1 can (15 oz.) black beans, rinsed
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 Tbsp. chopped pimento s
1 pkg. (8 oz.) KRAFT Authentic Mexican Style Finely Shredded Cheeses, divided
1/3 cup finely chopped green onions

Steps:

  • Heat oven 350°F.
  • Mash beans in large bowl. Add cream cheese, sour cream and pimientos; mix well. Remove 1/2 cup of the cheese; refrigerate for later use. Stir remaining cheese into bean mixture. Spread into 1-1/2-qt. casserole sprayed with cooking spray.
  • Bake 20 min.; sprinkle with reserved cheese. Bake 5 min. or until cheese is melted and dip is heated through.
  • Sprinkle with onions.

This dip is a great starter for a Mexican Themed dinner night. I'm not too wonderful with "precise measurements", so please use the spices listed to you own taste. I sometimes will add diced, fresh tomatoes on top when they're in season. Also, some green onion on top is always nice too.

2 (15 ounce) cans black beans, drained and rinsed
8 ounces grated cheese, I like sharp cheddar
1/2 teaspoon cumin
1/4 teaspoon coriander
1/4 chili powder
cayenne pepper, to taste (optional)
1/2 cup sour cream (I use low fat)
1 -2 jalapeno, sliced (optional)
chopped fresh cilantro
shredded lettuce
tortilla chips, for scooping

Steps:

  • Mix black beans with cumin, coriander, chili powder and cayenne pepper and spread over the bottom of an over-proof baking dish.
  • I don't usually measure the spices, so please use them to your own taste.
  • (I'm a bit heavy handed with the cayenne pepper!) Sprinkle the grated cheese over top of the beans.
  • I usually sprinkle a little chili powder or cumin on top of the cheese to give it a little color.
  • Bake in preheated oven at 375°F for 10-15 minutes or until cheese is melted and bubbling slightly.
  • Remove from oven and spoon sour cream evenly over the top of the cheese.
  • Add shredded lettuce, jalapeños (if using), and top with fresh cilantro.
  • Serve immediately with nacho chips for dipping.

canola oil cooking spray;
1/4 C onion, diced;
2 cloves garlic, minced;
1 small tomato, seeded, chopped;
1 T lime juice;
3/4 C shredded, reduced fat cheddar cheese;
1/4 t salt;
1/4 C minced cilantro;
1/4 t cumin;
1/3 C water;
12 whole grain flour tortillas

Steps:

  • Spray large skillet with canola oil spray and place over medium-high heat. Add onions and garlic and saute until translucent and fragrant. Put onion mixture, beans, tomato, salt, cilantro, lime juice, and cumin in food processor. Process until smooth. Add enough water to make a fairly thin dip -- it makes the serving seem larger and it covers more chips. Serving size -- 2 T. Nutrition information per serving: Calories -- 50; protein 4.5 g; sodium 254 mg; cholesterol 3.8 mg; carbohydrates 7 g. To make tortilla chips, take multi-grain flour tortillas in the soft taco size. Moisten slightly with water, cut into 16 wedges each. Spread them out on a cookie sheet and sprinkle lightly with salt (approximately 1/4 t. salt per tortilla total). Bake at 500 degrees until crispy. Remove from cookie sheet and let cool on a rack. Serving size is 16 chips. Nutrition information per serving: Calories 140; protein 5 g; sodium 460 mg; cholesterol 0 mg; fat 4 g; carbohydrates 23 g. Carrots Nutrition information per serving of 10: Calories 40; Protein 1 g; sodium 45 mg; fat 0 g; carbohydrates 9 g.
