Sugarcane Baked Ham with Spiced Apples and Pears image

12 sugarcane swizzle sticks, each cut into about 3-inch pieces
1 hickory smoked ham, spiral sliced, 8 to 10 pounds (no bone, water added, cooked)
1 cup firmly packed light brown sugar
1 cup Steen?s 100 percent Pure Cane Syrup
1/2 cup dark molasses
1/2 cup dark corn syrup
1/8 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1 teaspoon dry mustard
1/4 cup water
1 1/2 pounds (about 4) Granny Smith apples
1 1/2 pounds (about 4) Bartlett pears

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a shallow baking pan with parchment or waxed paper. Insert the sugarcane sticks into the ham at 3 to 4-inch intervals. Tie the ham, using kitchen twine, horizontally and vertically, like a package, to hold it together. Place it on a wire rack in the baking pan.
  • In a mixing bowl, combine all of the glaze ingredients together except for the mustard and water. Mix well. In a small bowl, dissolve the mustard in the water, then add to the spice mixture. Blend well.
  • Brush the entire ham with the glaze, coating it evenly. Wash, core, and halve the fruit. Place all around the ham. Baste the ham a second time and baste the fruit with the glaze. Bake for 45 minutes. Baste the ham and fruit again. Bake another 45 minutes. Remove the ham from the oven and let it rest for 5 minutes. Remove and discard the string and swizzle sticks. Serve the apples and pears on a platter with the ham. Serve everything warm or at room temperature.

This is a healthy dessert ideal for using up pears, apples, oranges and lemons that may be left in the fruit bowl. Serve warm as a light dessert with Greek yoghurt, or eat chilled with a bowl of granola for a healthy start to the day. This recipe is also good for children!

2 pears, very ripe, peeled, cut into quarters and cored
2 apples, peeled, cut into quarters and cored
1 stick cinnamon, broken in half
1 pinch nutmeg, grated
3 ounces raisins
1 lemon, juice and zest peeled into strips with a vegetable peeler
3 oranges, juice, zest from 1 orange peeled into strips

Steps:

  • Preheat the oven to 350°F
  • Place the pear and apples quarters in a flameproof dish with the cinnamon stick, nutmeg, raisins, lemon and orange juice with the zest strips.
  • Cover the dish with foil and bake in the oven for about 35-40 minutes or until the fruit is just soft.
  • Serve warm with creme fraiche or yogurt.

1 teaspoon dry mustard
1/4 cup water

1 1/2 pounds (about 4) Bartlett pears
2 dozen medium buttermilk biscuits

Steps:

  • Preheat the oven to 350 degrees F. Line a shallow baking pan with parchment or waxed paper. Insert the sugarcane sticks into the ham at 3 to 4-inch intervals. Tie the ham, using kitchen twine, horizontally and vertically to keep it together, like wrapping a gift. Place on a wire rack in the baking pan. In a mixing bowl, combine all of the ingredients together except for the mustard and water. Mix well. In a small bowl, dissolve the mustard in the water, then add to the spice mixture. Blend well. 3 Pears
3 Apples
4 teaspoons Vanilla sugar
2 tablespoons Turbinado sugar
2 teaspoons Cinnamon
1/2 teaspoon Nutmeg
1/4 cup Craisins
1/2 cup Apple cider

Steps:

  • Heavily butter a baking pan. Mix sugars and spices together in a small bowl. Peel and slice into thick wedges (apples - 8; pears - 6). Layer apples and pears in bottom of pan. Top with 1/2 the sugar mixture. Add rest of fruit and top with rest of sugar mixture and the craisins.
  • Bake at 350 for 20 minutes. Then add cider and bake another 15 minutes.
