BAJA BETTY BURGER

1 1/2 pounds ground beef
6 ounces fresh chorizo
Kosher salt and freshly ground black pepper
1 jalapeno, minced
6 ounces mayonnaise
8 ounces roma tomato, diced
1/2 red onion, minced
1 bunch fresh cilantro, roughly chopped
2 limes, juiced
Cayenne pepper
4 slices jalapeno jack cheese
4 hamburger buns
4 bib lettuce leaves

Steps:

  • Preheat the grill to medium-high heat.
  • Mix together the beef and chorizo, sprinkling with salt and pepper. Form 4 patties, each around 6 ounces.
  • Blend the jalapeno with the mayonnaise to make a jalapeno aioli. Transfer to a bowl and set aside.
  • Make a pico de gallo by combining the tomatoes, red onion, cilantro, lime juice, salt, pepper and cayenne to taste.
  • Grill the burgers until well done, around 5 minutes per side. Top each with a slice of pepper jack cheese. Grill the buns.
  • Build the burgers by spreading a layer of jalapeno aioli on the bottom bun, followed by a slice of lettuce, the burger, some pico de gallo and finally the top bun with more aioli.

1/2 cup sour cream or 1/2 cup plain yogurt
1/2 cup mayonnaise
2 teaspoons Mexican seasoning (many recipes on food.com)
1 small jalapeno pepper, seeded and diced
1 garlic clove, finely minced (optional)
1/4 cup fresh lime juice
1/2 cup chopped fresh cilantro

  • Combine all ingredients; stir well. Best to let it meld flavors for an hour or so before using.

1 jalapeno pepper, halved, divided
1 small red bell pepper, halved, divided
1 small red onion, halved, divided
2 pounds ground chicken
¼ cup chopped fresh cilantro
1 ½ teaspoons adobo seasoning (such as Goya®)
1 teaspoon ground cumin
½ teaspoon Mexican seasoning mix (such as Goya® Sazonador Total)
8 slices pepper Jack cheese
1 avocado, sliced
8 tablespoons Mexican-style sour cream, or to taste
8 hamburger buns, split

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Slice 1/2 of the jalapeno pepper, 1/2 of the bell pepper, and 1/2 of the onion into rings for topping. Set aside.
  • Combine ground chicken and cilantro in the bowl of a food processor; season with adobo seasoning, cumin, and Mexican seasoning. Add remaining peppers and onion. Pulse until mixture is combined. Shape into 8 burgers.
  • Place burgers on a rimmed baking sheet lined with a drip tray.
  • Bake in the preheated oven for 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Place 1 slice of pepper Jack cheese on top of each burger. Add onion, bell pepper, and jalapeno slices on top.
  • Spread Mexican sour cream onto each hamburger bun. Top with a chicken burger and serve immediately.

These are so good if you love the taste of roasted chile's. The peppers used here are not hot at all--so good for kids too. If you can' find whole canned chilis, chopped are fine, just the whole chile's make a better texture. Ortega brand is our favorite, but use what you like.

1 lb hamburger, formed into 4 patties
4 hamburger buns or 4 kaiser rolls
1 medium onion, thinly sliced
1 medium sliced tomatoes
1 large avocado
4 slices swiss cheese or 4 slices monterey jack cheese
1/4 cup mayonnaise
4 whole caned green chilies

Steps:

  • Hat skillet or start coals in grill .
  • Salt and pepper burgers to taste. Add to pan or grill.
  • Cut avacodos, remove seed and flesh. Mash avacodo in small bowl.
  • Cook burgers til almost done to your liking, add cheese til melted. Spread equal amounts of mashed avacodo and mayo over bottom 1/2 of each bun, then add burger, onion, tomato and one each whole canned pepper. Top with other half of bun--enjoy.
