RANDY'S OVEN BAKED BBQ PORK CHOPS

Randy's Oven Baked BBQ Pork Chops image

I LUV bbq, but there are times when the weather here in WI doesn't want to co-operate & I can't grill or bbq outdoors. I came up with this on one of those "uncooperative" days. Turned out pretty good!!! Hope you try & like it, too!!! PLEEZ choose chops that have some fat on them...rib chops, preferred. I'll argue this with anyone, cuz fat adds flavor & helps keep the meat moist. NOTE: Cooking time does NOT include marinade time

Time 2h55m

Yield 6 chops, 6 serving(s)

Number Of Ingredients 8

6 thick pork rib chops, about 1/2 to 3/4 in. thick
1 (12 ounce) bottle Lawry's mesquite marinade
3/4 cup barbecue sauce (I use Sweet Baby Ray's original)
1/2 cup chili sauce
3 tablespoons soy sauce
1 tablespoon molasses
3 tablespoons light brown sugar
1 -2 tablespoon jack daniel's whiskey (optional)

Steps:

  • Place chops in a zip-lock bag...pour in marinade...close bag, removing as much air as possible. Marinade overnight.
  • Next day, preheat oven to 325°.
  • Remove chops & drain off excess marinade, but do NOT rinse.
  • Select a 4-sided pan large enough to hold the chops & coat with cooking spray. Place chops in pan & cover pan tightly with foil.
  • Bake for 2 hours.
  • While chops are baking, mix together remaining ingredients EXCEPT THE WHISKEY, in a medium saucepan.
  • Heat over med-high heat, stirring often until just starting to boil.
  • Remove from heat & cover until needed.
  • When chops are done baking, remove foil & drain off as much fat from pan as possible.
  • Stir the Jack Daniel's Whiskey into the sauce.
  • Using tongs, dip each chop into the sauce & place back into pan.
  • Return pan to oven & bake Uncovered for 15-20 minutes or until glaze has set.

Homemade BBQ Baked Pork Chops image

This is one of my husband's most favorite main dishes. It is fall-off-the-bone tender and is easy to prepare and as delicious as it looks. Especially good served over steamed rice.

Time 26m

Yield 4 chops, 4 serving(s)

Number Of Ingredients 8

16 ounces pork chops, trimmed of fat (approx. 12oz)
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
3 teaspoons extra virgin olive oil
1 medium onion, diced
1 tablespoon garlic, minced
1/3 cup reduced-sugar orange juice
1/2 cup reduced-sugar barbecue sauce

Steps:

  • Preheat oven to 400 degrees.
  • Season pork chops lightly with salt and pepper.
  • Heat 2 tsp of oil in a large skillet over high heat. Add the pork chops to pan.
  • Cook until they are lightly brown (1 to 2 minutes per side). Transfer to a plate (or anywhere but your frying pan).
  • Add the remaining 1 tsp oil to the pan (same one the pork was in - toss it right in, don't clean the pan). Add onion and garlic and cook, stirring, until softened (3 to 4 minutes).
  • Add orange juice and cook until most of the liquid has evaporated (about 1 minute). Stir in barbecue sauce.
  • Return the pork chops to the pan, turning several times to coat with the sauce. I just used a fork and rubbed the pork chop around, flipped, and repeat.
  • If you have an oven proof pan - just leave all of the chops in that to bake with the extra sauce. I do not own one of those gems, so I transferred my chops to a baking dish and poured the extra sauce on top.
  • Bake for 10-12 minutes, or until the pork chops are not pink in the middle.
