- Preheat the oven to 400 degrees F. Fit a sheet tray with a wire rack and spray with nonstick cooking spray.
- Mix together buttermilk, lemon juice, hot sauce, onion, thyme, garlic, salt, and pepper to a large bowl. Add chicken and coat with mixture. Cover with plastic wrap and place in the refrigerator for 3 hours or up 12 hours.
- Mix corn flakes, Parmesan cheese, and thyme together. Season with salt and pepper.

- Preheat oven to 400 degrees. Generously coat a rimmed baking sheet with cooking spray; set aside. Rinse chicken, and pat dry. Transfer to a medium bowl. Pour buttermilk over chicken. Cover, and let marinate 1 hour in refrigerator.
- Toss cornflakes, Old Bay, thyme, basil, and cayenne in a large bowl. Remove 1 piece of chicken at a time from buttermilk, letting excess drip back into bowl, and dredge in cornflake mixture.

- Preheat oven to 375 degrees F (190 degrees C).
- Place chicken in a large pot and cover with water; bring to a boil and cook until chicken is no longer pink in the center, about 5 minutes. Drain.
- Heat olive oil in a large skillet over medium heat. Stir carrots, onion, and salt into hot skillet, cover the skillet, and cook, stirring occasionally, until onions are tender, 8 to 10 minutes. Stir Cajun seasoning into vegetables.
- Sprinkle flour over vegetable mixture in the skillet; cook and stir until flour taste cooks off, about 1 minute. Gradually stir orange juice and broth, respectively, into vegetable mixture; bring to a boil.

- Preheat oven to 400°. Generously rub a baking sheet with oil. In a food processor, pulse bread until it turns into coarse crumbs.
- In a large bowl, stir together buttermilk, hot-pepper sauce, ¾ teaspoon salt, and ½ teaspoon pepper. In a separate bowl, mix breadcrumbs, Parmesan, thyme, and 1/8 teaspoon pepper.

- Combine bread crumbs, Parmesan cheese, and dried minced onion; set aside.
- Combine the buttermilk, Dijon, honey, salt, pepper, garlic powder, rosemary, and sage.

- Make marinade: In a large bowl, whisk together 2 cups buttermilk, 3 tablespoons honey, garlic, 2 teaspoons coarse salt, and 1/2 teaspoon pepper. Place chicken in a resealable plastic bag (or baking dish); add marinade and seal (or cover). Refrigerate at least 2 hours or up to 1 day.

KONA K'S HEALTHY OVEN-BAKED BUTTERMILK CHICKEN TENDERLOINS
A great recipe to try when you're in the mood for fried chicken, but can't afford all the calories and fat. If you're out of buttermilk, you can just substitute 1/4 C milk + 1 TSP vinegar. I like to spice this up by adding lots of hot sauce. If time allows, I would recommend soaking the chicken tenderloins in the buttermilk, garlic powder and hot sauce mixture in the refrigerator for at least 2 hours. - Soak chicken breasts in buttermilk or buttermilk substitute. Soak at least 6 hours.
- Turn breasts over after 3 hours on each side.
- Drain breasts in a colandar and discard the buttermilk.
- In a gallon ziplock sack, add Panko crumbs, Mrs. Dash, cilantro, garlic salt, white pepper and paprika. Shake, shake shake.
- Spray Pam on flat baking pan.
- Preheat oven 400.
- Put the pan in the oven to heat.
- Place one chicken breast at a time in the sack and shake until covered.
- Do that with each piece. Place all on the hot pan and bake 10 minutes on each side.
- Take a flat spatula to turn the chicken in the pan. Slice in strips if desired before serving. Marination time is not included in work time.

- 3. Soak chicken parts in buttermilk in the refrigerator for 8 hours or overnight.

- Combine buttermilk, chopped garlic, paprika, cumin, and coriander. Place chicken pieces and the buttermilk marinade mix in an airtight container and refrigerate overnight. Pre-heat oven to 180 C. Transfer the chicken pieces and marinade to an oven-proof casserole dish with a lid and bake for approximately 1 3/4 to 2 hours, until golden brown and cooked to the bone. Transfer the chicken to a serving plate, cover, and keep warm. Cooking will turn the marinade into a clear sauce, though the buttermilk will tend to separate and rise to the top. Transfer to a small saucepan. Mix the flour and a little warm water into a smooth paste and stir into the saucepan. Simmer while stirring, until the liquid turns into a thick gravy. Add warm water or milk if it thickens too much.You may want to use a blender to ensure an extra-smooth smooth texture. Serve with rice or mash.
