3 c unbleached flour
2 c coarsely grated fresh coconut
1 c sugar
1 Tbsp baking powder
1 tsp salt
1 tsp nutmeg
2 eggs
1 c milk
2 Tbsp butter, melted (or oil)
1 tsp vanilla

Steps:

  • 1. Combine flour and next 5 ingredients in a large bowl.
  • 2. In a separate bowl, beat together eggs and remaining 3 ingredients.
  • 3. Stir egg mixture into dry ingredients.
  • 4. Pour batter into a greased and floured 1-inch cast-iron skillet.
  • 5. Bake at 350F for 45-60 minutes or until a toothpick inserted in the center comes out clean.
  • 6. Cool in skillet.

This is one of my favorite recipes, handed down to me from my boss's recipe box. It is great as a breakfast muffin, snack, or with a meal. Everyone will love this. Feel free to make it your own. Add nuts, raisins, coconut milk, or make it just how it is.

1 teaspoon butter, softened
1 ¾ cups all-purpose flour
1 ½ cups white sugar
1 cup shredded coconut
1 teaspoon baking powder
¾ teaspoon salt
2 eggs
⅓ cup low-fat milk
¼ cup water
¼ cup canola oil
1 ¼ teaspoons coconut extract
1 teaspoon vanilla extract
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with butter.
  • Combine flour, sugar, coconut, baking powder, and salt in a large bowl; stir once or twice with a wooden spoon. Add eggs, milk, water, oil, coconut extract, vanilla extract, and cinnamon. Mix well until batter is blended.
  • Pour batter into the greased loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 15 minutes. Invert onto a wire rack to cool completely.

2 1/4 tsp instant dry yeast
4 1/2 cups unbleached flour (plus extra , if the dough comes out too wet)
1 tsp salt
1/4 c nonfat dry milk powder
1/3 cup sugar
1 cup coconut milk (if you warm this slightly it will help the dough rise quicker)
3 tbsp honey
3 tbsp butter, softened
1/3 cup vegetable oil
3 eggs

Steps:

  • 1. In the mixing bowl of bread machine add all ingredients in order given. Set on dough cycle (just mixing and rising). The dough cycle usually lasts about 1 1/2 hours.
  • 2. Or... alternatively, add all ingredients to a large bowl and knead together until a smooth dough forms. Add extra flour if necessary. Cover and let rise in a warm place for about 1 1/2 hours.
  • 3. When dough cycle is complete, or dough is approximately doubled in size, remove dough and place in oiled baking pans. You can use a Pullman pan or two bread pans.
  • 4. Let dough rise in baking pans for 30 minutes.
  • 5. Preheat oven to 350F.
  • 6. Slash the top with a sharp knife and then bake for 35 minutes or until browned on top and cooked through.

BAJAN COCONUT BREAD

1 small fresh coconut
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup, plus 1 teaspoon, sugar
1/2 cup (1 stick) unsalted butter, softened
2 eggs
1/2 teaspoon vanilla
About 1/4 cup milk

Steps:

  • Using an icepick, pierce the three soft spots on the coconut. Drain the liquid and store in the refrigerator. Break the coconut into chunks and grate the flesh into a small bowl. You need at least 1 cup; more is even better.
  • Heat the oven to 325 degrees. Grease a 9-by-5-inch loaf pan.
  • In a small bowl, stir together the flour, baking powder, salt and coconut flakes.
  • In a large bowl of an electric mixer, cream 1/2 cup of the sugar with the butter until light and fluffy. Beat in the eggs, then the vanilla.
  • Measure out 1/4 cup of the coconut milk and combine it with the milk. Add the liquids to the egg mixture, alternating with the dry ingredients and stirring just until all the ingredients are blended. Spread into the prepared pan.
  • Sprinkle the teaspoon of sugar over the dough and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool on a rack before slicing.

3 ½ cups brown sugar
2 (8 ounce) packages grated coconut
1 cup all-purpose flour
¾ cup seedless raisins
4 ounces candied mixed fruit peel
4 ounces fresh cherries, pitted and cut into small pieces
¼ cup baking powder
1 tablespoon mixed essence
½ teaspoon ground nutmeg
1 cup margarine
½ cup shortening
½ cup milk
½ teaspoon salt
1 tablespoon water, or more if needed
5 teaspoons white sugar, or more to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease five 8x4-inch baking pans.
  • Combine brown sugar, coconut, flour, raisins, fruit peel, cherries, baking powder, mixed essence, and nutmeg in a large bowl using a large wooden spoon.
  • Combine margarine and shortening in a microwave-safe bowl; heat in microwave until melted, 30 seconds to 1 minute. Pour melted mixture into flour mixture, alternating with milk, until batter is just mixed. Add water, a teaspoon at a time, if more moisture is needed.
  • Pour batter into the prepared baking pans, smoothing the tops with the back of a wet spoon. Sprinkle white sugar over each loaf.
  • Bake in the preheated oven until a toothpick or skewer inserted in the middle comes out clean, about 1 hour. Cool in the pans for 5 minutes. Invert onto cooking racks.

This recipe is a cultural staple in the Bahamas and throughout the Caribbean and is a family favorite(one which I have tweaked a bit over the years to suit various tastebuds) but its a wonderful bread/cake-like dish thats commonly served with soups and souses of all kinds (for breakfast, lunch or dinner)and can also be wonderful after dinner supper topped with jam and served with tea or cocoa. My family especially loves to eat it like a sandwich with cheese or peanut butter in the middle.Yum...the choices are endless. Hope you enjoy!!!!

6 cups all-purpose flour
3/4 cup sugar
6 tablespoons baking powder
1 teaspoon salt
1/2 cup unsalted butter
2 cups low-fat milk
1 cup water
4 whole eggs
1/4 cup vegetable oil
1/4 cup melted butter

Steps:

  • Preheat oven to 350 degrees and grease an 11x15 baking pan and set aside.
  • In a mixing bowl, sift together the flour and baking powder and then add the sugar and salt. With your fingers, gently knead in the stick of butter until well incorporated in the mixture. Add in the eggs, vegetable oil, milk and water and mix well with a spoon until the texture of your mixture is between that of a bread dough and the batter of a cake mix, adding more water if necessary.
  • Pour mixture into greased pan and bake for 30mins. Brush the melted butter over the top and continue to bake for another 15 mins or until golden brown and butter knife comes out clean from the middle.
  • Cut in squares and serve warm with butter or jam.
