(Recipe video above) Southern baked beans in a thick savoury sauce with a touch of sweet and hint of tang. Loaded with BACON! Serve as a side, or have it for breakfast with bacon and eggs. It even makes a hearty meal itself - great for slopping up with bread!

1 tbsp oil
150g/ 5 oz bacon (, chopped)
1 medium onion (, finely chopped)
3 cloves garlic (, minced (or 1 1/2 tsp garlic paste))
3 x 400g / 14oz cans red kidney or other beans, drained and rinsed ((Note 1))
3/4 cup ketchup ((Note 2))
3/4 cup tomato passata / US tomato puree ((Note 3))
1/4 cup molasses ((Note 4))
2 tbsp cider vinegar
3/4 cup water
2 tsp mustard powder ((or 1 tbsp Dijon or American mustard))
1 1/2 tsp Worcestershire sauce
1/2 tsp cayenne pepper
3/4 tsp EACH salt & pepper (, plus more to taste)

Steps:

  • Heat oil over high heat (can skip oil if bacon is super fatty). Add bacon and cook for 2 minutes.
  • Add onion and garlic. Cook for 3 minutes until onion and bacon are golden.
  • Add remaining ingredients. Stir, bring to simmer, then place lid on.
  • Then either turn down heat to medium low (simmering gently) and cook on the stove for 1 hour, stirring every now and then so the bottom doesn't catch. OR bake at 160°C/325°F for 60 minutes.
  • SLOW COOKER option: Reduce water to 1/4 cup, transfer to slow cooker and cook for 6 hours on low.
  • The sauce should be thickened (cook with lid off for a bit if not thick enough) and glossy. Adjust salt and pepper to taste at the end. See notes for serving suggestions!

1 pound bacon
1 large yellow onion, finely diced
4 (14-ounces each) cans Pork and Beans
1/2 cup dark molasses
1/4 cup light brown sugar
1/4 cup ketchup
2 tablespoons prepared yellow mustard
2 teaspoons Worcestershire sauce

Steps:

  • Preheat the oven to 350ºF.
  • Dice the bacon, then add to a large skillet over medium-high heat. Cook until crisp. Remove from the pan using a slotted spoon to a plate lined with paper towels.
  • Add the onions to the pan with the bacon drippings and saute until translucent and soft.
  • In a large bowl, combine the beans, molasses, brown sugar, ketchup, mustard and Worcestershire sauce. Stir in the cooked onions and the bacon.
  • Pour the beans into a 3-quart baking dish. Bake, uncovered, for 45 minutes, or until heated through and bubbling.

2 cups dried navy or cannellini beans, soaked overnight
2 medium onions, 1 halved, 1 thinly sliced
1 Parmesan rind (optional), plus
1/2 cup finely grated Parmesan
1 head garlic, halved crosswise, plus 4 cloves, finely chopped, divided
2 bay leaves
2 teaspoons kosher salt, plus more
8 ounce slab bacon, cut into 2x1/4" pieces
1 large shallot, thinly sliced
4 sprigs thyme plus 1 tablespoon leaves
Freshly ground black pepper
1/4 cup dry white wine
1 1/2 cups coarsely torn fresh breadcrumbs
2 tablespoons olive oil

Steps:

  • Drain beans and place in a large heavy pot along with halved onion, Parmesan rind (if using), halved head of garlic, bay leaves, and 2 teaspoons salt. Add water to cover by 2". Bring to a boil, reduce heat, and simmer until beans are tender, 1-1 1/2 hours.
  • Meanwhile, cook bacon in a large skillet over medium heat, turning occasionally, until brown and most of fat has rendered, 8-10 minutes. Transfer to a plate with tongs or a slotted spoon.
  • Add thinly sliced onion, shallot, thyme sprigs, and three-fourths of chopped garlic to pan drippings in skillet; season with salt and pepper. Cook, stirring occasionally, until onion is starting to caramelize and is very soft, 10-15 minutes. Add wine, bring to a simmer, and cook, stirring occasionally, until liquid is almost completely evaporated, about 4 minutes. Remove from heat and pluck out thyme sprigs.
  • Preheat oven to 400°. Drain beans, reserving cooking liquid. Transfer beans to a large bowl and mix in bacon, onion mixture, thyme leaves, and 1 1/2-2 cups cooking liquid (this will be most of it; mixture should be consistency of stew); season with salt and pepper. Transfer beans to a shallow 1 1/2-quart baking dish.
  • Mix breadcrumbs, oil, and remaining chopped garlic in a medium bowl; season with salt and pepper. Scatter over beans; bake until liquid is thickened and bubbling and crumbs are golden brown, 45-55 minutes. Let cool slightly before serving.
  • Do ahead: Beans can be baked 5 days ahead. Let cool; cover and chill.

6 slices bacon
2 (16 ounce) cans baked beans
1 onion, diced
¼ cup yellow mustard
¾ cup ketchup
1 cup packed brown sugar
1 Granny Smith apple - peeled, cored and diced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cook bacon in a large skillet or in the microwave until much of the grease has been released, but the bacon is still flexible. Drain on paper towels and set aside.
  • In a 9 inch square baking dish, stir together the baked beans, onion, mustard, ketchup, brown sugar and apple. Top with slices of bacon.
  • Bake uncovered for 45 minutes in the preheated oven, until the bacon is crisp and beans are bubbling hot.

6 strips thick-cut bacon
Three 16-ounce cans regular pork and beans
1/2 cup ketchup
1/4 cup molasses
1/4 cup brown sugar
2 tablespoons dry mustard
1/2 medium onion, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the bacon to a large skillet and fry over medium heat until browned, 8 to 10 minutes. Remove the bacon to a paper towel-lined plate and remove all but 4 tablespoons bacon fat from the skillet.
  • Add the beans, ketchup, molasses, brown sugar, dry mustard and onions to an 8-by-8-inch casserole dish. Add in the bacon fat from the skillet. Lay the reserved bacon strips on top of the bean mixture. Bake until heated through, 30 to 45 minutes.

Steps:

  • Combine green beans and 1/2 cup water in a medium pot. Cover, and bring to boil. Reduce heat to medium, and let beans cook for 10 minutes, or until tender. Drain well.

1 Tbsp vegetable oil
8 oz smoked ham or tasso, diced
1 small onion, chopped
2 clove garlic, minced
2 c ketchup
1 c light brown sugar, packed
3/4 c molasses, light in color (not light in calories)
1/2 c whole grain mustard
1/4 c worcestershire sauce
1 Tbsp hot pepper sauce
1/2 tsp crushed red pepper flakes
4 c water
3 can(s) navy beans (15 oz), drained and rinsed
4 oz bacon
1 c panko bread crumbs

Steps:

  • 1. Preheat the oven to 350°.
  • 2. Heat oil in a large heavy wide pot over high heat; add ham, onion, and garlic. Cook, stirring often, until the onion caramelizes, about 5 minutes. Reduce the heat to low. Add ketchup, brown sugar, molasses, mustard, Worcestershire sauce, hot pepper sauce, red pepper flakes, and water to pot. Season with salt and pepper. Let the sauce simmer until slightly thickened, for 10 to 15 minutes. Stir the beans into the sauce.
  • 3. Cover and bake the beans until the juices are bubbly and thickened, about 2 hours.
  • 4. Meanwhile, place the bacon slices on a rimmed baking sheet. Roast in the oven until crisp, for 10 to 15 minutes. Place on paper towels to drain. Let the bacon cool and reserve 1 tbsp bacon drippings separately.
  • 5. Coarsely crumble the bacon; place in a food processor with reserved drippings and panko; pulse until the bacon is finely chopped. Season with salt and pepper.
  • 6. Remove the beans from the oven. Preheat the broiler. Sprinkle the beans with the bacon breadcrumbs. Broil, uncovered, until the crumbs are golden brown, 8-10 minutes.

4 slices thick-sliced bacon, diced
1 cup minced onion
2 (15 ounce) cans pinto beans, rinsed and drained
1 (15 ounce) can crushed tomatoes
1/2 cup ketchup
1/2 cup brown sugar
3 tablespoons Worcestershire sauce
3 tablespoons prepared yellow mustard
2 -3 slices rye bread, buttered, pulsed in food processor

Steps:

  • Preheat oven to 400 degrees.
  • Brown bacon in cast iron skillet over medium heat until crisp. A regular large frying pan will work, but you'll need to use an oven-proof pan or transfer to casserole dish.
  • Drain bacon on a plate covered with paper towel.
  • Pour off bacon drippings from skillet reserving 1 tablespoon.
  • Sweat onion in the tablespoon of drippings until soft.
  • Add remaining ingredients (but not the bread crumbs) along with bacon pieces; stir to mix.
  • Sprinkle crumbs on top of beans; bake in your preheated, 400 degree oven until nice and bubbly. I check after about 20 minutes. I put my beans in a casserole dish in lieu of the skillet.
  • You may bake the beans in individual serving dishes. Simply top each with crumbs and bake as above.
