BAKED BRIE WITH CRANBERRY SAUCE
The combination of tart cranberry sauce and creamy Brie cheese is irresistible! You can prepare it in advance and just pop it in the oven. I use my own Cranberry Orange Sauce (I've posted the recipe on Just A Pinch) which is super easy and so delicious! This recipe also works with Camembert cheese.

Steps:
- Preheat oven to 400.
- Place Brie in a small round casserole as close to the size of the cheese round as possible.
- Top Brie with cranberry sauce.
- Then top with the walnuts.
- Cover tightly with foil.
- Bake approximately 10 minutes. Brie should be fully melted.
- Serve warm with sliced a selection of your choice of sliced French bread, crackers, or pear and apple slices.
BAKED BRIE WITH CRANBERRY SAUCE
I found this on a website called kitchn.com, tried it, and it is very good. It makes a great 2nd use of a little of your cranberry sauce. I'm guessing that almost everyone has had baked brie, but this is by far a great way to do it. Guests will enjoy this at any time of day. I love cranberries, and I don't think that they should be bound to just one appearance on the Thanksgiving table. This appetizer highlights the cranberries (and it uses up leftover cranberry sauce, too). It's a great reason to just make a little extra cranberry sauce for Thanksgiving dinner. Enjoy!

- Preheat the oven to 425°F.
- Peel or slice off the top rind of the brie and scrape out a small amount of cheese to form a shallow hollow in the center. Place the cheese in a small baking dish like a pie pan. (If you plan on transferring the cheese to a serving dish after it's baked, line the pie pan with a square of parchment paper.).
- Mix the cranberry sauce, brown sugar, vanilla, zest, and nutmeg. Top the brie with this cranberry mixture and sprinkle the hazelnuts (optional) over it.
- Bake for 8 to 12 minutes or until the fruit is bubbling and the cheese is gooey. This is a delicate process, and baking time can vary. The goal is to take the cheese out after it has softened, but just before it collapses into a heap.
- If desired, lift the parchment paper and use a spatula to carefully slide the cheese onto a prettier serving dish. Garnish with a rosemary sprig (optional) and serve immediately with assorted crackers.

- Preheat the oven to 350 degrees F.
- Combine the cranberries, sugar, cinnamon, and nutmeg in a small baking dish and cover. Bake for about 55 minutes. Remove the cover and stir to melt any un-dissolved sugar. Return the dish to the oven and bake for about 5 to 10 more minutes, or until the cranberries are soft and surrounded by a syrupy sauce. Remove the dish from the oven and immediately stir in the bourbon, to taste. Let the dish cool to room temperature, then chill for at least hour before serving. The sauce will keep for several weeks in the refrigerator.

- Preheat oven to 200ºC/400ºF.
- Cut the cheese into quarters.
- Dip each piece into the flour to give a light coating, then dip into beaten egg and then the crumbs so all surfaces are coated.
- Repeat the egg and crumb dipping and then place cheese wedges onto a baking sheet.

- Preheat the oven to 375 degrees F.
- In a small saucepan, combine cranberries, balsamic, sugar, rosemary, water, and salt. Stir to combine. Bring to a simmer over medium heat. Cook for ten minutes until thick.
- Add above ingredients to food processor and pulse until a compote consistency.
- Cut the puff pastry into an 8x8-inch square.
- Place the puff pastry on a greased baking sheet.
- Place the brie in the center of the dough. Pinch the dough up along the edges of the brie. Do not totally cover the brie. Brush all edges of the dough with the melted butter.
- Spoon the sauce on to the brie. Place the brie in the oven and bake for 12-15 minutes until the edges are lightly golden and crisp. Top with pecans and sprig of rosemary to garnish. Allow baked brie to cool for 5-10 minutes before serving and slicing.
