I love this cooking technique; it is one of those dishes that you stick in the oven, set the timer and forget! These potatoes have the flavor of a really good potato soup, and the aroma of the onions while baking is killer. This would be a good choice for a potluck or to multiply for a large crowd.

6 medium potatoes peeled and diced
2 half-pint cartons heavy cream
2 half-pint cartons milk
2 Tbsp dried onion flakes
salt and pepper to taste

Steps:

  • 1. Place everything in a buttered 13x9 baking dish. I put the cream in first. Then the fill the cartons with equal portions of milk then pour over the potatoes.
  • 2. Add salt a little at a time taste the milk as you add the salt. When you can just taste the salt stop, the potatoes need a lot of salt. Bake at 350. The dish is done when the milk has thickened and potatoes are tender.

GRANDMA'S CLASSIC CREAMED CHICKEN OVER BAKED POTATOES



Grandma's Classic Creamed Chicken over Baked Potatoes image

This is not all that unique and really nothing special, but it is just GOOD comfort food. It was my Grandma's recipe, although I am sure she got bits and pieces from combining other classic recipes. One night Grandma was making the chicken, but when she went to make the biscuits, she was out of flour. So ... potatoes was the answer. We all liked it so much, that is how we always made it from then on.

Number Of Ingredients 15

2 large potatoes, baked and cut in half
2 tablespoons butter
2 tablespoons flour
2 1/2 cups light cream (milk or half and half will work fine)
1 cup chicken, cooked and diced
1 cup peas (frozen peas work fine)
1 1/2 cups button mushrooms, sliced
1/2 cup celery, fine diced
1/2 cup red pepper, diced
1 small onion, diced
1 tablespoon fresh parsley, fine chopped
1 teaspoon olive oil
salt
pepper
white cheddar cheese, grated fine

Steps:

  • Potatoes -- I always bake mine ahead, cut in half and just heat up in the microwave before serving.
  • Bechemel -- In a small sauce pan, add the butter and bring to medium heat. Melt the butter and then whisk in the flour. Mix well to combine and cook a couple of minutes to loose the flour taste. Slowly whisk in the milk or cream and and bring up to a low boil until thickened. You can set this off to the side.
  • Vegetables -- In a large sauce pan, add the olive oil and bring to medium / medium high heat. Add the celery, onion and red pepper and cook 2-3 minutes, then add in the mushrooms and cook another 5 minutes under the vegetables are tender.
  • Chicken -- Now, I cook my chicken ahead or I use leftover chicken, so please make the chicken anyway you want. I usually oven roast a couple of bone in breasts, seasoned with just olive oil, salt and pepper, 375 for 40-45 minutes (depending on the size).
  • Reduce the heat to medium low, add in the chicken, peas and bechemel sauce and cook until everything is heated through. Taste for seasoning (salt and pepper) and add the parsley. If the sauce is a bit thick, add a little more cream or milk. I like a nice thick sauce, but it is up to you.
  • Potato -- Since I make mine ahead, just microwave for a minute to heat up. If you just baked them, follow the directions below.
  • Serve -- Take the potato, slice it in half and lightly use a fork and break up the inside of the potato, don't take any out, just mix it up a bit.
  • Then top with a few spoons of the chicken over the potato. Top with the cheese and enjoy. You can also put under the broiler, microwave or oven for just a few minutes to melt the cheese. It is just a garnish. And the heat of the sauce will melt the cheese all on it's own. Serve with a fresh salad for a nice easy CLASSIC dish.
  • Note: Baked Potato Time is not included in Prep Time.

CREAMED SPINACH TWICE-BAKED POTATOES

4 medium russet potatoes (10 to 12 ounces each)
6 tablespoons unsalted butter, plus melted butter for brushing
1 9-ounce package baby spinach (about 10 cups), large stems removed
1 small clove garlic, finely chopped
1/4 teaspoon freshly grated nutmeg
Pinch of cayenne pepper
Kosher salt
2 large egg yolks
1/4 cup grated parmesan cheese
1 cup cold heavy cream

Steps:

  • Position racks in the middle and upper third of the oven; preheat to 400 degrees F. Scrub the potatoes and dry well. Bake directly on the middle oven rack until easily pierced with a knife, 45 to 50 minutes. Remove from the oven; let cool 5 minutes.
  • Meanwhile, melt 3 tablespoons butter in a large skillet over medium-high heat. Add the spinach (in batches, if needed) and cook, tossing with tongs, until wilted, about 5 minutes. Add the garlic, nutmeg, cayenne and 1/2 teaspoon salt. Increase the heat to high and cook until the liquid evaporates, about 2 minutes. Transfer the mixture to a cutting board and finely chop; squeeze dry in a kitchen towel.
  • One at a time, hold each potato with another kitchen towel and halve lengthwise. Scoop the flesh into a large bowl, leaving a 1/4-inch-thick shell. Mash the flesh with the remaining 3 tablespoons butter until smooth; season with salt. Stir in the egg yolks and parmesan, then the spinach mixture. Brush the potato skins with melted butter; season the insides with salt and pepper. Set on a baking sheet.
  • Beat the heavy cream in a large bowl with a mixer on medium speed until soft peaks form, about 2 minutes. Stir about one-quarter of the whipped cream into the potato mixture, then gently fold in the rest.
  • Mound the filling into the potato skins. Return to the oven on the top rack and bake until the filling is warmed through and starts browning, about 15 minutes. Turn on the broiler and broil until the filling is golden brown and the skins are crisp, 1 to 2 more minutes.

1/2 c sour cream
1/4 c milk
2 eggs
2 tsp mustard
salt and pepper to taste
2 Tbsp parsley, chopped
1/2 c grated cheddar cheese
1/4 c parmesan cheese, grated

Steps:

  • 1. Peel and chop potatoes; cook in boiling salted water until tender. Drain well. Mash until smooth, mix with mayonnaise, sour cream, milk, lightly beaten eggs, mustard and parsley; season with salt and pepper.
  • 2. Press mixture through a sieve (or pulse in food processor for a few seconds). Spoon evenly into a greased two-quart casserole dish. Sprinkle with the grated cheeses.
  • 3. Bake in a preheated 350-degree oven for 20-30 minutes or until golden brown on top.
