These cheese- and bean-stuffed tacos are our new favorite way to turn a rotisserie chicken into a super-easy dinner that serves up to 10.

1 package (4.7 oz) Old El Paso™ Stand 'N Stuff™ taco shells
2 1/2 cups shredded deli rotisserie chicken
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
1/4 cup water
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 can (16 oz) Old El Paso™ refried beans
1 1/4 cups shredded Mexican cheese blend (5 oz)
Diced avocado, chopped tomato, green onions, shredded lettuce, salsa and sour cream, if desired

Steps:

  • Heat oven to 400°F. Spray bottom of 13x9-inch (3-quart) baking dish with cooking spray. Place taco shells standing up and together in dish; set aside.
  • In 10-inch nonstick skillet, cook chicken, taco seasoning mix, water and chiles over medium heat 5 to 6 minutes, stirring frequently, until chicken is heated through. Remove from heat.
  • To assemble, spread about 2 tablespoons refried beans in bottom of each shell. Top each with heaping 1/4 cup chicken mixture and 2 tablespoons shredded cheese. Bake 5 to 7 minutes or until cheese is melted. Top with remaining ingredients, if desired.

These are so simple and delicious. I added Ro-tel and doubled this recipe. I also added a bunch of fresh hot peppers from the garden and used twice the amount of beans. I've posted the recipe as written. YUM YUM

1 tablespoon olive oil
1/2 lb cooked chicken, shredded
1 ounce hot and spicy taco seasoning
1/2 cup onion, diced
4 1/2 ounces chopped green chilies
14 1/2 ounces diced tomatoes, drained
10 taco shells
8 ounces refried beans
2 cups Mexican blend cheese, shredded
jalapeno, to taste
sour cream, to taste
salsa, to taste
cilantro, to taste
shredded lettuce, to taste

Steps:

  • Preheat oven to 400. Spray a 13x9 inch baking dish with nonstick cooking spray and set aside.
  • Heat olive oil over medium heat in a medium skillet. Add onion to skillet and cook for 2 to 3 minutes, or until the onion is translucent and fragrant.
  • Stir in the chicken, taco seasoning, tomatoes, and green chiles. Combine fully and reduce to simmer. Cook for 5 to 8 minutes.
  • Place the taco shells in the baking dish, standing up.
  • Spoon 1 tablespoon of beans in the bottom of each taco shell. Top with the chicken mixture, almost to the top of each shell.
  • Sprinkle each shell generously with shredded cheese, the more the better.
  • Bake for 12 to 14 minutes or until cheese is fully melted and the edges of the shells are browned.
  • Remove from the oven and top with jalapenos, sour cream, cilantro, and salsa.

½ cup vegetable oil
½ cup lemon juice
½ cup lime juice
½ cup orange juice
⅛ cup Worcestershire sauce, or more to taste
1 teaspoon seasoned salt
1 teaspoon garlic salt
1 teaspoon lemon-pepper seasoning
1 (3 pound) whole chicken, cut into pieces, or more to taste
½ head cabbage, shredded
3 limes, juiced, divided
2 avocados, peeled and pitted
salt and ground black pepper to taste
8 (6 inch) flour tortillas
1 bunch green onions, sliced
¼ cup chopped fresh cilantro, or to taste
¼ cup sour cream, or to taste
¼ cup salsa, or to taste

Steps:

  • Whisk vegetable oil, lemon juice, lime juice, orange juice, Worcestershire, seasoned salt, garlic salt, and lemon-pepper seasoning together in a large glass or ceramic bowl. Add chicken and toss to evenly coat. Cover and marinate in the refrigerator, 1 to 24 hours.
  • Preheat the oven to 375 degrees F (190 degrees C). Transfer chicken to a baking dish.
  • Bake in the preheated oven until no longer pink in the center, 45 minutes to 1 hour. Remove from the oven and shred chicken with 2 forks; discard bones.

1 tablespoon vegetable oil
1 lb boneless skinless chicken breasts, cut in 1-inch pieces
1 package (1 oz) Old El Paso™ original taco seasoning mix
1/3 cup water
1 cup Old El Paso™ traditional refried beans (from 16-oz can)
2 cups shredded Colby-Monterey Jack cheese blend (8 oz)

Steps:

  • Heat oven to 400°F. Spray bottom of 13x9-inch (3-quart) baking dish with cooking spray. Place taco shells standing up and together in dish; set aside.
  • In 10-inch nonstick skillet, heat oil over medium-high heat. Add chicken; cook 3 to 5 minutes on first side, without moving, until chicken is browned on bottom and releases easily from pan. Stir chicken; stir in taco seasoning mix and water. Heat to simmering. White Chicken Chili Baked Tacos Recipe - (4.8/5) image

Number Of Ingredients 12

2 large chicken breasts
2 tablespoon taco seasoning
1 cup water or low-sodium chicken broth
1 can white beans, drained and rinsed, 15 ounces
1 can diced green chiles, 4 ounces
2 cream cheese, ounces
1/2 - 3/4 tsp. cumin, to taste
2 tablespoon chopped cilantro
1 cup shredded Cheddar or Monterey cheese
7-8 soft tortillas (I use half corn and half flour)
cooking spray
kosher salt

Steps:

  • Place chicken breasts, taco seasoning and water or broth in a slow cooker. Cook on low until chicken registers 165 degrees on an instant-read thermometer. I used frozen chicken breasts and cooked on low for four hours. When chicken is cooked through, remove from slow cooker and shred Drain liquid from slow cooker and add the shredded chicken back in along with the white beans, diced green chiles, cream cheese, cumin and chopped cilantro. Cover and heat on warm until cream cheese is softened, about 5 minutes. Stir together until creamy. Preheat oven to 425 degrees. Heat tortillas in the microwave for 15-30 seconds or until pliable. Divide filling between tortillas and top each with some shredded cheese. Roll up tightly and place seam side down on a baking sheet that has been lined with foil and sprayed with cooking spray (this makes for a much easier clean up) . Spray tops of taquitos lightly with cooking spray and sprinkle with kosher salt. Bake for 15-20 minutes or until crispy. Serve. You could get more or less taquitos depending on the size of tortillas you use. I like to serve mine with a little sour cream that I mix with green salsa for dipping.
