SMOKED BACON BLUE BURGER WITH CARAMELIZED ONION TOMATO JAM



Smoked Bacon Blue Burger with Caramelized Onion Tomato Jam image

Number Of Ingredients 18

8 (1/4-inch) thick slices applewood smoked bacon
1 1/2 pounds ground chuck
Kosher salt and freshly cracked black pepper
2 tablespoons canola oil
1/2 cup crumbled blue cheese
Caramelized Onion Tomato Jam, recipe follows
4 kaiser rolls, sliced and toasted
2 tablespoons olive oil
2 Vidalia onions, thinly sliced
2 teaspoon kosher salt
2 cloves garlic, minced
10 Roma tomatoes, cored, seeded and roughly chopped (about 2 1/2 pounds)
1/2 cup molasses
1/2 cup brown sugar
1/2 cup cider vinegar
1/2 teaspoon allspice
1/2 teaspoon chipotle powder
1/2 teaspoon ground cinnamon

Steps:

  • In a large saute pan over medium heat, cook the bacon until golden brown and crisped, about 4 minutes on each side. Transfer to a paper towel-lined plate.
  • Form the ground beef into 4 patties, about 3 1/2 inches in diameter. Sprinkle both sides of each patty liberally with salt and pepper.
  • Heat a grill, grill pan or cast-iron skillet over high heat, adding the canola oil if applicable. Cook the patties for approximately 3 minutes, then flip and top with the blue cheese crumbles (cover to melt). Continue cooking for an additional 3 minutes for medium, or continue cooking to your desired doneness.
  • Build the burgers by placing each cooked patty on the bun bottoms. Top with the bacon and smear the top buns with the Caramelized Onion Tomato Jam and place on top of the other ingredients. Serve immediately.
  • In a high-sided saute pan with a lid, heat the olive oil over medium heat. Add the onions, season with the salt, cover and cook until they are wilted and soft, about 10 minutes. Remove the lid and cook the onions until they are golden and caramelized, stirring often, another 20 minutes.
  • Stir in the garlic and saute, 1 to 2 minutes. Add the tomatoes and cook an additional 10 minutes. Add the molasses, sugar, vinegar, allspice, chipotle powder and cinnamon. Bring to a boil, and then reduce the heat to a simmer. Cook the jam, stirring constantly, until the tomatoes breakdown and the jam becomes thick, about 20 minutes.

two slices white bread, torn
three eggs, beaten
1/2 cup onions, diced
one garlic clove, minced
1/4 cup minced fresh parsley
1 teaspoon worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 pound ground chuck
onion mixture, see above
grilled french bread
tomato bacon relish, recipe follows

Steps:

  • 1. soak the bread and eggs in a mixing bowl. Let stand while preparing remaining ingredients. Sauté onions and garlic in the skillet in butter over medium-high heat, about three minutes. Cool five minutes. Add parsley, Worcestershire, salt and pepper into bread mixture, then mash together.
  • 2. Mix bread mixture, cooled onion mixture, and ground beef. Divide evenly into four portions and shape to match bread shape. Cover and chill while preparing the relish. Preheat grill or grill pan to medium-high. Grill burgers on medium high to 160°, about 4 or 5 minutes on each side. Serve on slices of grilled French bread and top with tomato bacon relish.
  • 3. Tomato bacon relish: two strips thick sliced bacon, chopped 1/2 cup onions, chopped 1/4 cup Brown sugar 1/4 cup prepared yellow mustard 1/4 cup catsup 1/2 cup tomatoes, seeded and diced sauté bacon until crisp in a frying pan. Add onion and sauté three more minutes. Stir in sugar, mustard, and catsup. Add tomatoes and simmer one minute. Makes about 1 cup.

I searched Zaar and could not find a duplicate to this delicious sounding burger. The original recipe is from a recent Chatelaine magazine that featured burgers I have tweaked it a bit. The condiments you add (onion, tomato, mushrooms) are up to you. Some like Mayo, relish or dill pickles the choice is yours BBQ over medium heat 5-8 minutes per side or pan fry. To prevent the burger from puffing up use your thumb and make a shallow depression in the center of the burger. Hope you will try it too.

1 lb ground beef, preferably medium
4 sun-dried tomatoes, packed in oil, chopped
2 tablespoons bacon bits or 2 slices crisp cooked bacon, crumbled
2 garlic cloves, crushed
1 teaspoon Worcestershire sauce
salt & pepper
4 hamburger buns
4 slices sweet onions (optional)
4 slices tomatoes (optional)
4 slices cheese, of your choice (optional)
8 medium mushrooms, sliced (optional)

Steps:

  • Gently mix the beef, sun dried tomato, bacon, garlic, salt, pepper & worchestershire sauce together.
  • The more you handle the burger the tougher you burger will be so just mix lightly.
  • Form into 4 patties (I usually only make 3 from one lb).
  • Either BBQ or pan fry.
  • BBQ: Medium heat, Oil the grill 5-8 minutes each side.
  • Pan fry: medium heat cover burgers apprx 5 minutes each side. Reduce heat to medium low if the burgers are browning too fast.
  • Garnish with your choice of condiments.
