4 - baking apples
1/3 cup(s) raisins
1 teaspoon(s) cinnamon for sprinkling
1 cup(s) apple juice
CASHEW CREAM
1/2 cup(s) raw, unsalted cashews
3 tablespoon(s) pure maple syrup
2 teaspoon(s) vanilla extract
- water

Steps:

  • Wash apples and remove cores without cutting through the bottoms of the apples. Slit the skin around the middle of each apple to prevent bursting while they bake.
  • Place apples in baking dish. Stuff each apple with raisins, sprinkle with cinnamon and fill with apple juice. Pour remaining juice in the bottom of the baking dish. Bake in a preheated 400ยบ oven for 30 minutes.
  • TO PREPARE THE CASHEW CREAM: Grind nuts in a blender until pulverized. With the machine running, add the maple syrup, vanilla, and a tablespoon of water. Add more water a little at a time until you have the consistency you desire. Top baked apples with cream to serve.

6 medium baking apples, such as Boskop, Braeburn, Fuji, or Gala
4 to 6 dried figs
1/4 cup chopped almonds, toasted
1 cup sugar
1/3 cup plus 2 tablespoons butter
1 tablespoon heavy cream or creme fraiche
Juice of 1 lemon
Serving suggestion: cinnamon whipped cream or creme fraiche

Steps:

  • Preheat the oven to 350 degrees F.
  • Core the apples. Using a paring knife, score a ring around the midriff of each apple, just cutting through the skin to prevent the apples from bursting during baking. Stuff the apples with the figs and almonds. Set on a baking sheet, and bake until puffed up and soft all the way through, about 30 minutes.
  • Meanwhile, put the sugar in a saucepan with a spoonful of water, and boil to a golden caramel, about 5 minutes, depending on how much water you've added. Do not stir the sugar with a spoon, gently swirl the saucepan over the heat until the desired color. You want a nice rich caramel color, but don't let it get too dark.
  • Serve the baked apples warm from the oven with the sauce poured over and with a generous slump of cinnamon whipped cream or creme fraiche on the side.

6 ounces amaretti cookies
1/2 cup vin santo or Marsala wine
1/4 cup sugar
1 cup heavy cream
6 apples, cored
1 tablespoon butter

Steps:

  • Soak 4 ounces of amaretti cookies in the wine until very soft.
  • Meanwhile, dissolve sugar in saucepan over moderate heat, stirring.
  • In separate saucepan, heat 1/2 cup heavy cream until it boils. When sugar has dissolved and browned, add boiling cream, mixing well. Scrape down sides and corners of saucepan. Let cool.
  • Preheat oven to 350 degrees.
  • Whip the remaining 1/2 cup cream until firm. Reserve Y of the whipped cream for decorating. Add the rest to the cooled sauce.
  • Fill each apple with the soaked amaretti. Put apples in a greased baking dish and add water to a depth of 1/8 inch. Place in the oven and bake about half an hour, until the apples are tender but still firm.
  • Remove from the oven and let cool. Arrange the apples in a deep serving dish. Pour cream sauce over them and pipe reserved whipped cream around them. Crumble the remaining amaretti cookies and sprinkle over all.
