Yield 12 muffins

Number Of Ingredients 8

6 bacon slices
2 cups self-rising white cornmeal mix (add 1 T baking powder and 1 t salt to regular flour)
1 tablespoon sugar
1 1/2 cups buttermilk
1 large egg
4 tablespoons butter, melted
1 cup (4 oz.) shredded sharp Cheddar cheese
Vegetable cooking spray

Steps:

  • Preheat oven to 425°. Cook bacon in a large skillet over medium-high heat 12 to 14 minutes or until crisp; remove bacon, and drain on paper towels. Crumble bacon. Heat a 12-cup muffin pan in oven 5 minutes. Combine cornmeal mix and sugar in a medium bowl; make a well in center of mixture. Stir together buttermilk and egg; add to cornmeal mixture, stirring just until dry ingredients are moistened. Stir in melted butter, cheese, and bacon. Remove pan from oven, and coat with cooking spray. Spoon batter into hot muffin pan, filling almost completely full. Bake at 425° for 15 to 20 minutes or until golden. Remove from pan to a wire rack, and let cool 10 minutes.

These muffins are yummy for breakfast right out of the oven or along with any meal.

8 - bacon strips
4 tablespoon(s) butter
4 tablespoon(s) margarine
1 cup(s) all-purpose flour
1 tablespoon(s) baking powder
1 teaspoon(s) sugar
pinch(es) of salt
1 1/2 cup(s) cornmeal
1 cup(s) milk
2 - eggs

Steps:

  • Preheat oven to 400F. Grease or paper line a muffin pan. Fry the bacon in skillet or on cookie sheet in oven until crisp. Drain on paper towls, Then chop into small pieces. Set aside. Melt the butter and margarine in a saucepan over low heat and set aside.
  • Sift the flour, baking powder, sugar and salt into a large mixing bowl. Stir in the cornmeal, then make a well in the center. In another saucepan, heat the milk to lukewarm. In a small bowl lightly beat the eggs, then add to the milk. Stir in the melted fats.
  • Pour the milk mixture into the center of the well and stir until smooth and well blended. Fold in the bacon. Spoon the batter into the prepared pans, filling them halfway. Bake for about 20 minutes, until and lightl colored.
