Baked brie is always a delicious appetizer option. I love the use of a pizza crust in this recipe rather than crescent dough or puff pastry. It makes this baked brie a bit more rustic. We added the Grand Mariner to the apricot preserves and it was a great topping. The preserves are sweet and you taste a hint of the orange liquor...

1 can(s) Pillsbury® thin pizza dough
1 wedge of brie
3/4 c apricot preserves
1 tsp Grand Marnier
1/2 c slivered almonds
crackers for serving

Steps:

  • 1. Preheat your oven to 425 degrees F.
  • 2. Unwrap the brie and cut the skin off the top and sides. Leave the skin on the bottom.
  • 3. Place the brie in an ovenproof dish (approx. 8 inches in diameter).
  • 4. Open the can of Pillsbury® thin pizza crust and remove the dough.
  • 5. Cut the roll of dough into 1-inch pieces.
  • 6. Roll each piece of dough in a pencil shape, approximately three inches long.
  • 7. Surround the brie with the dough, filling the empty spaces and overlapping where necessary.
  • 8. Pour enough apricot preserves on the top of the brie wedge to cover it entirely. You may use more or less than the 3/4 cup. You may use whatever jam/preserves/marmalade that you wish.
  • 9. Add the Grand Marnier to the preserves. This is an optional step. The brie is just as good without it.
  • 10. Top the dish with the slivered almonds. Bake for 18-20 minutes depending on the hotness of your oven.
  • 11. When the brie is melted and the pizza dough is a golden brown, remove it from the oven. Let your guests top the crackers with the brie and they'll be happy campers! (I used Townhouse crackers.)

3/4 cup finely chopped pecans
1/4 cup Kahlua
3 tablespoons brown sugar
14 ounces mini brie cheese

Steps:

  • Spread pecans in a 9" pie plate.
  • Microwave on high 4 to 6 minutes, stirring every 2 minutes until toasted.
  • Add Kahlua and sugar; stir well.
  • Remove rind from top of Brie and discard rind.
  • Place Brie on microwave safe plate.
  • Spoon pecan mixture over top of Brie.
  • Microwave, uncovered, at high for 1 to 1 1/2 minutes or until soft, turning halfway through cooking.
  • Serve with Melba rounds or crackers.

2 tablespoons butter
1 teaspoon minced garlic
12 ounces sliced fresh mushrooms
1 (8 ounce) wedge Brie cheese, rind removed, cubed
1 (1 pound) loaf round sourdough bread
2 1/2 tablespoons grated Parmesan cheese

Steps:

  • Preheat the broiler.
  • In a saucepan over low heat, melt the butter. Saute the garlic and mushrooms until tender. Mix in the Brie. Cook and stir until melted and well blended.
  • Remove the top of the sourdough bread, and hollow out the center. Spoon the Brie mixture into the bread. Sprinkle with Parmesan cheese.
  • Place the filled bread on a baking sheet, and broil 10 minutes in the preheated oven, or until the top is lightly browned. Cool slightly, and slice into wedges to serve.
