Linguiça-Stuffed Medjool Dates Wrapped With Bacon image

This is a great appetizer for guests. We were originally taught this recipe with chorizo, but we like it better with Linguiça. Just use regular inexpensive bacon. For some reason, we think it just tastes better than the fancy thick cut bacon.

12 medjool dates
1 (6 ounce) package linguica sausage
6 pieces of regular bacon
11 toothpicks

Steps:

  • Preheat oven to 350 degrees.
  • Take a small knife and cut a slit down the side of each date and remove the seed. Do not cut the date in half.
  • Cut the sausage into 6 thin slices (maybe 1/4 inch thick). Now, you have 6 round 1/4 inch slices of sausage. Cut these in half. So, now you have 12 "slivers" of sausage.
  • remove 6 slices of bacon and cut them in half.
  • Take one sliver of sausage and place it into the date. It should fit in nicely and not be to big or small (remember, you want to taste the sausage). Now, take one of half slices of bacon and wrap it around the date so that the bacon holds the sausage in the date. The bacon should wrap all the way around the date. Now stick a toothpick through the date to hold it all together.
  • Repeat this until all the dates are stuffed and wrapped.
  • Now, place the wrapped dates on a cookie sheet and put them in the oven for 20 minutes (or until the bacon looks crisp).
  • Let them cool and enjoy.

"Natures candy" are what Medjool Dates are considered due to being one of the sweetest varieties. When stuffed with sausage and cheese and wrapped in bacon, these succulent treats are the perfect combination of both salty and sweet flavors, bursting with joy in your mouth. You can't eat just one. Fun fact....Dates are a sweet snack alternative for health conscious consumers. Low in fat, and sodium, they contain no cholesterol, and are high in fiber and magnesium. Plus, dates contain more potassium than a banana, and are rich in iron!

16 - medjool dates
2 - chicken and apple sausages (i use aidells brand)
1/2 cup(s) crumbled goat cheese
8 slice(s) bacon

Steps:

  • Preheat oven to 400 degrees. Line a 9x9 baking dish with tin foil.
  • Using a food processor or blender, grind the sausage until in small bits. Transfer to a medium bowl.
  • Add the goat cheese to the sausage, toss to blend. Set aside.
  • Slice open the Dates, without cutting all the way through, and remove the pit.
  • Cut the bacon pieces in half so you have 16 pieces.
  • Stuff the Dates with the sausage/cheese mixture, then wrap with a piece of bacon, tightly. Place in prepared pan.
  • Once all the Dates are stuffed and wrapped, place in oven until bacon begins to crisp (about 10 minutes). Remove the pan and flip the dates to crisp up the opposite side as well (probably another 10 minutes). Remove from oven when done, let cool, and serve!
