BAKED PEARS WITH WINE AND WALNUT CREAM



Baked Pears with Wine and Walnut Cream image

Sweet, fruity dessert. Garnish with orange peel and walnuts if desired.

4 pears, peeled
10 fluid ounces red wine, or more to taste
½ cup dark brown sugar, packed
1 vanilla bean, split and seeds scraped out and reserved
1 orange, peeled and juiced (peel reserved)
7 ounces shelled walnuts, divided
½ cup heavy whipping cream
½ cup sour cream
1 orange, zested and juiced
2 teaspoons dark brown sugar, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange pears in an oven-proof pan with a tight-fitting lid; add red wine, 1/2 cup brown sugar, vanilla bean and seeds, and the peel and juice of 1 orange. Bring pear mixture to a boil; sprinkle with half the walnuts.
  • Bake the pear mixture in the preheated oven until pears are tender, 20 to 30 minutes, basting pears with red wine syrup every 10 minutes. Remove from oven and cool; remove the vanilla bean and orange peel from the red wine syrup.
  • Arrange the remaining walnuts on a baking sheet and bake in the preheated oven until toasted and fragrant, 5 minutes.
  • Place the toasted walnuts in a food processor and pour in the red wine syrup; pulse until paste-like consistency. Transfer to a bowl. Whisk cream, sour cream, zest and juice of 1 orange, and 2 teaspoons brown sugar into walnut-red wine paste until smooth.
  • Serve walnut-cream sauce over baked pears.

This bread is the best banana bread I have ever made. I didn't have enough of the ingredients I needed for banana bread so I improvised and the outcome was wonderful! I have to post this one so I will remember how to make it again. Entire family loved it.

1 cup butter or 1 cup margarine
1 cup sugar
1 cup Splenda granular (sugar substitute)
4 eggs
2 teaspoons vanilla
3/4 teaspoon orange extract
2 bananas (very ripe)
1 (15 ounce) can diced canned pears (drained)
3 cups flour
2 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 cup sour cream
2/3 cup chopped pitted dates

Steps:

  • Preheat oven to 350.
  • Grease 2 loaf pans.
  • In a large bowl cream together butter, sugar, Splenda, vanilla, orange extract, and eggs.
  • Put into your blender 2 peeled bananas and half the can of pears (not juice). Puree.
  • Stop blender and add cinnamon and enough pears to equal 2 cups of puree total. Blend again until all is smooth.
  • Add the flour, soda and salt to the bowl of creamed butter and sugar mixture.
  • Now add the fruit puree and the sour cream to the mixture and mix well.
  • Fold in chopped dates.
  • Scoop half the batter into each loaf pan and bake for about 1 hour.
  • After 1 hour test center of loaf with a toothpick, if it comes out clean your bread is done, if not bake another 10 minutes and try again.
  • Cool for at least 30 minutes before serving.

  • Preheat oven to 400°F. Slice pears (either with a very sharp knife or in food processor with the slicing blade) 1/8-inch thick. Spread pears in a single layer on a nonstick baking sheet and sprinkle with Splenda, cinnamon and allspice. Bake until crisp, about 9 to 12 minutes.

1 ripe Asian pear, cored and quartered
1 ripe banana, halved crosswise, then lengthwise
1 tablespoon unsalted butter, softened
1/2 cup pitted dates, (6 large or 12 small)
2 teaspoons freshly squeezed lemon juice
1/4 teaspoon ground cinnamon
1 ounce (1/4 cup) walnut halves, toasted
1/4 cup plain low-fat yogurt

Steps:

  • Preheat oven to 375 degrees. Put pear wedges in an 8-inch baking dish. Cover with foil, and bake until beginning to soften, about 20 minutes. Add banana; dot with butter. Bake, uncovered, until fruit is softened and pale golden, 20 to 25 minutes more.
  • Process dates, lemon juice, and cinnamon in a food processor until dates are coarsely chopped. With machine running, gradually add 1 cup cold water; process until smooth. Transfer to a saucepan. Bring to a simmer over medium-high heat; cook until thickened, 3 to 5 minutes. Serve immediately, or refrigerate, airtight, up to 2 days; reheat before serving.
  • Divide fruit between 2 plates. Drizzle with date sauce; sprinkle with walnuts. Top each with 2 tablespoons yogurt.
