When I moved to Oklahoma, I discovered a pizza called "chicken bacon ranch" and this pasta salad is a nod to the flavors in the pizza. If desired, marinate chicken in ranch dressing, and grill chicken to bump up the flavor.

1 (9 ounce) package refrigerated cheese tortellini
¼ cup ranch dressing
1 tablespoon milk
8 ounces cubed, cooked chicken
2 ½ ounces fresh mozzarella, diced
⅓ cup chopped cooked bacon
2 tablespoons chopped green onions
1 tablespoon chopped fresh flat-leaf parsley
salt and freshly ground black pepper to taste (optional)

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes. Run tortellini under cold water and drain. Store in the refrigerator until chilled, at least 30 minutes.
  • Stir ranch dressing and milk together in a large bowl. Add chilled pasta, cooked chicken, mozzarella, bacon, green onions, and parsley.
  • Toss to combine. Season with salt and pepper if desired.

2 1/2 cups uncooked rotini pasta (8 oz)
1 1/2 cups chopped deli rotisserie chicken
1/2 cup chopped cooked bacon
1 1/2 cups chopped plum (Roma) tomatoes
1/2 cup sliced green onions
1 1/4 cups Mountain High™ whole milk plain yoghurt
1/4 cup lowfat (1%) milk
1 package (1 oz) ranch salad dressing & seasoning mix
1/4 teaspoon black pepper

Steps:

  • Cook and drain pasta as directed on package; rinse with cold water. In large bowl, mix pasta, chicken, bacon, tomatoes and green onions.
  • In small bowl, using whisk, beat yoghurt, milk, ranch dressing mix and black pepper. Add to pasta mixture; stir until mixture is incorporated.
  • Cover and refrigerate 1 hour before serving.

3 boneless skinless chicken breasts
1 can (10 oz) Old El Paso™ enchilada sauce
6 cups torn romaine lettuce
1 bag Chex Mix™ cheddar snack mix
1 cup shredded Cheddar cheese (4 oz)
1 cup crumbled cooked bacon
2 green onions, sliced
Ranch dressing

Steps:

  • In 10-inch skillet, add chicken breasts and enchilada sauce. Cover and cook over medium heat 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165° F).
  • Using two forks, shred chicken; refrigerate to cool.
  • Just before serving, in 6-quart trifle bowl or glass bowl, layer as follows: Gently transfer chicken mixture to bowl, being careful to keep sides of bowl clean. Top with romaine lettuce, then Chex™ mix, then cheese, bacon and finally green onions.
  • Drizzle dressing on top, or place in bowl on side for people to take what they want.

8 slices bacon, diced
1 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 package (1 lb) cavatappi pasta
1 cup frozen sweet peas (from 12-oz bag)
1 cup chopped carrots
6 green onions, sliced
1 cup ranch dressing
1 large tomato, diced

Steps:

  • In large skillet, cook bacon until crisp; drain on paper towels. In bacon drippings, cook chicken over medium-high heat about 5 minutes, stirring occasionally, until no longer pink in center. Remove from heat; cool.
  • Meanwhile, cook pasta as directed on package, adding peas and carrots during last 3 minutes of cooking time. Drain; rinse with cold water to cool.

1 lb macaroni noodles, cooked , drained, rinsed and cooled
2 bottle 16 oz. bacon ranch salad dressing
1 packet dry ranch dressing
12 oz shredded mild cheddar cheese
12 oz dairy sour cream
1 lb cooked chicken breast, cut in bite size pieces
1 lb crisp cooked bacon
1/2 pkg frozen peas, thawed *optional*

Steps:

  • 1. In large bowlcombine dry salad mix with sour cream. Add 24 oz. of the bottled salad dressing, mix well
  • 2. Add Cooled macaroni stir well. add in chicken, cheese and peas * if using*
  • 3. stir in crumbled bacon crisps
  • 4. Add remaining bottled dressing if needed. Cover and refrigerate at least 2 hours before serving.

2 c cauliflower; chopped
2 c broccoli; chopped
1/2 lb bacon; cut in bite-size pieces & cooked & drained
1 pt cherry tomatoes (split in half, lengthwise)
1/2 each - red, green bell peppers, chopped
8 oz shredded sharp cheddar cheese
ranch dressing (very little)
1 bunch green onions, chopped
2 boneless, skinless chicken breasts
FOR CHICKEN BREASTS
butter, melted
dash(es) chicken seasoning
dash(es) California style garlic salt with parsley

Steps:

  • 1. Grill chicken breasts. Brush with butter on the top side. Season with chicken seasoning & California Style Garlic Salt with Parsley.
  • 2. Cut into strips & then into smaller bite-size pieces. Set aside.
  • 3. Cook bacon. Crumble into bite-size pieces.
  • 4. Combine all other ingredients in large bowl. Use as little ranch dressing as possible. You don't want it swimming in it. You only want it to coat it & flavor it.
  • 5. Add the chicken & toss to coat.
  • 6. Chill at least 2 hours before serving. If you think you might need a little more dressing at this time, go ahead & add some.

I was looking for a cold pasta salad recipe, but if you know anything about me, you'll see that I spice or change up ingredients from time to time. Juicy chicken,salty bacon, and luscious tomato pasta salad. I made up Uncle Dan's Dressing. You could use any flavor of Hidden Valley dressing, maybe even Sriracha if you enjoy things spicy. We prefer adding several dashes of cayenne. That's just us though. Hope you enjoy this salad

1 pound(s) chicken -cooked
8 slice(s) bacon, cooked and crubled big
3-4 medium green onions-chopped
1 cup(s) roma tomatoes-diced
1 pound(s) penne rigata pasta
1-1/2 cup(s) ranch dressing

  • Cook Pasta Al dente'. Drain and Rinse. Set aside. Add in a touch of olive oil if noodle stick together. Stir and refrigerate.
  • Cook bacon and chicken. You could use rotisserie chicken breast also.
  • Chop tomato and green onion. Meanwhile, mix up dressing, Add several dashes of Cayenne. Pour dressing over pasta Retrieve pasta bowl. Add in all ingredients. Toss to coat thoroughly. Serve and enjoy!

9 cups roughly chopped green lead or romaine lettuce
1 recipe Avocado Lime Ranch dressing or Garlic & Herb Buttermilk dressing
(A quality prepared salad dressing or a packet of Hidden Valley Buttermilk Ranch dressing made per the package instructions may be substituted for the dressing in this salad.
1 large red bell pepper seeded and diced
1 large poblano or green bell pepper seeded and diced.
1 (12 0z.) frozen corn steamed and cooled
6 medium tomatoes, 5 chopped and 1 sliced into wedges for garnish
1 medium red onion, thinly sliced
2 1/2 cups shredded sharp cheddar cheese
1/2 lb. bacon cooked and crumbled
4 cups roasted chicken roughtly chopped
3 green onions thinly sliced
2 large hard boiled eggs cut into wedges

Steps:

  • 1. In a large trifle or glass bowl layer in this order: 1/3 of the lettuce, 1/2 of the red pepper, 1/2 of the green pepper, 1/3 of the corn, 1/2 of the tomatoes, 1/2 of the red onion, 1 cup of the cheese, 1/3 of the bacon, and 1/2 of the chicken. Drizzle with 1/2 cup prepared dressing. 2. Repeat, 1/3 of the lettuce, 1/2 of the red pepper, 1/2 of the green pepper, 1/3 of the corn, 1/2 of the tomatoes, 1/2 of the red onion, 1 cup cheese, 1/3 of the bacon, and 1/2 of the chicken. Drizzle with 1/2 cup prepared dressing. 3. Top with the final 1/3 of the lettuce, 1/3 of the corn, 1/2 of the shreeded cheese, 1/3 of the bacon and sliced green onion. Drizzle with 1/2 cup dressing drizzling around the edge. Arrange egg and tomato wedges on top to garnish. 4. Chill for 4 hours. Serve with additional dressing on the side.
