EASY BAKED BEEF BRISKET
For a brisket recipe, this is considered very fast. The convention of cooking it low and slow often results in dried-out meat that never reaches the proper internal temperature. Instead of waiting all day and risking such disappointment, we dial up the temperature slightly and bake it in about half the time to ensure it's both tender and moist. Garnish with chives if desired.

- Season both sides of the brisket generously with salt, pepper, and cayenne. For best results, place brisket over an aluminum foil "rack" set over a plate and refrigerate, uncovered, 8 to 12 hours.
- Preheat the oven to 325 degrees F (165 degrees C).
- Melt butter in a saucepan over medium heat. Add onion and salt. Cook and stir until translucent, about 5 minutes. Stir in garlic, rosemary, and apple juice. Increase heat to high and boil until liquid is reduced by about half, about 3 minutes.
- Transfer half of the apple-onion mixture into a baking dish. Place brisket fat-side up on top; cover with remaining apple-onion mixture. Cover baking dish tightly with foil.
- Bake in the preheated oven for 1 hour 30 minutes. Reduce oven temperature to 250 degrees F (121 degrees C) and bake until fork-tender, about 2 hours 15 minutes. Check for doneness after 2 hours.
- Transfer brisket to a plate and tent with foil.
- Pour the onions and braising liquid into a large measuring cup or bowl. Skim some fat off the top. Puree with a stick blender to create a gravy.
- Slice brisket across the grain and serve with the gravy.

BAKED HAM IN A BLANKET
My Mom prepared ham using this recipe for holidays or special occasions, and it always made the house smell wonderful. I remember watching her 'crack' the blanket off the ham, which both flavored it and kept it extremely moist. I've eaten it many times, but haven't made it myself yet.

- Preheat oven to 350F; Make a spice dough, combining the flour, sugar, and spices in a large mixing bowl; add enough water or cider to make a stiff dough; roll until it is 1/4" thick and forms a 10x12" rectangle.
- Place the ham, fat side up, in a foil-lined open roasting pan; cover top and sides of ham with "blanket" of dough; bake at 350F for 3 hours (tent with foil if crust becomes too brown).
- Remove ham; discard "blanket" crust; let rest for 15 minutes. Slice ham; serve warm or cold.

- Preheat oven to 180C fan forced (200C normal).
- Whisk the soy, worcestershire, flour, seasonings, bay leaves and thyme sprigs in a casserole dish (or heavy bottomed pot that can go into the oven).
- Briefly cook over a medium heat until the flour has dissolved.
- Add the cubed beef, garlic, carrot, (potatoes and celery if using), onion, red wine and beef stock.
- Stir with a wooden spoon, cover and cook in the oven for about 1 1/2 hours until the beef is tender, stirring a couple of time.
- Taste the sauce for seasoning and adjust if required.
- If not using the potatoes serve with mashed potatoe or rice.
TWO-INGREDIENT DOUGH PIGS IN A BLANKET

- Preheat the oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper.
- Place Greek yogurt in a large bowl. Add flour and stir until crumbly. Dust a cutting board with flour. Add dough mixture to the cutting board and knead until smooth, about 5 minutes.
- Whisk egg and water together in a separate bowl.
- Roll dough into a 12x6-inch rectangle. Cut dough in half lengthwise. Cut crosswise into 1-inch strips to form 24 strips.
- Wrap 1 dough strip around a cocktail wiener and place seam side down onto the prepared baking sheet. Repeat with remaining cocktail wieners.
- Brush egg wash evenly over dough. Sprinkle each pig in the blanket with everything bagel seasoning.
- Bake in the preheated oven until browned, about 15 minutes.
