BACON-WRAPPED MEATLOAF WITH BROWN SUGAR GLAZE
Beef, pork, and eggs - these together make an incredibly moist meatloaf. And of course, everything's better with bacon.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
- Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
- Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
- Bake in the preheated oven on the middle rack for 30 minutes.
- While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
- Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
- Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

- mix all ingredients in a small bowl; set aside.
- heat oven to 350 degrees. Heat oil in a medium skillet. Add onions and garlic; sauté until softened, about 5 minutes; set aside to cool while preparing remaining ingredients.
- Mix eggs with thyme, salt, pepper mustard, Worcestershire, pepper sauce, and milk or yogurt. Add egg mixture to the meat in a large bowl, along with crackers, parsley, and cooked onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk or yogurt, a couple tablespoons at a time, and continue until mix doesn't stick to bowl.)
- Turn meat mixture onto a work surface. With wet hands, pat meat mixture into an approximate 9-by 5-inches loaf shape. Cover a wire rack with foil; prick foil several times with a fork. Place on a foil-lined shallow roasting (for easy clean-up). Set formed loaf on rack. Brush loaf with all the glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly.
- Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve.
- To bake in a loaf pan, follow instructions for Bacon-Wrapped Meat Loaf With Brown Sugar-Ketchup Glaze, omitting the bacon and doubling the glaze. Turn meat mixture into a meat loaf pan with a perforated bottom, fitted with a drip pan. Use a fork to pull mixture away from pan side. Brush mixture with half the glaze. Bake until glaze is set, about 45 minutes. Brush with remaining glaze and continue to bake until second coat has set and loaf registers 150 to 155 degrees, about 15 minutes longer.

BACON WRAPPED MEATLOAVES
Steps:
- Preheat the oven to 400 degrees F.
- Put the bread in a large bowl and pour the milk over. Let soak a few minutes, then squeeze through your fingers to combine. Add the egg, onion, parsley, dry mustard, caraway and coriander and mix well. Add the ground beef, ground pork, 1 1/4 teaspoons salt and several grinds of pepper. Mix well with your hands to combine.
- In a small bowl, stir together the ketchup, steak sauce, mustard and brown sugar.
- Divide the mixture into 6 equal portions and form into balls. Wrap each ball with 1 strip of bacon. Place, without touching, on a rimmed baking sheet or in a large braiser. Brush with a light coating of the glaze. Bake until the fat from the bacon has rendered, about 20 minutes.

- Heat oven to 350 degrees.
- For glaze, mix ketchup, brown sugar and vinegar together, set aside.
- Saute onions and garlic in oil.
- Mix onions and garlic with the rest of the meatloaf ingredients.
- You may find it helpful to use your hands.
- Shape into loaf, put onto a foil lined pan.
- Brush half of the glaze over the loaf.
- Wrap bacon around loaf, tucking ends under.
