12 slices bacon (cut in half)
24 chunks pineapple
1/4 cup dark brown sugar
1 tablespoon low sodium soy sauce

Steps:

  • Preheat oven to 400F
  • Wrap each chunk pineapple in 1/2 slice bacon and secure with a toothpick. Place on a bakings sheet fitted with a baking rack.
  • In a small bowl, stir together the brown sugar and soy sauce.
  • Brush each bacon wrapped pineapple in the brown sugar mixture.
  • Bake for 25 minutes or until the bacon is crispy.
  • Serve hot or cold.
  • Enjoy

Nonstick cooking spray, for the wire racks
24 strips bacon (approximately 1 pound)
1 fresh pineapple, peeled, cored and cut into forty to forty-two 1-inch cubes
3 tablespoons honey
3 tablespoons Dijon or spicy brown mustard
3 tablespoons hot sauce
Dash liquid smoke

Steps:

  • Line 2 baking sheets with foil, and set wire racks inside each. Spray racks with nonstick cooking spray.
  • Cut the bacon strips in half crosswise. Tightly wrap a strip of bacon around each piece of pineapple and transfer to prepared racks seam-side down. Continue with remaining bacon and pineapple. Place in refrigerator for 20 minutes to chill.
  • Preheat grill for cooking over indirect heat or an oven to 450 degrees F.
  • Whisk together the honey, mustard, hot sauce and liquid smoke in a medium bowl. Set aside.
  • Put the baking sheets on the grill over indirect heat or in the oven (in batches if necessary) and cook until bacon starts to get crispy, carefully flipping bites once midway through cooking, 30 minutes per batch. Brush each bite with the honey mustard and let cook until bacon is crispy and glaze has caramelized, an additional 10 minutes.

1/4 cup maple syrup (to taste)
1/8 teaspoon cayenne pepper
1/2 cup brown sugar
24 1-inch chunks fresh pineapple (~12 ounces)
12 bacon slices (ideally thin slices (see recipe note))

Steps:

  • Preheat oven to 400˚F.
  • Place an oven-safe rack inside a foil lined rimmed baking sheet (for easy cleanup - see recipe note #2); brush rack with oil or spray with cooking spray to prevent sticking.
  • Whisk maple syrup and cayenne pepper together in a small bowl.
  • Spread brown sugar on a small plate
  • Cut bacon slices in half crosswise.
  • Use a fork or small tongs to dip one pineapple chunk in maple syrup mixture, coating all sides; allow any excess to drip off and place in brown sugar. Turn to coat lightly on all sides. Wrap coated pineapple chunk in a half slice of bacon (starting at one end of of the bacon slice and rolling it up); place on rack in baking sheet. Repeat with remaining pineapple. Bake 30 to 35 minutes, or until bacon is crispy and pineapple is hot. Serve with toothpicks if desired.

1 lb bacon (not too thin nor too thick)
1 pineapple peeled cored and cut in chunks (see notes)
toothpicks
2 Tbsp honey
2 Tbsp worcestershire sauce
3 Tbsp low sodium soy sauce
1 Tbsp fresh ginger
1/3 c ketchup
2 Tbsp pineapple juice.(buy a precut pineapple and use that juice)
1 tsp sriracha sauce (hot chili sauce)

Steps:

  • 1. Preheat oven to 375 degrees. Cut raw bacon in half and place on a baking sheet covered with aluminum foil in single layer. Bake for 3 minutes, flip and bake for another 3 minutes. Let cool for 5-10 minutes. Wrap each piece of bacon around a pineapple chunk. Secure with toothpick and place back on the baking sheet covered with aluminum foil. Place in oven.
  • 2. Combine honey, Worcestershire sauce, soy sauce, ginger, ketchup, pineapple juice and sriracha in small saucepan and simmer for 10 minutes; stirring several times.
  • 3. Using brush baste with sauce after they have cooked for 20 minutes. Bake for 10 additional minutes or until bacon is crispy and the pineapple is heated through. Serve promptly with remaining sauce.

1/4 c maple syrup
1 Tbsp butter
2 Tbsp light brown sugar
1/2 tsp vanilla extract
1 pineapple, cut into 1/2-inch thick by 2-3 inch long strips
1 lb bacon
Heavy-duty aluminum foil
Coconut cooking spray

Steps:

  • 1. Put maple syrup, butter, light brown sugar, and vanilla in a saucepan. Cook over medium-low heat, stirring until the butter has melted and it's smooth (only a few minutes). Then set aside.
  • 2. Cook bacon until slightly browned but still soft.
  • 3. Slice pineapple into 1/2 inch by 2-3 inch strips.
  • 4. Wrap pineapple strips with partially cooked bacon and secure with one to two toothpicks.
  • 5. Brush bacon-wrapped pineapple with the maple brown sugar glaze.
  • 6. Place a sheet of foil on the grill with a folded lip. Heat on low, with the lid up, for a few minutes. Then spray with coconut cooking spray.
