BAKED FRENCH TOAST WITH BLUEBERRIES

Steps:
- Place an oven rack in the middle of the oven. Preheat the oven to 350 degrees F. Butter a 9 by 13-inch baking dish. Set aside.
- In a large bowl, beat the eggs until frothy. Add the milk, maple syrup, cinnamon, salt, and lemon zest. Add the bread cubes and mix until coated. Stir in the blueberries. Pour the mixture into the prepared baking dish.
- In a small bowl, mix together the remaining cinnamon and sugar. Sprinkle the cinnamon sugar over the egg mixture in an even layer. Bake for 40 to 45 minutes until the top is golden and the filling is set.
- Spoon onto serving plates and drizzle with maple syrup.
BLUE BRIE (BAKED BRIE WITH BLUEBERRIES)
I like having a baked brie at parties, always nice to find a new way to do it. This came via a demo table at my local grocery store a few years back. Dried blueberries can be quite expensive, I wonder if you could just dry your own in the oven. They should be easy enough to find in the bulk section and they do 'make' the dish so you can't leave them out. Nice for a special occassion (when calories don't count!). Serve with a selection of crackers or sliced baguette.

Steps:
- Preheat the oven to 375 degrees.
- Combine the brown sugar, pecans and blueberries in a bowl. Sprinkle the mixture with just enough water to moisten.
- Cut the top off the brie and score lightly in a criss-cross pattern. Place the brie in an oven safe shallow dish or bowl.
- Place the blueberry mixture over the top of the brie. Bake uncovered for about 30 minutes until the cheese is bubbly and heated through (test in teh middle as you would a cake, it 'should' come out gooey.
- Serve right out of the oven, lifting the brie onto a serving platter and surrounding it with crackers or bread.
- Microwave option: microwave on high for 3 minutes, reheat as necessary.
BAKED BLUEBERRIES
This recipe comes from The Doanleigh Inn in Kansas City, Missouri. I got it from a web site. I made some adjustments when I prepared it. I only used one cup of sour cream and 1 tablespoon of vanilla. I put on enough brown sugar to completely cover the blueberries, probably 1 to 1 1/4 cups. It really was quite delicious. The blueberries stay plump and juicy. One left over was quite good the next day, eaten cold. I suggest you play around with the proportions too. Very impressive dessert.

- Spoon the blueberries into 4, 4 oz oven proof ramekins.
- Mix the sour cream with the vanilla.
- Spoon over the blueberries.
- Top with the brown sugar.
- Broil 3 to 4 minutes, watching carefully.
- The brown sugar should melt and caramelize- DO NOT LET IT BURN.
- NOTE: This seems like a lot of brown sugar, but it is required.

BAKED APPLES AND BLUEBERRIES
Cool autumn weekend treat! I had a lazy Sunday afternoon and wanted to make a healthy treat to eat while watching football. Since I didn't have the more traditional cranberry accompaniment I used blueberries and was pleasantly surprised! My measurements are approximate because I just "eyeballed" my recipe.

Steps:
- Preheat oven to 350°F.
- Core apples with end of peeler.
- Generously sprinkle cinnamon in each apple, reserving some for topping.
- Place a few blueberries in each apple.
- Sprinkle dark brown sugar on top of blueberries.
- Layer with 1/2 pat of butter.
- Mound more blueberries on top.
- Sprinkle with remaining cinnamon.
- Place stuffed apples on glass baking dish and put a couple spoonfuls of water on bottom of dish.
- Bake for approximately 35 minutes or until fork soft.
- Serve whole or cut half way down into a fanning presentation.
- Substitute margarine for low-fat option.

BAKED OATMEAL WITH BANANA AND BLUEBERRIES

- Preheat oven to 350. Slice bananas and layer in an 8x8 buttered baking dish. Mix melted butter & cinnamon, pour over bananas. Cover with foil and bake 10 minutes. Allow to partially cool and mash bananas. while baking bananas, mix oats, 1/4 cup nuts, baking powder & salt. In a separate bowl, whisk bananas, honey, milk, egg and vanilla. Mix oat mixture with banana mixture. Fold in 1 1/2 cup blueberries. Pour into baking dish, sprinkle remaining nuts blueberries, and brown sugar over top. Bake for 30 to 45 minutes or until set. Serve warm.
BAKED PEACHES AND BLUEBERRIES

- 1. Preheat oven to 375°. Coat a 9 x 2-inch round baking dish with non-stick cooking spray.2. Place peaches and blueberries in a large bowl set aside.3. In a small bowl, stir coconut, splenda, flour, cinnamon and nutmeg. Add to fruit and stir until fruit is coated. Spoon into baking dish.4. Bake for 20 minutes. Stir. Cover dish loosely with foil. Bake 15 to 20 minutes longer or until very bubbly and peaches are tender. Uncover and cool slightly.5. Stir before serving serve warm.
