1/4 lb butter
1 cup heavy cream
3/4 cup parmesan cheese
2 -3 pinches nutmeg
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1 (20 ounce) package cheese tortellini, prepared
1/2 cup fresh shredded parmesan cheese
1/3 cup Italian seasoned breadcrumbs

Steps:

  • Prepare tortellini or other favorite pasta slightly al dente in salted water. Drain.
  • Preheat oven to 400ºF.
  • Warm butter and cream in a sauce pan until butter is melted. Add parmesan cheese and spices.
  • Pour pasta into a 2qt casserole dish with a lid. Pour alfredo sauce over pasta and stir to combine.
  • Sprinkle shredded parmesan and bread crumbs over pasta and cover.
  • Bake for 10 minutes, then uncover and bake an additional 10 minutes or until top is brown and crusty.

This recipe is quick and easy and any novice cook can do it. It was made for the little ones who always wanted to order out at Pizza Hut® or Olive Garden®. Serve with additional Parmesan cheese if desired. This recipe can also be eaten without being baked but the kids love that it resembles baked casseroles found in restaurants.

1 (16 ounce) package penne pasta
½ cup butter
2 teaspoons minced garlic
1 (8 ounce) package cream cheese, softened
2 cups milk
6 ounces grated Parmesan cheese, divided
2 teaspoons dried parsley
1 teaspoon Italian seasoning
1 teaspoon salt, divided
½ teaspoon ground black pepper
1 teaspoon olive oil
2 chicken breasts, patted dry
½ teaspoon garlic powder

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Melt butter in a large saucepan over medium-high heat. Add minced garlic; saute until golden, about 30 seconds. Stir in cream cheese until smooth. Add milk; stir until there are no lumps. Lower heat to medium. Add 3/4 of the Parmesan cheese, parsley, Italian seasoning, 1/2 teaspoon salt, and black pepper. Simmer, stirring occasionally, until sauce is smooth, about 5 minutes. Remove from heat.
  • Heat olive oil in a large skillet over low heat. Season chicken with 1/2 teaspoon salt and garlic powder on both sides. Cook chicken breasts until no longer pink in the center and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), about 6 minutes per side. Cut chicken into 1/2-inch cubes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Butter bottom and sides of a 9x13-inch casserole dish. Cover bottom with a layer of pasta. Place half of the chicken cubes on top. Pour 1/2 of the sauce over the chicken. Repeat layering pasta, chicken, and sauce. Sprinkle top with remaining Parmesan cheese. Cover with aluminum foil.
  • Bake in the preheated oven until sauce is bubbly, about 15 minutes. Remove aluminum foil and bake until cheese is golden, about 5 minutes more.

1 (8 -12 ounce) package pasta (I use fettucine or rotini)
2 -3 cups broccoli, chopped
4 tablespoons butter
2 tablespoons flour
1 1/3 cups milk
1/4 cup romano cheese, shredded (or parmesan)
salt and pepper

Steps:

  • Cook pasta according to package directions and drain.
  • Meanwhile, steam broccoli until tender, but still crisp, about 5 minutes, and drain.
  • In a large saucepan, melt butter over medium heat.
  • Whisk in flour until smooth.
  • Gradually whisk in milk.
  • Bring to a boil, and cook and stir for 2 minutes or until thickened.
  • Season with salt and pepper.
  • Remove from heat and stir in the cheese and broccoli.
  • Toss with the pasta to coat.

This is an amazingly cheese-rich dish. I love making this to take to friends' homes as a drop off meal. It gets rave reviews every time! The recipe is adapted from a restaurant in the Mall of America called Tucci Benucch. I attended the restaurant at a business meeting and they gave us a recipe for the baked spaghetti that I have made a few changes to. My husband prefers it without the marinara/meatball topping, but if you're looking to stretch the recipe that's a great way to do it.

1 pound spaghetti
1 pound shredded mozzarella and provolone cheese blend
2 (16 ounce) jars Alfredo sauce (such as Ragu®)
½ cup ricotta cheese
½ cup grated Parmesan cheese
3 eggs
1 (16 ounce) jar marinara sauce, or to taste
1 (16 ounce) package frozen cooked meatballs, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until halfway cooked through, about 6 minutes. Drain.
  • Stir provolone cheese blend, 1 jar Alfredo sauce, drained spaghetti, ricotta cheese, Parmesan cheese, and eggs together in a bowl. Pour into prepared baking dish. Cover the dish with aluminum foil.
  • Bake in the preheated oven until hot and bubbling, 60 to 75 minutes. Remove foil from baking dish and top spaghetti with remaining Alfredo sauce.
  • Stir marinara sauce and meatballs together in a saucepan; bring to a simmer, reduce heat to medium-low, and cook until meatballs are heated through, 15 to 25 minutes. Spoon meatballs and marinara over baked spaghetti.
