A very easy summer dessert with only 3 ingredients. You can easily make this for more people- count about 2 to 3 apricots and 1 tablespoon chopped almonds and sugar per person. Serve warm or at room temperature with whipped cream or vanilla ice cream.

12 fresh apricots, pitted and cut into wedges
4 tablespoons finely chopped almonds
4 tablespoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place almonds on a baking sheet and bake in the preheating oven until fragrant, about 5 minutes.
  • Place apricot wedges in an overlapping pattern in individual gratin dishes or a baking dish. Mix almonds and brown sugar and scatter over apricots.
  • Bake in the preheated oven until apricots are bubbly, 20 to 25 minutes.

1/3 cup sugar
2/3 cup slivered almonds, slightly toasted
6 tablespoons butter
1 eggs
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1 1/2 tablespoons flour
1 sheet frozen puff pastry, thawed
6 fresh or canned apricot halves, pits removed
1/4 cup whole almonds, skin on
Confectioners' sugar, for garnish

Steps:

  • Preheat oven to 425 degrees F.
  • To make the frangipane, place the almonds and the sugar in a food processor and grind until sandy. Add the butter and continue mixing then add the egg, vanilla, and the flour and mix until smooth.
  • To make the tart, on a floured work surface pass your rolling pin over the pastry just to flatten any ridges.
  • Place it on a parchment paper lined sheet pan and cut out a 9-inch disk. Spread the almond frangipane in the center of the tart leaving a 1-inch border. Firmly place the apricot halves into the frangipane spacing them evenly around the tart. Dot the spaces between the apricots with the whole almonds.
  • Bake until golden brown on the top and puffy, about 30 to 40 minutes. Sprinkle with powdered sugar and serve.

1 1/4 cups rolled oats
1/4 cup rice flour
1/4 cup whole-wheat flour or toasted flaxseeds, coarsely ground
1/3 cup turbinado sugar
1/2 teaspoon freshly grated nutmeg
1/8 teaspoon salt
3 ounces (6 tablespoons) cold unsalted butter, cut into 1/2-inch pieces
2 pounds apricots, cut in half, stones removed
3 tablespoons mild honey or dark agave nectar
1/2 teaspoon cinnamon
1/2 teaspoon cornstarch
1/4 cup lightly toasted slivered almonds
1 teaspoon vanilla extract
1/4 teaspoon almond extract

Steps:

  • First make the topping. Preheat the oven to 350 degrees. Cover a baking sheet with parchment. Place the oats, rice flour, whole-wheat flour or ground flaxseeds, turbinado sugar, salt and nutmeg in a food processor fitted with the steel blade and pulse several times to combine. Add the butter and pulse until the butter is evenly distributed throughout the grain mix. The mixture should have a crumbly consistency.
  • Spread the topping over the parchment-covered baking sheet in an even layer. Place in the oven and bake 10 minutes. Rotate the pan, stir the mixture, and bake another 10 minutes, until nicely browned. Remove from the heat and allow to cool. You can keep this in an airtight container or freezer bag in the freezer for several weeks.
  • Raise the oven heat to 400 degrees. In a large bowl, toss together the apricots, honey or agave nectar, cinnamon, cornstarch, slivered almonds, vanilla and almond extract. Cover and let sit for 15 minutes.
  • Butter a 2-quart baking dish. Scrape the fruit and all of the juice in the bowl into the baking dish. Spread the crumble topping over the apricots in an even layer. Bake 20 minutes, or until the fruit is bubbling and the topping is nicely browned. Remove from the heat and allow to cool for at least 10 minutes before serving.

2 cup(s) all-purpose flour
1 cup(s) confectioner's sugar
3/4 cup(s) butter
TOPPING
3/4 cup(s) apricot preserves
2 - egg whites
1 cup(s) confectioner's sugar
1 teaspoon(s) almond extract
1/2 cup(s) slivered almonds, toasted

Steps:

  • Heat the oven to 350 degrees F. Line the bottom of a 13 x 9 inch baking pan with aluminum foil, extending the foil over the long sides of the pan. Lightly spray the foil with nonstick cooking spray.
  • Combine the flour, confectioner's sugar and butter in a large bowl. Cut in the butter with a pastry blender until mixture resembles coarse crumbs. Press into the baking pan, pressing about 1/2 inch up the sides. Bake 15-20 minutes or until the edges begin to brown.
  • While the crust is baking, toast the almonds. Place the almonds on a small baking dish and bake about 8 minutes (watch carefully). Beat egg whites with a whisk until foamy. Beat in the confectioner's sugar and almond extract.
  • Spread the apricot preserves over the crust. Spoon the egg white mixture over the preserves without covering the preserves completely. Sprinkle with almonds.
  • Bake 15-18 minutes or until the topping is golden brown. Run a metal spatula along the short sides of the pan to loosen the pastry. Cool completely on a wire cooling rack. Using the foil, life the pastry from the pan and cut into 24 bars. To cut diamonds, cut lengthwise into 6 strips. Make parallel diagonal cuts on each strip to form diamonds.

3 cans (15 oz each) apricot halves in extra-light syrup, well drained
3/4 cup sugar
3 tablespoons butter, melted
1 1/2 teaspoons almond extract
1/2 cup sliced almonds
1 cup plus 3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup 1% low-fat milk

Steps:

  • Heat oven to 375°F. Spray 2-quart casserole with cooking spray.
  • In casserole, stir together apricots, 1/4 cup of the sugar, half of the melted butter and the almond extract. Sprinkle with 1/4 cup of the almonds.
  • In medium bowl, mix flour, baking powder, salt, milk, 2 tablespoons almonds, and remaining melted butter and 1/2 cup sugar with whisk until smooth. Pour topping evenly over apricot mixture. Sprinkle with remaining 2 tablespoons almonds.
  • Bake 40 minutes or until top is lightly browned. Serve warm.
