broil until the filling is golden brown and the skins are crisp, 1 to 2 more minutes.

1 bunch spinach (about 3/4 pound)
2 tablespoons minced onion
1 tablespoon unsalted butter
3 tablespoons heavy cream
freshly grated nutmeg to taste
2 large eggs

Steps:

  • Preheat oven to 400°F. and butter two 1/3- to 1/2-cup ramekins.
  • Discard coarse stems from spinach. In a 2- to 3-quart saucepan of boiling salted water cook spinach 2 minutes and drain in a sieve, pressing with back of a large spoon to remove as much water as possible. Finely chop spinach.
  • In a small nonstick skillet cook onion in butter over moderately low heat, stirring, until softened. Stir in spinach, cream, nutmeg, and salt and pepper to taste and cook, stirring, until hot.
  • Divide creamed spinach between ramekins and break an egg into each. On a baking sheet bake eggs in upper third of oven until whites are cooked through, or until desired doneness, about 12 minutes. (The yolks will not be fully cooked, which may be of concern if there is a problem with salmonella in your area.)
  • Season eggs with salt and pepper and serve immediately.
