1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
1 round (8 oz) Brie cheese
1 tablespoon seedless raspberry jam
1/4 cup fresh raspberries (do not use frozen)
1 egg, beaten
Assorted crackers or slices baguette French bread

Steps:

  • Heat oven to 350°F. Unroll dough; separate crosswise into 2 sections. Press each section into 6-inch square, firmly pressing perforations to seal. Place cheese on center of 1 dough square; top with jam and raspberries.
  • With small cookie or canapé cutter, cut 1 shape from each corner of remaining dough square, 1 inch from center of square; set cutouts aside. Place square on top of cheese round. Press dough evenly around cheese, folding bottom edges over top edges; press to seal completely. Place on cookie sheet.
  • Brush dough with beaten egg. Arrange dough cutouts on top; brush with egg.
  • Bake 25 to 30 minutes or until golden brown. Remove from cookie sheet; place on serving plate. Cool 10 minutes. Serve warm with crackers. Store in refrigerator.

1 sheet puff pastry (1/2 a box)
1 wheel Brie cheese
1/3 cup raspberry preserves
1 egg (mixed with one tablespoon of water)

Steps:

  • Preheat the oven to 400 degrees.
  • Open the sheet of puff pastry onto a large cutting board.
  • Using a rolling pin, roll the puff pastry to a 1/4" thickness.
  • Place the wheel of brie in the middle of the puff pastry.
  • Add the raspberry preserves on top of the brie.
  • Gently fold over the brie to cover it completely.
  • Move the brie wheel to a baking sheet.
  • Brush on the egg/water mixture.
  • Wipe away any egg collected under the brie on the baking sheet.
  • Bake for 35-40 minutes or until golden brown.
  • Allow to cool for five minutes before serving.

1 sheet frozen puff pastry, thawed
1 (8 ounce) round Brie cheese
⅓ cup seedless raspberry jam
2 tablespoons chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly grease with cooking spray.
  • Lay the puff pastry onto the prepared baking sheet. Center the Brie wheel onto the pastry. Spread the jam evenly over the top of the Brie. Sprinkle the walnuts atop the jam. Fold the puff pastry over the top of the Brie, sealing all openings.

1 tube refrigerated crescent rolls
1 small round brie
1 jar Robert Rothschild Seedless Raspberry Preserves
Pecans (optional)

Steps:

  • Preheat oven to 375 degrees. Open tube of crescent rolls carefully. Do not separate in individual rolls. Close the seams by applying pressure to them. Place small round of brie in center of dough. Seal long ends of crust on top of brie. When sealing sides it will be necessary to trim corners. The dough is very forgiving, so if a seam should fall apart just apply pressure and close. Once sides are sealed you can mold to brie by gently shaping with your hands. Place on cookie sheet. Bake for 15 minutes or until golden brown. While hot, pour Seedless Raspberry Preserves generously on top and sprinkle with chopped pecans. Serve either with thin crackers or alone.

1/2 cup raspberry preserves
1/4 cup fresh or frozen unsweetened raspberries, thawed
1/2 teaspoon finely chopped fresh rosemary leaves
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
1 13.2-ounce Baby Brie cheese (about 6 to 7 inches in diameter)
1 large egg, beaten to blend (for glaze)
Crackers and baguette slices

Steps:

  • Preheat oven to 400°F. Stir preserves, berries and rosemary in small bowl to blend. Season berry mixture with pepper. Roll out pastry on lightly floured surface to 12-inch square. Cut top rind off cheese; discard rind. Place cheese, rindless side up, in center of pastry. Spoon raspberry mixture onto cheese. Fold pastry on 2 opposite sides over cheese. Brush remaining 2 sides of pastry with glaze. Fold over cheese; press seams to seal. Brush pastry with glaze; place on baking sheet.
  • Bake cheese until pastry is deep golden brown (top of pastry may split open), about 30 minutes. Let cool 20 minutes. Place baked cheese on serving platter. Surround with crackers, baguette slices, and grapes.

1/4 cup butter, softened
3 ounces cream cheese, softened
3/4 cup all-purpose flour
1 round (8 ounces) Brie cheese
1 large egg
1 teaspoon water
Assorted crackers and fresh fruit

Steps:

  • In a large bowl, beat the butter, cream cheese and flour on low speed until mixture forms a ball. Divide in half and wrap each portion in plastic wrap; refrigerate for 30 minutes., On a lightly floured surface, roll out each portion into a 7-in. circle about 1/8 in. thick. Place one circle on an ungreased baking sheet. Place Brie on pastry and top with remaining pastry circle; pinch edges to seal. Flute bottom edge if desired., In a small bowl, whisk egg and water; brush over top and sides of pastry. Bake at 400° for 15-20 minutes or until golden brown. Immediately remove from the baking sheets. Let stand for 30 minutes before serving. Serve with crackers and fruit.
